- Drain cherries and set on paper towels to dry.
- In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
- Melt confectioners' coating in a heavy saucepan over low heat. Dip each cherry in by its stem, and place on waxed paper lined sheets. Chill until completely set. Store in an airtight container in a cool place. Best after 1 or 2 weeks.

- In a large mixing bowl, combine butter, corn syrup, sweetened condensed milk, vanilla, and sugar. Knead dough, and form it into balls with a cherry wrapped in the middle. The balls should be approximately the size of walnuts. Place balls in the freezer to chill.
- In a double boiler, melt chocolate chips and shortening together. Dip the cooled balls in the chocolate, let cool on parchment paper.

- In a small bowl, combine the sugar, butter, milk and extract. Knead until smooth and pliable. Shape into 1-in. balls and flatten each into a 2-in. circle. , Wrap one circle around each cherry and lightly roll in hands. Place with stems up on waxed paper-lined baking sheet. Cover loosely and refrigerate 4 hours or overnight. , In a microwave, melt chocolate and shortening; stir until smooth. Holding on to the stems, dip cherries into chocolate; allow excess to drip off. Place on waxed paper until set. Store in a covered container. Refrigerate 1-2 weeks before serving.

- Preheat the oven to 350°F. Grease a 10 cup bundt pan generously and set aside.
- Grate the zucchinis and place on several layers of paper towels to absorb excess moisture. Use a towel and gently press the zucchini to release the moisture. You don't want it completely dry, just slightly less wet. I ended up with a couple of cups of grated zucchini but it honestly doesn't affect the recipe if you have more or less. I would say between 2 and 3 cups is perfect.
- Whisk granulated sugar, eggs, applesauce, butter, and vanilla extract together in a large mixing bowl.
- Whisk the flour, baking soda, salt, cinnamon and cocoa powder together. Reserve a couple tablespoons of the mixture, set aside.
- Stir the flour mixture into the wet mixture just until combined.
- Combine the chocolate chips with the reserved flour mixture. Add chocolate chips and grated zucchini to the batter and stir just until all ingredients are combined.
- Pour the batter into the prepared bundt pan. Bake the cake for 55 to 65 minutes or until an inserted toothpick comes out with a few moist crumbs. Let the cake cool for ten minutes before inverting onto a plate. Let cake cool completely.

- Step 1 For this recipe use a stand mixer fitted with a paddle attachment or a handheld mixer with beaters.
- Step 2 Prepare cupcake pans by lining with cupcake liners or spraying with pan spray.
- Step 3 In a medium mixing bowl measure the flour, cocoa powder, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- Step 4 Cream together the butter and brown sugar until light and smooth.
- Step 5 Add egg and vanilla, scraping sides of bowl frequently. ( if the mixture looks a little lumpy or curdled, keep mixing on medium speed until it gets smooth)
- Step 6 Add the zucchini, Greek yogurt, and buttermilk to the egg mixture. Scrape sides and fold all ingredients together.
- Step 7 Gently fold in the dry ingredients until just blended.
- Step 8 Add the cherry pieces and chocolate chips and fold to blend.
- Step 9 Scoop into muffin tins filling each well 3/4 full.
- Step 10 Bake at 350 degrees for 18-20 minutes.
- Step 11 Check for doneness by inserting a toothpick in the center.
CHOCOLATE COVERED CHERRY MICE
These little critters are such a hit anytime or any place you take them. They're almost too cute to eat... almost.

- 1. **Note** I didn't put amounts in my ingredients, as the amounts all vary based on how many you'd like to make -- I only listed amounts for the chocolate chips and shortening, so the chocolate/shortening ratio would be correct. Feel free to alter it based on amount being made. Also, if you would like the "nose" tinted pink, you can add a bit of food coloring into the white chocolate after applying all of the "eyes"
- 2. Drain cherries WELL, and pat dry with a paper towel. Unwrap your Hersheys kisses.
- 3. In a small saucepan, melt together chocolate chips and shortening over low to medium/low heat, stirring frequently.
- 4. Dip your cherry into the melted chocolate and place on its side onto a tray lined with wax paper. Immediately stick a Hershey's kiss to the wet chocolate to act as the "head". Slide 2 sliced almonds in between the kiss and the cherry to act as "ears". Continue until all mice are assembled. Place in fridge to firm up.
- 5. When mice are firm, melt white chocolate chips in a microwave safe bowl. You will use this or the eyes and the nose. Either use a toothpick to apply the white chocolate, or pour the melted chocolate into a ziploc bag with a very small corner clipped and pipe onto the mice.
- 6. If you're using black gel icing, place the mice in the fridge to firm up the white chocolate. When the white chocolate is firm, use the black gel icing to make pupils on the white eyes (using a toothpick works well). If you're using black sprinkles, carefully stick one to the wet white chocolate icing, and place in the fridge.
CHOCOLATE CHERRY CHUNK BROWNIES RECIPE

- Prepare brownies mix with the water, vegetable oil and eggs that it calls for on the box. (Every box can vary slightly) Bake as directed on the box. Let cool completely.
- In a medium sized mixing bowl combine butter, powdered sugar, and 3 Tablespoons of juice from the maraschino cherries.
- Beat until smooth and creamy.
- Remove all of the cherries from the jar and chop.
- Fold in the chopped cherries and chocolate chips into the batter.
- Spread over the top of cooled brownies.
- Place in the freezer for about 30 minutes to let the cherry layer set up well.
- Melt chocolate chips and butter together in the microwave at 30 second intervals. Stir, and repeat for 30 more seconds. Continue to do this until chocolate is smooth and melted.
- Spread over cherry-chocolate layer. Spread quickly because it will tend to set up when it hits the cold cherry layer.
- Let set up until hardened (stick in the fridge if you need them set up faster) and then cut and serve.

CHOCOLATE-COVERED CHERRY CAKE

- Place a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly mist a 13- by 9-inch baking pan with vegetable oil spray. Set the pan aside.
- Place the cake mix, cherry pie filling, eggs, and almond extract in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. The batter should look thick and well blended. Pour the batter into the prepared pan, smoothing the top with the rubber spatula. Place the pan in the oven.
- Bake the cake until it springs back when lightly pressed with your finger and just starts to pull away from the sides of the pan, 30 to 35 minutes. Remove the pan from the oven and place it on a wire rack while you prepare the glaze.
- For the glaze, place the sugar, butter, and milk in a small saucepan over medium-low heat and cook, stirring constantly, until the mixture comes to a boil. Boil, stirring constantly, for 1 minute. Remove the pan from the heat and stir in the chocolate chips. When the chips have melted and the glaze is smooth, pour it over the warm cake so it covers the entire surface. The glaze will be thin but will firm up. Cool the cake for 20 minutes before cutting into squares and serving.
- Store this cake, covered in aluminum foil, at room temperature for up to 5 days or in the refrigerator for up to 1 week. Or freeze the cake, wrapped in foil, for up to 6months. Thaw the cake overnight on the counter before serving.
