HERB CRUSTED TILAPIA RECIPE

- Preheat oven to 425 degrees F. Place cooking rack in the center of the oven. Get two pie plates or shallow casserole dishes or bowls and place them next to each other Line a baking sheet with parchment paper or foil - keep this near the pie plates Place lemon juice in one pie plate In the other pie plate, add the salt, pepper, Italian and Panko bread crumbs, Italian seasoning, onion powder, garlic powder and Parmesan cheese. Mix thoroughly. Place one piece of tilapia into the lemon juice and coat each side Move it to the bread crumb mixture and pat the bread crumbs onto each side of the fish, until it's well coated. Move the tilapia to the baking sheet. Repeat with the other fillet. Bake the tilapia for about 18-20 minutes or brown and crispy on top. I put mine under the broiler for about 1 minute after baking, just to get them a little extra crispy. Be careful though, because they can go from brown to burnt in a few seconds under the broiler. Fish is cooked through when internal temperature is 140 degrees F. Serve with some extra lemon juice squeezed over top and a few grates of lemon zest. Delicious accompanied by my Lemon Garlic Aioli Recipe. I added a little horseradish to the aioli to bump up the flavor, but that's optional. SHRIMP AND POTATO CRUSTED TILAPIA
This easy dish combines the sweet flavors of fresh shrimp, savory flavors of parmigiano, and delicate flavors of potato and tilapia for a meal that takes no time or sweat. Such a rich dish for a chef of any skill level.

Steps:
- Pre - heat oven to 450 degrees.
- Place filet in a shallow dish.
- Sprinkle all sides with 1 tbs oregano, 1 tbs garlic salt and salt and pepper to taste.
- Cover with 1 cup milk and set in the refrigerator to marinate for 10 minutes each side.
- Clean and peel potatoes.
- Cut potatoes into bite-sized pieces and place uncovered in pot over medium high heat.
- Boil until tender (approx 20 minutes).
- While potatoes come to a boil, clean and chop shrimp.
- In a small skillet, drizzle with olive oil and turn to medium heat.
- Let skillet warm and add shrimp. Cook over medium low heat until shrimp turns pink.
- When potatoes are ready, drain and return to pot.
- Over low heat, add the remaining butter and begin to mash.
- Remove fish from milk marinade and drip dry. Place fish on oiled baking dish and set aside. Do not pat dry.
- To potatoes add remaining milk, oregano, garlic salt and stir. Add shrimp, 1/2 cup parmigiano and parsley.
- Stir mixture together well.
- Begin to cover each filet with potato /shrimp mixture.
- Sprinkle with more parmigiano cheese and place into oven to bake for 20 minutes.
- Once baking is complete, set oven to broil and brown in oven for approximately 5-10 minutes *times may vary depending on your oven.
- Remove from oven and let cool before serving.
- Add with your favorite veggie dish, glass of wine, serve and enjoy!

- Line a baking sheet with parchment paper and lay out filets.
- Sprinkle fish with salt and pepper and top evenly with bread crumbs.

HERB-CRUSTED SHRIMP

- Toss 1 cup panko breadcrumbs, 1/4 cup olive oil, the juice of 1 lemon and a handful each of chopped parsley, basil and chives; season with salt and pepper. Press both sides of 1 pound peeled and deveined shrimp in the breadcrumb mixture and broil until golden, 3 to 4 minutes. Garnish with chives.

- Crush ritz crackers.
- Add parsley, greek seasoning, salt, and pepper to ritz mixture.
- Combine egg and milk.
- Heat large skillet over med-high heat.
- Dip fish in egg wash and ritz mixture.
- Cook in olive oil in skillet 3 minutes on each side.
PANKO-CRUSTED TILAPIA
Steps:
- Put flour and eggs into 2 separate dishes. Combine bread crumbs, cilantro, lime zest, garlic powder, cayenne pepper, salt, and black pepper in a third dish.
- Season tilapia fillets with salt and pepper. Put 1 fillet in flour, coat both sides, and gently shake off excess. Dip into eggs, turning once, then dredge in the bread crumb mixture to coat. Repeat with remaining fillets.
- Heat oil in a large skillet over medium heat. Place fillets in the skillet and cook until crust is golden and fish is easy to lift with a spatula, 3 to 4 minutes. Turn and cook on the other side until fish flakes easily with a fork, another 3 to 4 minutes.

- Preheat the oven to 400 degrees F (200 degrees C).
- Line a baking sheet with foil.
- Combine panko bread crumbs, parsley, dill, chives, extra-virgin olive oil, lemon zest, sea salt, and black pepper in a bowl. Taste and adjust with more salt if desired.
- Rinse halibut fillets and pat dry with a paper towel.
- Place halibut fillets onto the prepared baking sheet.

- Preheat oven to 400°F. Place fish on foil-lined shallow baking pan. Sprinkle with salt. Mix butter and all of the spices in medium bowl. Brush fish with 1 tablespoon of the seasoned butter.
