Steps:
- Place chicken into bottom of a slow cooker. Pour broth over chicken. Mix soup, stuffing, and water in a bowl; spoon on top of chicken.

CREAM CHEESE CROCKPOT CHICKEN
Here is another one of my favorite crockpot dishes. Friends and family request this recipe and nearly everyone asks for the recipe. It smells so good while cooking! NOTE: If you don't have time to wait for the sauce to thicken, try making it in a sauce pan.

Steps:
- 1. Brush chicken with 1 Tablespoon butter and place in crockpot. Sprinkle with dry Italian seasoning mix.
- 2. Cover and cook on low for 6-7 hours.
- 3. About 45 minutes before done, remove chicken and reserve about 1/2 cup juices in the bottom before return chicken to crockpot.
- 4. Brown the onion in remaining butter in a saucepan and then add the cream cheese, cream and chicken broth.Add crushed garlic and stir all ingredients until smooth. Salt and pepper to taste.
- 5. Pour sauce mixture over chicken in crockpot and cook an additional 30-45 minutes. (Alternatively, you can thicken sauce in the saucepan by adding 1 Tbsp water with 1 Tbsp cornstarch and stir until thickened, then pour over chicken.)
- 6. Remove chicken to platter and pour sauce on top. Serve by itself or over pasta.
CROCK POT STUFFED CHICKEN ROLLS
I do these in the crock pot mostly, but sometimes I do them covered on the stove top, and both ways they come out moist and juicy. Stove top takes only 25 minutes simmering. The sauce is so good!

- Flatten chicken.
- Put ham and cheese on each slice.
- Roll up and secure with toothpick.
- Combine, flour, parmesan cheese, sage, paprika, salt and pepper.
- Coat chicken, chill for 1 hour.
- Heat oil and brown chicken rolls.
- Put in crock pot.
- Mix soup and broth, pour over chicken.

SLOW COOKER CHICKEN MARSALA
Creamy, delicious, mushroom studded Chicken Marsala prepared in the slow cooker! This surprisingly easy recipe results in a restaurant quality dish made right in your own kitchen.

- Lightly grease a 6-quart slow cooker with cooking spray and set aside.
- Season chicken breasts all around with garlic powder, dried basil, thyme, paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Add prepared chicken breasts to the hot oil and cook for 3 minutes per side, or until just browned.
- Transfer chicken to slow cooker and top with mushrooms and garlic.
- Return skillet over medium-high heat and add the marsala wine; cook for 1 minute, scraping up all the browned bits from the bottom of the skillet.
- Pour wine over chicken and mushrooms.
- Close with a lid and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours. Chicken is done when internal temperature reaches 165˚F.
- Remove chicken breasts from slow cooker and set aside on a plate.
- Combine water and cornstarch in a mug or a small mixing bowl and whisk until incorporated; then, whisk the slurry into the wine sauce.
- Add heavy cream to the wine sauce and whisk until combined.
- Return chicken to the slow cooker; cover with a lid and cook on HIGH for 20 minutes, or until sauce has thickened.
- Transfer chicken from slow cooker to plates; top with mushroom sauce and garnish with fresh parsley.
- Serve.

- Preheat oven to 400º F. Wash sweet potatoes and prick all over with the tines of a fork. Place on oven rack. Season chicken breasts generously on both sides with salt. Place in a baking dish and place in oven.
- After 20-25 minutes, or when thermometer inserted in the thickest part of chicken breasts reaches 161º F, remove chicken from oven. Continue to bake sweet potatoes another 20-30 minutes or until soft.
- While sweet potatoes bake, let chicken cool slightly. Shred chicken, either by hand with two forks or with a stand or hand mixer. In a small bowl, stir together all sauce ingredients until smooth. Pour over chicken and add white and light green parts of sliced green onions. Stir until well combined.
- When sweet potatoes are soft, remove from oven and slice down the middle carefully. Push ends in, using a towel or potholder to protect your hands, to open the sweet potato a little. Stuff with buffalo chicken mixture and top with more ranch dressing and garnish with dark green parts of sliced green onions. Sprinkle with blue cheese crumbles if desired (and not on Whole30 or dairy free) and serve with celery sticks (optional).

- Lightly coat a slow cooker with nonstick spray (I used a 6-quart but believe a smaller size would be fine too). Place the chicken in the bottom of the slow cooker.
- Place the hot sauce, coconut oil, salt, garlic powder, and cayenne in a microwave-safe bowl or measuring cup. Microwave until the coconut oil is melted (about 45 seconds), then stir until smooth. If you prefer not to use the microwave, melt the ingredients together in a small saucepan on the stove. Pour the sauce over the chicken. Cover the slow cooker, then cook for 1 1/2 to 2 1/2 hours on high or 4 to 5 hours on low, until the chicken is cooked through and reaches an internal temperature of 165 degrees F. Remove the chicken from crockpot and shred.
- About 30 minutes before the chicken is done, bake the sweet potatoes: Preheat your oven to 400 degrees F. Prick the sweet potatoes all over with a fork, then place them on a foil-lined baking sheet. - Once the chicken is shredded and while the sweet potatoes bake, mix the cornstarch and 1 tablespoon water together to create a slurry. Add it to the cooking liquid in the slow cooker, then whisk to combine. Cover the slow cooker and cook on high for 30 minutes to allow the sauce to thicken, stirring once halfway through. Once thick, return the chicken to the slow cooker and toss to coat.
