Tilapia is topped with a flavorful herbed bread crumb mixture and then baked to create the perfect baked tilapia! Flaky and tender on the inside, crisp on the outside!

1/2 cup Herbed Bread Crumbs
4 tilapia fillets
2 tbsp butter (melted)
salt and pepper

Steps:

  • Preheat oven to 425
  • Prepare herbed bread crumbs - recipe link in notes.
  • Line a baking sheet with parchment paper and lay out filets.
  • Sprinkle fish with salt and pepper and top evenly with bread crumbs.
  • Drizzle over melted butter.
  • Bake for 10 minutes or until fish flakes easily with a fork.

2 Tilapia fillets - washed and patted dry
¼ cup Olive oil - approximately
1/3 cup Italian seasoned bread crumbs
1 cup Panko bread crumbs
¼ tsp. garlic powder
¼ tsp Italian seasoning
1/8 tsp. onion powder
½ cup Parmesan cheese - fresh grated
1/8 tsp. sea salt - or to taste
1/8 tsp. fresh ground pepper - or to taste
Fresh lemon juice - juice of 2 lemons - about 3 Tbs.

Steps:

  • Preheat oven to 425 degrees F. Place cooking rack in the center of the oven. Get two pie plates or shallow casserole dishes or bowls and place them next to each other Line a baking sheet with parchment paper or foil - keep this near the pie plates Place lemon juice in one pie plate In the other pie plate, add the salt, pepper, Italian and Panko bread crumbs, Italian seasoning, onion powder, garlic powder and Parmesan cheese. Mix thoroughly. Place one piece of tilapia into the lemon juice and coat each side Move it to the bread crumb mixture and pat the bread crumbs onto each side of the fish, until it's well coated. Move the tilapia to the baking sheet. Repeat with the other fillet. Bake the tilapia for about 18-20 minutes or brown and crispy on top. I put mine under the broiler for about 1 minute after baking, just to get them a little extra crispy. Be careful though, because they can go from brown to burnt in a few seconds under the broiler. Fish is cooked through when internal temperature is 140 degrees F. Serve with some extra lemon juice squeezed over top and a few grates of lemon zest. Delicious accompanied by my Lemon Garlic Aioli Recipe. I added a little horseradish to the aioli to bump up the flavor, but that's optional. 24 Ritz crackers
1 tablespoon parsley
1 tablespoon all purpose Greek seasoning
2 tablespoons extra virgin olive oil
salt
pepper
1 egg
2 tablespoons skim milk

Steps:

  • Crush ritz crackers.
  • Add parsley, greek seasoning, salt, and pepper to ritz mixture.
  • Combine egg and milk.
  • Heat large skillet over med-high heat.
  • Dip fish in egg wash and ritz mixture.
  • Cook in olive oil in skillet 3 minutes on each side.

Number Of Ingredients 15

4 large banana leaves, soaked in water for at least 15 minutes (cut in half to make 8 wraps)
¼ cup of Olive oil
1 clove garlic, finely chopped
4 (6 to 8 ounce) Tilapia (cut in half to make 8 filets)
¼ cup finely chopped fresh herb of your choice (thyme, rosemary, basil, oregano)
3 rosemary sprigs
Fresh Basil minced
Fresh Oregano minced
Fresh thyme minced
1/2 cup salted butter, room temperature
1 t. lemon zest, minced
1/2 t. ground black pepper
Few drops fresh lemon juice
8 thin lemon slices cut in half
10 wooden round toothpicks, (pre-soak in a cup of water to prevent burning on grill)

Steps:

  • Herb Butter Combine fresh herbs, (basil, oregano, rosemary, garlic, thyme) with lemon zest in a small bowl with a rubber spatula or the back of a spoon until incorporated. Place butter on the bottom edge of a sheet of plastic wrap. Lift the bottom edge up and over the butter, rolling into a smooth, even log. Twist the ends of the plastic wrap to seal, then chill or freeze until firm. Can make this a day ahead of grilling. Heat grill to high. Whisk together oil, few drops of fresh lemon juice, and ½ cove of garlic in a medium baking dish. Wash Tilapia, salt/pepper to taste and place into baking dish to coat fish. Marinate for 5 minutes. To make the banana leaves more pliable, soak leaves in cold water for 15 minutes, this also helps clean off any dirt. Shake off any excess water and pad dry. Place leaves on a flat surface. Remove the Tilapia from the marinade, season with salt and pepper, and place 1 fillet in the center of each leaf, place thinly sliced lemon half on top of fish and a dollop of herb butter. Wrap the banana leaf loosely around each fillet, and place a toothpick at each end to secure. It won't be a perfect seal but this allows it to breath and steam, letting the flavors infuses. Place the packets flat on the grill, close the cover, and cook for 4 to 8 minutes or until just cooked through. Carefully remove from the grill and serve the fish in the banana leaf, (it's like serving your guests with a little present). Serve fish with grilled cord on the cob, and a cold paste salad or seasonal fresh fruit.

1/8 teaspoon cayenne

1/4 cup french breadcrumbs, finely ground
1/4 cup unsalted butter or 1/4 cup olive oil

Steps:

  • Preheat oven to 400°F.
  • In shallow dish, melt butter *if using* or pour in olive oil. (Can use a mix of both, if preferred.)
  • In another shallow dish, mix first 5 ingredients.
  • Cover baking sheet with foil and spray lightly with cooking spray.
  • Wash and dry fillets.
  • Dip fillets in butter/oil to coat and dredge in herb-crumb mixture to completely cover.
  • Let dry on wire rack for about 5 minutes to "set" coating.
  • Place on foil-covered sheet and bake for about 10-12 minutes or until fish flakes easily.

Coarse salt and ground pepper
3 tablespoons light mayonnaise
1/2 cup finely chopped parsley
2 tablespoons finely chopped fresh dill
Lemon wedges, for serving

Steps:

  • Preheat oven to 375 degrees. Place fillets on a rimmed baking sheet, flat side down; season generously with salt and pepper. Divide mayonnaise evenly over top of fillets; using a butter knife, spread, coating evenly.
  • Sprinkle fish with parsley and dill. Bake until opaque throughout, about 15 minutes. Serve with lemon wedges.

I have put this together after experimenting with several ways to achieve what I wanted. It makes a wonderful herb crunch on the fish and could be used on other types of fish as well.

2 -4 tilapia fillets
1/2 cup all-purpose flour
1 tablespoon creole seasoning
1 tablespoon garlic powder
2 teaspoons dried thyme
1 tablespoon dried parsley flakes
1 tablespoon dried basil
1 -2 teaspoon cayenne pepper (your choice)
1/4 teaspoon black pepper
1 teaspoon salt
2 tablespoons canola oil
buttermilk, enough to cover fish

Steps:

  • Combine all spices/dry ingredients in a bowl and mix well.
  • Cover fish with buttermilk approximately 1 hour prior to cooking.
  • Spread the spice mixture onto a flat plate.
  • Press the fish fillets firmly into the spices, coating both sides.
  • Heat the oil until almost smoking in a large heavy skillet. (I use a large electric skillet set at 350 deg.).
  • Cook the fish about 3 minutes on each side for fillets less than 3/4 inch thick. Increase time slightly for thicker fillets.
  • Serve with lemon wedges. We like stone ground grits with our fish in lieu of potatoes.
