HERB CRUSTED TILAPIA WITH GARLIC BUTTER
Broiled tilapia crusted in herb and drizzled with garlic butter is simply divine in this gluten-free nightshade-free dish. If your diet allows, I highly recommend adding 1/2 teaspoon onion powder to the seasoning mix.

Steps:
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Brush a broiler pan with olive oil.
- Stir butter and garlic paste together in a bowl. Divide garlic mixture evenly between two bowls, reserving one bowl for serving.
- Stir garlic powder, oregano, Italian seasoning, parsley, and salt together in a bowl.
- Place tilapia fillets on prepared broiler pan; brush each fillet with garlic butter and sprinkle each with Italian seasoning mixture, reserving 1/2 the garlic butter in the bowl and 1/2 the Italian seasoning mixture.
- Broil fillets in the preheated oven for 2 minutes, brush again with garlic butter, and broil for 2 more minutes. Turn fillets over. Brush with garlic butter and sprinkle with remaining Italian seasoning mixture. Broil until tilapia fillets flake easily with a fork, 3 to 5 minutes. Serve with reserved garlic butter and lemon juice.

- Prepare herbed bread crumbs - recipe link in notes.
- Line a baking sheet with parchment paper and lay out filets.
- Sprinkle fish with salt and pepper and top evenly with bread crumbs.
- Drizzle over melted butter.
- Bake for 10 minutes or until fish flakes easily with a fork.

PARMESAN CRUSTED TILAPIA FILLETS
Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Whisk Parmesan cheese, paprika, parsley, salt, and pepper together in a shallow dish.
- Coat tilapia fillets with olive oil and press into the Parmesan cheese mixture. Arrange coated fillets on the prepared baking sheet.
- Bake in preheated oven until the fish flakes easily with a fork, 10 to 12 minutes.

HERB CRUSTED TILAPIA RECIPE

- Preheat oven to 425 degrees F. Place cooking rack in the center of the oven. Get two pie plates or shallow casserole dishes or bowls and place them next to each other Line a baking sheet with parchment paper or foil - keep this near the pie plates Place lemon juice in one pie plate In the other pie plate, add the salt, pepper, Italian and Panko bread crumbs, Italian seasoning, onion powder, garlic powder and Parmesan cheese. Mix thoroughly. Place one piece of tilapia into the lemon juice and coat each side Move it to the bread crumb mixture and pat the bread crumbs onto each side of the fish, until it's well coated. Move the tilapia to the baking sheet. Repeat with the other fillet. Bake the tilapia for about 18-20 minutes or brown and crispy on top. I put mine under the broiler for about 1 minute after baking, just to get them a little extra crispy. Be careful though, because they can go from brown to burnt in a few seconds under the broiler. Fish is cooked through when internal temperature is 140 degrees F. Serve with some extra lemon juice squeezed over top and a few grates of lemon zest. Delicious accompanied by my Lemon Garlic Aioli Recipe. I added a little horseradish to the aioli to bump up the flavor, but that's optional. PANKO-CRUSTED TILAPIA
Steps:
- Put flour and eggs into 2 separate dishes. Combine bread crumbs, cilantro, lime zest, garlic powder, cayenne pepper, salt, and black pepper in a third dish.
- Season tilapia fillets with salt and pepper. Put 1 fillet in flour, coat both sides, and gently shake off excess. Dip into eggs, turning once, then dredge in the bread crumb mixture to coat. Repeat with remaining fillets.
- Heat oil in a large skillet over medium heat. Place fillets in the skillet and cook until crust is golden and fish is easy to lift with a spatula, 3 to 4 minutes. Turn and cook on the other side until fish flakes easily with a fork, another 3 to 4 minutes.

Steps:
- Crush ritz crackers.
- Add parsley, greek seasoning, salt, and pepper to ritz mixture.
- Combine egg and milk.
- Heat large skillet over med-high heat.
- Dip fish in egg wash and ritz mixture.
- Cook in olive oil in skillet 3 minutes on each side.
HERB-COATED TILAPIA WITH LEMON
Steps:
- Finely grate the zest from the lemon, then cut the lemon in quarters and set aside.
- Mix the herbs and lemon zest on a plate. Sprinkle the fillets with 3/4 teaspoon salt and 1/4 teaspoon pepper and coat both sides of each fillet with herbs, pressing them on so they adhere.
- In a large (12-inch) nonstick skillet, heat the oil over medium heat until hot. Cook the tilapia until the flesh is opaque and just cooked through, about 2 minutes on each side (cut into the thick part of a fillet to check). Serve the tilapia with the lemon quarters, for squeezing at the table. (Note: If you're serving this dish to company, you might want to cut wedges from a lemon that hasn't been zested.)
