HEALTHY SUGAR-FREE LOW CARB BLACKBERRY COBBLER RECIPE
This easy sugar-free blackberry cobbler recipe needs just 10 minutes prep! So delicious, no one will know this is a low carb blackberry cobbler.

- Preheat the oven to 350 degrees F.
- In a large bowl, toss together the berries, lemon juice, and sweetener. Sprinkle (don't dump) a tablespoon gelatin over the mixture and mix to combine, then repeat with the other tablespoon gelatin.
- Transfer the berries to the bottom of a glass or non-stick 8x8 inch (20x20 cm) baking pan.
- In another large bowl in the microwave, or a saucepan on the stove, melt the coconut oil. Remove from heat.
- Stir the vanilla extract into the melted coconut oil. Stir in the almond flour, sweetener, baking powder, and sea salt. The dough should be crumbly, but buttery and a little moist.
- Crumble the dough over the top of the berries in the pan, leaving some small spaces of berries shining through.
- Bake the cobbler for about 25-30 minutes, until the top is golden. Rest at least 10 minutes before serving, or cool to room temperature for even thicker cobbler.

- Preheat oven to 350°. In a large bowl, combine sugar, tapioca and allspice. Add blackberries and orange juice; toss to coat. Let stand for 15 minutes. Spoon into a greased 2-qt. baking dish., In a large bowl, combine flour, 1/3 cup sugar, baking soda and salt. Combine yogurt, milk and butter; stir into dry ingredients until smooth. Spread over the berry mixture. , Bake for 20 minutes; sprinkle with remaining sugar. Bake until golden brown, 25-30 minutes. Serve warm.

- Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
- In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
- Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries. Bake until golden brown and bubbly, about 1 hour. When 10 minutes of the cooking time remains, sprinkle the remaining 2 tablespoons sugar over the top. Top with whipped cream or ice cream . . . or both!

- Preheat oven to 350 degrees F (175 degrees C). Once oven temperature is reached melt butter in a 9x13 inch baking pan.
- In a medium bowl stir together the flour, sugar and milk; batter will be slightly lumpy. Pour mixture on top of melted butter in baking pan. Do not mix butter and mixture together.

- In a large saucepan, combine the cranberries, raspberries, blueberries and honey. Combine the cornstarch, water and lemon juice until smooth; stir into fruit mixture. - Preheat the oven to 400F and place your coconut butter in the fridge to chill if you have not done so already. Add the berries, lemon juice, coconut sugar, vanilla, and 2 tablespoons of water to a 8” (23-cm) oven-safe skillet (I used cast iron) and bring to a simmer over medium high heat. Simmer the berries for 10 minutes, stirring occasionally, then turn the heat off. Add additional coconut sugar to taste, if necessary.
- While the berries cook, prepare the cobbler topping. Add the oats, coconut sugar, baking powder, salt, and cinnamon to a medium bowl and whisk together. Add the chilled coconut butter (or oil) to the bowl and use two knives to “cut” it into the dough, until fine “crumbs” of butter are evenly distributed throughout. Add the milk to the bowl and stir until just combined. Allow the batter to sit for at least 5 minutes, to allow the oat flour to absorb some liquid and thicken.
- Use a large spoon to dollop 2 to 3 sized tablespoons of the cobbler batter onto the berries. Place the skillet into the middle rack of the oven and bake for 23 to 25 minutes, until the top of the cobbler turns golden brown.
- Remove from the oven and allow to cool slightly before serving as desired. Leftovers will keep at room temperature for up to 3 days.
