This homestyle, classic, REAL FOOD, Low Carb Keto Veggie-Packed Meatloaf is absolutely delicious, succulent and total comfort food. It's jam-packed with vegetables, healthy fats and absolutely no flour.

2 tbsp healthy fat of choice like grass-fed butter, ghee, avocado oil
1/2 yellow onion, diced
5-6 fresh garlic cloves, roughly chopped or minced
3 medium organic carrots, finely grated
1 zucchini, finely grated
1 tsp dried thyme
1 1/2 tsp sea salt (this is my favorite sea salt)
1 pound grass-fed ground beef
1 pastured or organic egg
3/4 cup sour cream (I use Nancy's brand)
1/2 cup shredded organic or grass-fed cheese
1/2 cup homemade ketchup or organic sugar-free ketchup (check ingredients!)

Steps:

  • Preheat oven to 350 degrees F.
  • Heat fat of choice in medium sauté pan over medium heat. Add onions stirring occasionally until translucent, but not brown, about 7-8 minutes.
  • Add garlic and allow to cook for about 1-2 minutes until fragrant.
  • Add grated carrots, zucchini, thyme, and sea salt. Stir occasionally just until vegetables are soft, about 2-3 minutes. Remove from heat and set aside.
  • In a large mixing bowl, add ground beef, egg, sour cream, cheese and slightly cooled vegetables. Use a fork or clean hands to mix well.
  • Place meat mixture into a loaf pan, a shallow 7x11 pan or shape into a rectangle loaf on a parchment paper lined sheet pan.
  • Spread ketchup over the top of the meatloaf mixture.
  • Bake the meatloaf for 1 to 1 1/2 hours, or until the internal temperature is 160 degrees F and the meat is cooked through. [Note: A 7x11 shallow pan will cook in about 1 hour, a loaf pan will take closer to 1 1/2 hours.]
  • Let the meatloaf rest for at least 10 minutes before serving.

This is a super healthy and simplified version of a family favorite.

cooking spray
1 tablespoon olive oil
1 green bell pepper, diced
½ cup diced sweet onion
½ teaspoon minced garlic
1 pound extra-lean (95%) ground beef
1 cup whole wheat bread crumbs
2 large eggs
¾ cup shredded carrot
¾ cup shredded zucchini
salt and ground black pepper to taste
¼ cup ketchup, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Heat olive oil in a skillet over medium heat; cook and stir green bell pepper and onion in the hot oil until onion is transparent and bell pepper is softened, 5 to 10 minutes. Add garlic and cook until fragrant, 1 to 2 minutes.
  • Combine ground beef, bread crumbs, eggs, carrot, zucchini, salt, pepper, and bell pepper mixture in a large bowl; mix well using your hands. Press meat mixture into the prepared loaf pan.
  • Bake in the preheated oven until no longer pink in the center, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Spread ketchup on the top of the meatloaf and continue baking until bubbling, about 5 minutes more.

Kale and Walnut Meatloaf with Sweet and Tangy Glaze image

A sweet soy-ginger glaze is the perfect finishing touch for this meatloaf chock-full of kale and walnuts.

Number Of Ingredients 14

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 1/2 cups finely chopped stemmed kale
1 cup dried breadcrumbs
1/2 cup chopped walnuts
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
Kosher salt and freshly ground black pepper
2 tablespoons apricot preserves
2 teaspoons soy sauce
1 teaspoon ground ginger
1 teaspoon rice vinegar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, kale, breadcrumbs, walnuts, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.
  • Stir together the apricot preserves, soy sauce, ginger, vinegar and remaining 1/4 cup ketchup in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

  • First devein and rip or chop your kale. Then, chop garlic cloves and shallots. Add butter to your pan on medium heat until butter is no longer foaming. Add chopped garlic and shallots until lightly golden and begin adding handfuls of kale. Stir continuously until all Kale is sautéed and cooked down. Add salt, pepper, red pepper flakes, and nutmeg. Take off heat.
  • In a separate bowl, whisk 1/2 cup milk, slowly adding in 2tbsp of corn starch until completely combines. Add the other 1.5 cups of milk into a pot on medium to medium low heat. Do not let milk boil. Once warm, add in the milk and cornstarch mixture. Continue whisking and heating on medium low heat for about 5 minutes until milk begins to thicken. Add in 1/4 cup of grated Parmesan and another pinch of salt and pepper.
  • Once thickened, add the milk to your sautéed kale and stir until completely incorporated and thickened. Then add to your serving dish and top with the remainder of grated parmesan and serve. You can also pre-make this side dish and heat it in the over at 350 for about 10 minutes to serve the next day.
