DOUBLE CHOCOLATE COOKIES

- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture and mix well. Stir in chocolate chips., Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 8-10 minutes or until set. Cool for 2 minutes before removing from pans to wire racks.

HEALTHY CHOCOLATE COOKIES
These healthy chocolate cookies are so easy to make, dairy free, whole foods focused, and can be easily made gluten free. They make a great healthy snack or healthy treat to enjoy any time of day!

Steps:
- Preheat oven to 350 degrees.
- In a bowl whisk eggs, milk, and vanilla.
- In a small saucepan melt butter (or coconut oil) with the dark chocolate chips and the honey.
- Add the melted chocolate mixture to the egg mixture and whisk until combined.
- Add in dry ingredients (flour, cocao powder baking powder and soda, and salt), and stir until a smooth cookie batter is achieved.*
- Cover a baking pan with parchment paper.
- Scoop tablespoon sized portions of the batter into balls and press down lightly to flatten (makes 16 small cookies).*
- Bake cookies for 8 minutes until just puffy.
- Let cool completely then drizzle with the melted chocolate and sprinkle with cocao nibs if you prefer (the chocolate drizzle will harden in the fridge for a few minutes).
- Enjoy!

- Preheat oven to 350 degrees.
- In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add eggs one at a time. Add vanilla.
- In another bowl, combine the flour, cocoa, salt and baking soda and gradually add to the creamed mixture. Fold in chocolate chips. Mixture will be thick! Roll dough into tablespoon sized balls. Place on baking sheet and press down slightly.
- Bake for 10-12 minutes until puffy but still soft. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
