Time 1h35m

Yield 40

Number Of Ingredients 9

1 cup sugar
1/2 cup butter or margarine, softened
1/2 cup mashed very ripe banana (1 medium)
1 teaspoon vanilla
2 eggs
3 cups Gold Medal™ flour
3 teaspoons baking powder
1/4 teaspoon salt
1/2 cup miniature semisweet chocolate chips

Steps:

BANANA RUM BISCOTTI

Banana Rum Biscotti image

These cookies are crispy on the outside and softer on the inside. They aren't too sweet. They do taste like banana.

Categories     Desserts     Fruit Dessert Recipes     Banana Dessert Recipes

Time 3h25m

Yield 36

Number Of Ingredients 9

3 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
2 eggs
1 cup white sugar
¾ cup mashed ripe banana
2 tablespoons vegetable oil
1 tablespoon rum
½ cup toasted, chopped pecans

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Combine flour, baking powder, and salt in a bowl and stir to mix well. Beat the eggs lightly in a bowl, and add the sugar, banana, oil, and rum. Stir the banana mixture into the flour mixture, blend well, and drop in the pecans, mixing them thoroughly into the dough. Form the dough into 4 logs about 1/2 inch thick, place them onto parchment paper-lined baking sheets, and bake for 25 minutes, until the cookie logs begin to brown.
  • Lower the oven temperature to 250 degrees F (120 degrees C). Remove the baking sheets from the oven and let the cookie logs cool for 10 minutes. Remove the logs from the parchment paper and cut each log into 1/2 inch thick slices. Place the biscotti back onto the cookie sheets and bake for 15 minutes per side (30 minutes total) until cookies begin to brown. Remove to racks to cool. The biscotti will be soft at first, and will harden as they cool.

COCONUT BISCOTTI

Coconut Biscotti image

Provided by Food Network

Categories     dessert

Time 3h

Yield about 24 cookies

Number Of Ingredients 13

1 1/2 cups unsweetened coconut flakes
1 cup granulated sugar
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup coconut oil
1 teaspoon pure vanilla extract
1/2 cup salted macadamia nuts, chopped
1 cup confectioners' sugar
2 tablespoons coconut cream
1/8 to 1/4 teaspoon coconut extract
Coarse sugar, for decorating

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Spread 1 cup coconut flakes on a baking sheet and bake until toasted, about 3 minutes. Let cool completely. Transfer to a food processor; add the granulated sugar and pulse until finely ground. Line 2 baking sheets with parchment paper.
  • Whisk the coconut-sugar mixture, the flour, baking powder, baking soda and salt in a bowl. Melt the coconut oil in the microwave; add to the flour mixture along with the vanilla and 1/3 cup water and mix with a wooden spoon until a stiff dough forms. Stir in the macadamia nuts and the remaining 1/2 cup coconut flakes; gently knead until the dough comes together.
  • Divide the dough in half and shape into two 9-by-2-inch logs; place 1 log on each baking sheet. Bake, switching the pans halfway through, until the logs are firm and golden, about 25 minutes. Reduce the oven temperature to 300 degrees F.
  • Let the logs cool 10 minutes, then transfer to a cutting board; slice diagonally with a serrated knife into 3/4-inch-thick pieces. Arrange the slices cut-side down on the baking sheets. Bake, flipping halfway through, until just golden and the centers still have a little give, 20 to 25 minutes. Let cool completely on the baking sheets. (The biscotti will crisp as they cool.)
  • Whisk the confectioners' sugar, coconut cream and coconut extract until smooth. Dip the biscotti in the glaze; sprinkle with coarse sugar.

BANANA WALNUT BISCOTTI

Banana Walnut Biscotti image

This Banana Walnut Biscotti recipe is reminiscent of banana bread with its sweet aroma and uses up any overripe bananas that may be sitting out on the counter.

Provided by Carla Cardello

Categories     Cookies + Bars

Time 1h15m

Number Of Ingredients 10

3 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
2 eggs
1/2 cup mashed banana (1 medium overripe banana, around 5 ounces)
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350F. Line one cookie sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  • In another large bowl, beat together the eggs, mashed banana, and vanilla until smooth. Gradually beat in the flour until incorporated then stir in the walnuts.
  • On a floured surface with floured hands, lightly knead the dough. Place the dough on the parchment paper and pat out into a log that is roughly 15 to 20 inches by 5 to 6 inches, no more than 1/2 inch high. If dough is too sticky, add a little bit more flour. Bake 22-25 minutes or until brown, set on the edges, and center is firm. Remove the cookies from the oven. Turn the oven down to 300F.
  • Cool the cookies for 15 minutes then with a serrated knife, cut into 3/4 inch wide pieces. Place cut side down back onto the cookie sheet and bake an additional 15-20 minutes until firm. Cool completely.

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper, and lightly grease with cooking spray. Set aside.
  • In a separate bowl, whisk together the mashed banana, egg, coconut oil, and vanilla extract until smooth. Pour into the dry ingredients, along with ⅓ cup of the walnuts. Stir until all the dry ingredients combined in the wet. The dough will be a bit sticky. ( If you find it to be too sticky to handle, you could scrape out the dough and add a touch of flour onto a clean counter and work the dough together until it’s cohesive with your hands.)
  • Scrape out the dough with a rubber spatula onto a lined cookie sheet and divide dough in half. Spray hands with cooking spray; form each piece of dough into a 2 1/2-inch-wide (1/2-inch thick)log. Sprinkle on top of the logs the remaining almonds (or walnuts). Score the logs diagonally with a very sharp knife. This is mom’s biscotti baking pro top and will help to slice when they are baked. Bake until dough is firm but gives slightly when pressed, about 20-25 minutes.
