BROWN SUGAR BAKED BEANS
If you must be stingy with salt, you're sure to appreciate this flavor-rich bean dish. "These beans are well-received by folks who love hot and spicy foods and those with a more conservative palate, too," writes Debra Hogenson of Brewster, Minnesota. "It's requested for all our family reunions."

BACON BROWN SUGAR BAKED BEANS
My husband used to ask for baked beans every day when we first married. I made them this way to save time. I made them every day for a year, thinking he would get sick and tired of them & not ask for them all the time. After 24 years of marriage, this is still one of his favorite dishes.

Steps:
- Drain the beans (do NOT rinse). (If you are baking the beans in the oven, don't drain as much-or not at all.).
- Mix in all other ingredients except bacon.
- If you're in a hurry, microwave for 2 minutes & skip the bacon. (This is my preferred method.).
- Stir and serve.
- Otherwise, put bacon on top and bake in a 350 degree F oven for 45 minutes.
- Note: all amounts are approximate. Adjust to your taste.

Steps:
- Place the navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Or, bring the beans and water to a boil in a large pot over high heat. Once boiling, turn off the heat, cover, and let stand 1 hour. Drain and rinse before using.
- Place the beans in a large saucepan with 4 cups of water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer 1 hour.
- Preheat an oven to 375 degrees F (190 degrees C). Stir the ketchup, maple syrup, brown sugar, molasses, Worcestershire sauce, salt, pepper, and chili powder together in a small bowl; set aside.
- Once the beans have simmered for 1 hour, drain, and reserve the cooking liquid. Pour the beans into a 1 1/2 quart casserole dish and stir in the chopped onion and the molasses sauce. Stir in enough of the reserved cooking liquid so the sauce covers the beans by 1/4 inch.
- Cover, and bake in the preheated oven for 10 minutes, then reduce the heat to 200 degrees F (95 degrees C), and cook 6 hours longer. Stir the beans after they have cooked for 3 hours. Once the beans are tender and the sauce has reduced and is sticky, remove from the oven, stir, recover, and allow to stand 15 minutes before serving.

GRAMMA BEATON'S BROWN SUGAR BEANS
This recipe was given to me by my Aunt Joan, who got it from her neighbor. It is deceptively simple, but so good. I just took it to a potluck and got rave reviews: 'These beans are awesome!'

- Cook the bacon in a large, oven-proof pot over medium high heat. When the bacon is browned (about 10 minutes), remove from heat.
- Add the onions and the beans on top of the bacon in the pot. Whisk the molasses, mustard, and pepper together and pour over everything. Add the hot water (I actually didn’t measure my water – I just poured water from the kettle until I started to see it under the beans).
- Bake for 30 minutes, stir, and bake for another 20-30 minutes. Continue this process until the beans are sticky and thick and deep golden brown (for me, it was about 1 1/2 hours total time in oven). Add water to adjust consistency as needed. Remove from the oven and stir in the brown sugar and salt to taste.
