Applesauce Oat Muffins image

My family loves these easy and delicious Applesauce Oat Muffins. They make the perfect healthy snack and they're freezer-friendly, too!

1 1/4 cups old-fashioned rolled oats
1 1/4 cups unsweetened applesauce
1/2 cup milk
1 large egg
1 teaspoon vanilla extract
4 Tablespoons butter (, melted (or coconut oil))
1/3 cup granulated sugar
1 cup whole wheat flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup raisins (, or craisins, or chocolate chips)

Steps:

  • Preheat oven to 375 degrees F. Line a 12-cup muffin tin with liners or grease with non-stick cooking spray. Set aside.
  • In a medium bowl, stir together the oats, applesauce, milk, egg, vanilla, butter and sugar.
  • In a large bowl, mix the flour, baking powder, baking soda, cinnamon, salt and cranberries or raisins.
  • Make a well in the center of the dry ingredients and pour in the applesauce mixture. Stir just until combined (don't overmix!)
  • Spoon the batter evenly into the muffin cups. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  • Don't over-bake or the muffins will be dry. Remove them to a cooling rack. Cool completely before freezing in a ziplock freezer bag.

3/4 cup milk or 3/4 cup soymilk (to make the muffins dairy-free)
1 cup raisins
1 chopped apple
1/2 cup oil
1 cup all-purpose flour
1 cup quick oats
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon nutmeg
2 teaspoons cinnamon

Steps:

  • Beat egg; stir in remaining ingredients, mixing just to moisten.
  • Pour into 12 greased or paper-lined muffin cups until 3/4 full.
  • Bake at 400° for 15 to 20 minutes.
  • Serve cool or piping hot with butter.

2 cups peeled and finely chopped apples

½ cup honey
½ cup buttermilk
½ cup oil
2 large eggs
2 teaspoons vanilla extract
1 cup quick-cooking oats
2 cups whole wheat flour
2 ½ teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon baking soda
½ teaspoon nutmeg
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin tin cups with cupcake papers.
  • Mix brown sugar, all-purpose flour, and cinnamon together in a small bowl for crumb topping. Add butter and press with the back of a spoon or your fingers to incorporate it into the sugar mixture. Mix until crumbly and set aside.
  • Toss apples with lemon juice in a large bowl. Mix in sugar, honey, buttermilk, oil, eggs, and vanilla until combined. Stir in oats.
  • Combine whole wheat flour, baking powder, cinnamon, baking soda, nutmeg, and salt in a smaller bowl. Gently fold flour mixture into the wet ingredients with a large spoon, until flour is just mixed in. Spoon batter into the prepared cupcake papers and sprinkle about 1 teaspoon crumb topping on top of each one.
  • Bake in the preheated oven until tops spring back when lightly pressed, 20 to 25 minutes. Cool on a wire rack.

Blueberries
Sliced almonds
Diced strawberries
Unsweetened coconut flakes

Steps:

  • Preheat the oven to 350ºF and line a muffin tin with silicone muffin cups or generously spray muffin tin with non-stick cooking spray.
  • In a large bowl, mash banana, Add in eggs, maple syrup, milk and vanilla. Mix to combine. Set aside.
  • In another large bowl, mix together all of the dry ingredients.
  • Slowly add the wet ingredients to the dry ingredients. Mix until combined.
  • With a spoon, add batter to each muffin cup, filling each to close to the top. Add desired toppings to the top of each cup, pressing into the cup slightly to get some of the ingredients into the centre of the muffins.
  • Bake for 20-23 minutes or until inserted toothpick comes out clean. Allow to cool before removing from muffin tin.
