HOT COCOA: RELOADED
By simply toasting the milk powder before adding it to the hot cocoa mix, we can capture a wide array of flavors, including caramel, toffee, and malt. Basically, one extra step creates the best cup of hot chocolate ever. Just trust me. And don't forget the homemade marshmallows...Note: If, like me, you only have kosher salt, simply blend a few tablespoons to a fine dust in a spice grinder. This recipe first appeared in Season 1 of Good Eats: Reloaded.

Steps:
- Heat oven to 300ºF. Line a half sheet pan with parchment paper.
- Spread milk powder in a thin, even layer the prepared sheet pan and bake until golden brown and crumbly, about 20 minutes. Remove from oven and cool. Odds are good the milk powder will be stuck together in lumps and if that's the case, simply pulse it in a food processor a few times. (Toasting the milk powder is technically optional but personally, I think the flavor is worth it.)
- Transfer the toasted and cooled milk powder to an airtight plastic container and add the sugar, cocoa powder, cornstarch, fine salt, and cayenne, if using. Cover and shake to thoroughly combine. Tightly sealed, the powder will keep nearly indefinitely in the pantry.
- For one serving, heat 3/4 cup (6 fluid ounces or 175 ml) of water to a boil, then remove from the heat. Spoon 1/4 cup of the cocoa mix into a heavy mug and whisk in 1/4 cup (2 ounces or 60 ml) of the water to create a paste. Slowly whisk in the remaining hot water. Let sit about 30 seconds because otherwise you'll scald your face while attempting to chug the deliciousness.

Steps:
- In a large bowl combine all the ingredients and mix well. If you have a sifter use it, if not that is ok. I suggest having a cup of hot water on hand so you can test it out before you store it. This way you can see if you want to alter the recipe (more sugar etc) Remember that this is Special Dark cocoa so it will be stronger, more bitter. You can of course use regular cocoa, just up the amount to 2 Cups. Funnel into a Mason jar or air tight storage container.
- To Serve : Add 2 tablespoons to one standard size ( standard size is classified as 10 oz. ) mug of hot boiling water.
- Leave room in the mug to add more mix till it's just as you like it.

Steps:
- Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.
- In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.
- Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

- Make sure the molds you are using are completely dry. I did not add any nuts, but you can sprinkle them on the molds if you are using nuts or add it to the chocolate mix.
- Add one-two inches of water in a saucepan and place a bowl that fits the saucepan on top. (you want a snug-fit or perfect -fit here and make sure the steam doesn't escape from the sides) Make sure the bowl on top doesn't touch the water in the saucepan. Add the cacao butter (I did not chop it further this time) to the top-bowl, gently simmer the water over medium-low heat and let the butter melt in the gentle heat. (Medium-low heat is the key, and make sure the water doesn't come to a rolling boil. Also, many add the cacao butter after the water comes to a simmer, but adding it, in the beginning, worked for me)
- Let the cacao butter melt. Make sure to whisk the cacao butter during the melting process for even melting. Here are my melted cacao butter and the double-boiler setup.
- Now pour the dark chocolate mixture into the molds. I usually pour the chocolate mixture and sit for 5 minutes and keep it in the fridge.

- Viennese Hot Chocolate. The word "luscious" can barely begin to describe Viennese hot chocolate. It is rich and thick and requires just three common ingredients.
- Spanish Hot Chocolate. These thick hot chocolate recipes are the epitome of "drinking chocolate" and are often served in small cups. Spanish hot chocolate is among the densest and it's nearly a national drink in Spain.
- Dutch Hot Chocolate. Called warme chocolademelk, Dutch hot chocolate is a classic recipe from the Netherlands. It uses two types of chocolate—dark chips and Dutch cocoa—and doesn't skimp on the milk.

- Iced Hot Cocoa. Iced coffee is excellent, but have you tasted iced hot cocoa? It's just as satisfying and a perfect way to get your chocolate fix on a warmer day.
- Hot Chocolate Mix. Making hot chocolate mix from scratch is unbelievably simple. It's a mix of a few common dry ingredients, including powdered milk, sugar, and cocoa powder.
- Keto Hot Chocolate Mix. The keto hot chocolate mix skips the sugar, opting for an allulose or monkfruit sweetener instead. It's also dairy-free and vegan because it uses powdered coconut milk; be sure to mix it with hot water or plant-based milk.
