Carrots are not normally found in cookies, but they act as a great natural sweetener while adding moisture. I also replaced half the chocolate chips with dried cranberries. These cookies are tasty and a good source of fiber.

½ cup butter, softened
¼ cup non-fat plain yogurt
1 cup packed light brown sugar
½ cup white sugar
2 eggs
2 teaspoons vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
3 cups quick cooking oats
1 cup chopped walnuts
½ cup semisweet chocolate chips
¼ cup carrots, shredded
¼ cup dried cranberries

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat butter, yogurt, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Add eggs one at a time. Beat in vanilla extract. Mix in flour and baking soda until just incorporated. Fold in quick oats, walnuts, chocolate chips, carrots, and cranberries. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.
  • Bake in preheated oven until cookies are golden brown, about 12 minutes. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

1 cup quick-cooking oats
1/4 cup flaxseed, finely ground in a spice grinder, or pre-ground flaxseed
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
12 tablespoons (1 1/2 sticks) unsalted butter, softened
1 cup granulated sugar
3/4 cup packed dark brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk the flour, oats, flaxseed, baking soda, salt and cinnamon in a bowl.
  • Beat the butter, granulated sugar and brown sugar in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes. Beat in the eggs one at a time, beating well after each addition. Beat in the vanilla. Reduce the mixer speed to low; add the flour mixture and beat until just combined, scraping down the bowl as needed. Stir in the chocolate chips.
  • Drop heaping tablespoonfuls of dough onto the prepared baking sheets, about 2 inches apart. Bake until golden brown, 10 to 12 minutes. Let the cookies cool 3 minutes on the baking sheets, then transfer to racks to cool completely.

I have been searching for a healthier cookie treat for my girls. I experimented with other recipes and used whole wheat flour and coconut oil in place of white flour and butter or vegetable oils. The result is a yummy, chewy treat for your family!

1 teaspoon baking soda
1 teaspoon baking powder
1 pinch sea salt
1 cup coconut oil, softened
1 cup packed brown sugar
1 cup white sugar
1 teaspoon molasses
2 eggs
2 cups quick-cooking oats
1 cup dark chocolate chips
¾ cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Sift whole wheat flour, baking soda, baking powder, and salt together in a bowl. Set aside.
  • Combine coconut oil, sugars, and molasses in a medium bowl. Beat with an electric mixer until smooth and creamy. Beat in eggs one at a time. Gradually stir in the sifted flour mixture until well blended. Mix in oats, chocolate chips, and cranberries.
  • Drop teaspoonfuls of dough onto ungreased cookie sheets.
  • Bake in the preheated oven until edges are golden, 8 to 9 minutes. Let stand on the cookie sheets for a few minutes before transferring to wire racks to cool completely.

6 tablespoons unsalted butter
1/2 cup dark brown sugar
1/4 cup Splenda granular or 1/4 cup white sugar
1 1/2 cups rolled oats
1/3 cup all-purpose flour
1/3 cup whole wheat flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup chocolate chips

Steps:

  • Put the butter in a small, microwave-safe mixing bowl and heat in the microwave until just melted (about 45 seconds).
  • Add the sugar and sucralose to the melted butter and stir until well-combined.
  • Beat the egg with the vanilla and add to the butter-sugar mix. Stir until combined.
  • In a large mixing bowl, combine the flours, oats, baking soda and salt. Add the liquid mixture and mix well.
  • Fold in the chocolate chips.
  • Wrap the cookie dough in plastic and chill in the refrigerator for at least 30 minutes. (You can skip this step, but the cookies will be flatter.).
  • While the dough is chilling, preheat the oven to 350º F and lightly grease a cookie sheet or cover it with parchment.
  • Remove the dough from the refrigerator. Break off tablespoon-sized pieces, roll them into balls, and place them on the cookie sheet, leaving about 2 inches in-between.
  • Bake for 12-15 minutes, until cookies have just set up.
