Carrots are not normally found in cookies, but they act as a great natural sweetener while adding moisture. I also replaced half the chocolate chips with dried cranberries. These cookies are tasty and a good source of fiber.

- Preheat oven to 325 degrees F (165 degrees C).
- Beat butter, yogurt, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Add eggs one at a time. Beat in vanilla extract. Mix in flour and baking soda until just incorporated. Fold in quick oats, walnuts, chocolate chips, carrots, and cranberries. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.
- Bake in preheated oven until cookies are golden brown, about 12 minutes. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Whisk the flour, oats, flaxseed, baking soda, salt and cinnamon in a bowl.
- Beat the butter, granulated sugar and brown sugar in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes. Beat in the eggs one at a time, beating well after each addition. Beat in the vanilla. Reduce the mixer speed to low; add the flour mixture and beat until just combined, scraping down the bowl as needed. Stir in the chocolate chips.
- Drop heaping tablespoonfuls of dough onto the prepared baking sheets, about 2 inches apart. Bake until golden brown, 10 to 12 minutes. Let the cookies cool 3 minutes on the baking sheets, then transfer to racks to cool completely.

- Sift whole wheat flour, baking soda, baking powder, and salt together in a bowl. Set aside.

- Put the butter in a small, microwave-safe mixing bowl and heat in the microwave until just melted (about 45 seconds).
- Add the sugar and sucralose to the melted butter and stir until well-combined.
- Beat the egg with the vanilla and add to the butter-sugar mix. Stir until combined.
- In a large mixing bowl, combine the flours, oats, baking soda and salt. Add the liquid mixture and mix well.
- Fold in the chocolate chips.
- Wrap the cookie dough in plastic and chill in the refrigerator for at least 30 minutes. (You can skip this step, but the cookies will be flatter.).
- While the dough is chilling, preheat the oven to 350º F and lightly grease a cookie sheet or cover it with parchment.
- Remove the dough from the refrigerator. Break off tablespoon-sized pieces, roll them into balls, and place them on the cookie sheet, leaving about 2 inches in-between.
- Bake for 12-15 minutes, until cookies have just set up.
