s my love making this satisfying dish--it's easy and elegant, and the slow cooker minimizes my time in the kitchen. I make this during football season, too. For game days, I skip the pasta and serve the chicken on submarine rolls with a bit of the sauce and some chopped lettuce. 1/2 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/2 teaspoon pepper
1/4 teaspoon salt
1 large egg, lightly beaten
1 tablespoon water
4 (6 ounces each ) boneless skinless chicken breast halves
1 jar (24 ounces) marinara sauce
4 slices part-skim mozzarella cheese
Hot cooked pasta, optional

Steps:

  • In a shallow bowl, combine bread crumbs, Parmesan cheese, Italian seasoning, pepper and salt. In another bowl, combine egg and water. Dip chicken in egg mixture, then in crumb mixture to coat both sides, patting to help coating adhere., Transfer chicken to a 4- or 5-qt. slow cooker. Pour sauce over chicken. Cook, covered, on low for 4-6 hours or until a thermometer inserted in chicken reads 165°. Top with cheese, recover, and cook for 10-15 minutes, until cheese is melted. If desired, serve with hot cooked pasta.

This is a relatively simple recipe for making great chicken Parmesan at home. Goes great over angel hair pasta with a big piece of garlic bread, steamed broccoli, and a glass of Cabernet.

1 cup all-purpose flour
3 eggs
12 ounces Italian-seasoned bread crumbs
6 skinless, boneless chicken breasts
6 tablespoons butter, divided, or more to taste
2 (24 ounce) jars marinara sauce, or more to taste
12 slices mozzarella cheese
1 (3 ounce) package Parmesan cheese
2 tablespoons oregano
2 tablespoons basil
1 tablespoon garlic powder

Steps:

  • Spread flour on a shallow plate. Beat eggs in a bowl. Pour bread crumbs into a shallow bowl. Dredge chicken breasts in flour. Dip in egg and roll in bread crumbs to coat.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Fry breaded chicken breasts, 2 at a time, until golden brown, 4 to 6 minutes per side. Transfer to a plate. Repeat with remaining butter and chicken breasts.
  • Layer chicken breasts in a slow cooker, covering each layer with marinara sauce.
  • Cook on low until flavors combine, 2 1/2 to 3 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Place chicken breasts side-by-side in a baking dish, spooning additional sauce on top. Place 2 slices mozzarella cheese over each piece of chicken. Sprinkle Parmesan cheese, oregano, basil, and garlic powder on top.
  • Bake in the preheated oven until cheese is melted, about 10 minutes.

1 1/2 lbs boneless skinless chicken breasts (about 3 medium)
1 cup milk
6 tablespoons butter or 6 tablespoons margarine, melted
1/4 cup cornstarch (or more to thicken as needed)
1/4-1/2 cup parmesan cheese (or more to thicken as needed)

Steps:

  • Place chicken, milk, and butter in crock pot and cook on low 5-6 hours (until done).
  • When chicken in cooked through, remove from crock pot and add cornstarch and parmesan cheese to juices in crock pot and stir until thickened.
  • Spread cheese mixture on chicken, sprinkle with parsley, and serve.
