4 skinless, boneless chicken breasts
1 cup chicken broth
1 (10.75 ounce) can cream of chicken soup
1 (6 ounce) box stuffing mix
½ cup water

Steps:

  • Place chicken into bottom of a slow cooker. Pour broth over chicken. Mix soup, stuffing, and water in a bowl; spoon on top of chicken.
  • Cook on Low for 7 hours.

Here is another one of my favorite crockpot dishes. Friends and family request this recipe and nearly everyone asks for the recipe. It smells so good while cooking! NOTE: If you don't have time to wait for the sauce to thicken, try making it in a sauce pan.

4 chicken breasts (boneless)
2 Tbsp butter (melted)
pepper to taste
1 pkg italian seasoning mix (dry, 1 packet)
1 c heavy cream
1 Tbsp chicken bouillon granules
1 pkg cream cheese (8 ounces)
1/2 c chicken broth
1 large onion
1-2 clove garlic (crushed)

Steps:

  • 1. Brush chicken with 1 Tablespoon butter and place in crockpot. Sprinkle with dry Italian seasoning mix.
  • 2. Cover and cook on low for 6-7 hours.
  • 3. About 45 minutes before done, remove chicken and reserve about 1/2 cup juices in the bottom before return chicken to crockpot.
  • 4. Brown the onion in remaining butter in a saucepan and then add the cream cheese, cream and chicken broth.Add crushed garlic and stir all ingredients until smooth. Salt and pepper to taste.
  • 5. Pour sauce mixture over chicken in crockpot and cook an additional 30-45 minutes. (Alternatively, you can thicken sauce in the saucepan by adding 1 Tbsp water with 1 Tbsp cornstarch and stir until thickened, then pour over chicken.)
  • 6. Remove chicken to platter and pour sauce on top. Serve by itself or over pasta.

Creamy, delicious, mushroom studded Chicken Marsala prepared in the slow cooker! This surprisingly easy recipe results in a restaurant quality dish made right in your own kitchen.

6 (1.5 pounds, total) boneless, skinless chicken breasts
1 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon sweet paprika
salt and fresh ground pepper, (to taste)
1 tablespoon olive oil
8 ounces mushrooms, (sliced)
3 cloves garlic, (minced)
1 cup dry marsala wine
1/2 cup water
1/4 cup cornstarch
1/4 cup heavy cream
chopped fresh parsley, (for garnish)

Steps:

  • Lightly grease a 6-quart slow cooker with cooking spray and set aside.
  • Season chicken breasts all around with garlic powder, dried basil, thyme, paprika, salt, and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Add prepared chicken breasts to the hot oil and cook for 3 minutes per side, or until just browned.
  • Transfer chicken to slow cooker and top with mushrooms and garlic.
  • Return skillet over medium-high heat and add the marsala wine; cook for 1 minute, scraping up all the browned bits from the bottom of the skillet.
  • Pour wine over chicken and mushrooms.
  • Close with a lid and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours. Chicken is done when internal temperature reaches 165˚F.
  • Remove chicken breasts from slow cooker and set aside on a plate.
  • Combine water and cornstarch in a mug or a small mixing bowl and whisk until incorporated; then, whisk the slurry into the wine sauce.
  • Add heavy cream to the wine sauce and whisk until combined.
  • Return chicken to the slow cooker; cover with a lid and cook on HIGH for 20 minutes, or until sauce has thickened.
  • Transfer chicken from slow cooker to plates; top with mushroom sauce and garnish with fresh parsley.
  • Serve.

Healthy stuffed sweet potatoes filled with a creamy buffalo chicken. Whole30 and paleo, too, these buffalo chicken stuffed sweet potatoes make for a great and easy weeknight dinner recipe.

2 medium chicken breasts (about 1 pound 5 oz, see note if using precooked chicken)
salt
4 large sweet potatoes (or 8 small)
2 green onions ( thinly sliced, white and light green parts separated from dark green parts)
3 Tbsp. mayonnaise
1/2 cup + 1 Tbsp. hot sauce (like Frank's RedHot)
1 Tbsp. ranch dressing
1/2 tsp. garlic powder
1/2 tsp. salt
More ranch dressing
Celery sticks
Blue cheese crumbles (if you're not on a Whole30 or dairy-free)

Steps:

  • Preheat oven to 400º F. Wash sweet potatoes and prick all over with the tines of a fork. Place on oven rack. Season chicken breasts generously on both sides with salt. Place in a baking dish and place in oven.
  • After 20-25 minutes, or when thermometer inserted in the thickest part of chicken breasts reaches 161º F, remove chicken from oven. Continue to bake sweet potatoes another 20-30 minutes or until soft.
  • While sweet potatoes bake, let chicken cool slightly. Shred chicken, either by hand with two forks or with a stand or hand mixer. In a small bowl, stir together all sauce ingredients until smooth. Pour over chicken and add white and light green parts of sliced green onions. Stir until well combined.
  • When sweet potatoes are soft, remove from oven and slice down the middle carefully. Push ends in, using a towel or potholder to protect your hands, to open the sweet potato a little. Stuff with buffalo chicken mixture and top with more ranch dressing and garnish with dark green parts of sliced green onions. Sprinkle with blue cheese crumbles if desired (and not on Whole30 or dairy free) and serve with celery sticks (optional).
