This is a sweet chili sauce made according to an old family recipe. It is great on hamburgers, and pot roast. If you don't can the sauce in jars, it can be refrigerated.

35 fresh tomatoes, peeled, seeded and chopped
3 fresh hot chile peppers, seeded and chopped
4 red bell peppers, cored, seeded and cut into 2-inch pieces
1 large onion, chopped
2 cups apple cider vinegar
⅓ cup fresh lime juice, or amount to taste
1 cup white sugar
1 cup packed brown sugar
1 tablespoon salt, or amount to taste

Steps:

  • Place the tomatoes in a large pot over medium heat, and simmer 1 hour. Skim off any excess liquid or foam. Stir in the chile peppers, bell peppers, onion, vinegar, lime juice, white sugar, brown sugar, and desired amount of salt. Reduce heat to low, and simmer 3 to 5 hours until liquid reduces and thickens. Adjust seasonings to taste.
  • Remove chili sauce from heat, and skim off any foam. Pour into hot, sterilized jars, leaving 1/4 inch headroom. Adjust lids. Process for 10 minutes in a boiling-water bath.

3 -4 tablespoons olive oil
2 lbs lean ground beef
1 -2 teaspoon crushed red pepper flakes (or to taste)
1 1/2 lbs sirloin, cut into about 1-inch cubes
2 tablespoons chopped fresh garlic
2 cups water (or use 1 cup water and 1 cup beer)
2 -3 tablespoons cumin (can use more to taste)
2 -3 tablespoons chili powder (I use ancho chili powder in place of the chili powder)
3 teaspoons dried oregano
1 tablespoon salt (or to taste)
1 teaspoon cayenne pepper (can use more)
3 (6 ounce) cans tomato paste (YES 3 cans!)
1 tablespoon sugar
3 -4 medium tomatoes, diced (use very red and ripe tomatoes for this)
2 large onions, chopped
2 green bell peppers, chopped
4 cups black beans, rinsed and drained
2 cups beef broth (more if needed to thin)
grated cheddar cheese

Steps:

  • Heat oil in a large heavy pot.
  • Add in ground beef; cook for 5 minutes.
  • Add in the cubed sirloin, crushed red pepper flakes and fresh garlic and brown about 5 minutes.
  • Add in 2 cups beer or water; bring to a boil.
  • Add in cumin, ancho chili or chili powder, oregano, salt and cayenne pepper; reduce the heat, cover and simmer for about 15 minutes.
  • Add in tomato paste and sugar; simmer for 5-6 minutes.
  • Add in chopped tomatoes, onions and green peppers; simmer for about 50-60.
  • Add in drained black beans, beef broth, starting with 2 cups adding in more to thin to desired consistancy; simmer for 20-25 minutes, stirring occasionally.
  • Ladle into bowls and sprinkle with cheddar cheese.

6 to 7 large fresh green bell peppers, seeded and chopped
3 large ribs fresh celery, chopped
1/2 pound butter
10 pounds fresh choice ground beef
5 pounds fresh sweet yellow onions, chopped (6 to 8 jumbo), plus more for serving
1/4 cup salt, plus more for seasoning
1/4 cup ground black pepper, plus more for seasoning
1/3 cup chili powder
1 gallon premium diced tomatoes in juice
1 gallon chili sauce
2 gallons dark red kidney beans with juice
Freshly grated Cheddar
Hot pepper sauce of choice

Steps:

  • Put the chopped green peppers, chopped celery and butter in a large skillet over medium heat. Cover and saute for 20 minutes, stirring several times during the cooking.
  • Chunk the ground beef with your hands and put it into a frying pan over medium heat.
  • Add the chopped onions, and season with the salt and pepper, to taste. Cook until the meat has browned and is fully cooked, about 1/2 hour. In a large soup pot or kettle, add the beef and onions, celery and peppers, the chili powder, diced tomatoes with juice, chili sauce, kidney beans with all the juice, the 1/4 cup salt and 1/4 cup of pepper. Stir to combine, then bring to a boil over medium heat. Lower the heat, cover, and simmer the chili for 45 minutes.
  • It will lose its chunkiness and mellow in flavor the longer you cook it. Keep it on all day, if you like, stirring it from time to time.
  • Serve in a large bowl garnished with grated Cheddar and freshly chopped onions. Add your favorite pepper sauce for some heat.

4 quarts chopped peeled tomatoes (about 24 large)
2 cups chopped onions
2 cups chopped sweet red peppers (about 4 medium)
1 serrano pepper, finely chopped
1 cup sugar
3 tablespoons salt
3 tablespoons mixed pickling spices
1 tablespoon celery seed
1 tablespoon mustard seed
2-1/2 cups white vinegar

Steps:

  • In a stock pot, combine the tomatoes, onions, peppers, sugar and salt; simmer, uncovered, for 45 minutes. , Place the pickling spices, celery seed and mustard seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag; add to tomato mixture. Cook for 45 minutes or until very thick, stirring frequently. , Add vinegar; cook to desired thickness. Discard spice bag. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water canner.

2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced, or more to taste
2 pounds lean ground beef
2 (16 ounce) cans kidney beans, rinsed and drained
1 (28 ounce) can diced tomatoes
1 (15 ounce) can tomato puree
1 cup water
1 (4 ounce) can chopped green chile peppers
2 tablespoons mild chili powder
2 teaspoons salt
2 teaspoons ground cumin
1 teaspoon ground black pepper

Steps:

  • Heat oil in a large skillet over medium-low heat. Add onion and garlic; cook and stir until onion is translucent, about 5 minutes. Add ground beef; cook and stir until browned, 8 to 10 minutes.

10 -12 fresh tomatoes, peeled & blended
olive oil
5 -6 garlic cloves
1 -2 lb pork (optional) or 1 -2 lb sausage (optional)
1 cup red onion, diced
2 -3 cups green peppers, diced
1 -2 jalapeno, diced
1 (14 ounce) can black beans, drained and rinsed
1 cup corn
2 cups chicken stock
1 cup white rice, cooked
1/2 bunch cilantro, roughly cut, some reserved for topping
2 green onions, diced
fat free sour cream

Steps:

  • Heat oil with garlic over med-hi heat.
  • (if using meat, add meat and brown. Drain excess grease).
  • Add onions and cook 5 min.
  • Add peppers and cook until soft.
  • Add beans and corn and cook 1 min, just to warm.
  • Add blended tomatoes, chicken stock, cilantro, and cooked rice.
  • Season to taste with salt and pepper.
  • Simmer 15-20 minutes, or until desired thickness is achieved.
  • Serve topped with green onions, chopped cilantro and a dab of (fat free) sour cream.

2 tsp cinnamon powder
2 tsp allspice, ground
1 tsp nutmeg
1 2/3 c water
1/3 c dried cranberry
1 can(s) kidney beans, canned (15.5oz)
1 instant bouillon (1 cube)
2/3 lb tomato
1 tsp salt
2 tsp chili powder
2 Tbsp olive oil

Steps:

  • 1. Mince onion and garlic cloves. Chop tomato.
  • 2. In a frying pan, heat olive oil and cook garlic, onion and ground beef until tender and brown.
  • 3. Add cinnamon powder, allspice and nutmeg. Cook for 2-3 minutes.
  • 4. Add water, instant bouillon, kidney beans and dried cranberry. Bring to boil.
  • 5. Reduce heat and simmer for 10-12 minutes. Then add chopped tomatoes, salt, pepper and chili powder. Stir well. Keep simmering for 10-15 minutes.
