1/4 cup sugar
1 1/2 cups evaporated milk, fat free
1/4 cup corn syrup, light
8 ounces plain yogurt, fat free
1 banana, mashed

Steps:

  • In medium saucepan over medium heat, stir together cocoa and sugar.
  • Stir in evaporated milk.
  • Stir constantly until sugar is dissolved.
  • Remove from heat and stir in corn syrup.
  • Cool completely.
  • Add yogurt and banana, stir with whisk until blended.
  • Refrigerate several hours until cold.
  • Pour mixture into 1 quart ice cream machine.
  • Use manufacturer's directions to finish it off.

½ cup butter, melted
2 eggs
1 teaspoon vanilla extract
½ cup banana-flavored Greek yogurt
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 medium bananas, mashed
1 cup white chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Stir sugar and melted butter together in a large bowl. Add eggs and vanilla extract; mix well. Mix in banana yogurt.
  • Combine flour, baking soda, and salt in a separate bowl. Stir into the butter mixture until smooth. Fold in bananas, white chocolate chips, and walnuts. Spread evenly into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, about 1 hour. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

1 teaspoon baking soda
¼ teaspoon salt
5 tablespoons hot water
¼ cup cocoa powder
2 large overripe bananas, mashed
½ cup Greek yogurt
½ cup butter, melted
½ cup brown sugar
2 eggs, beaten
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Whisk flour, baking soda, and salt together in a bowl.
  • Whisk hot water and cocoa powder in a large bowl until smooth.
  • Combine mashed bananas, Greek yogurt, butter, brown sugar, eggs, and vanilla extract in another large bowl; mix well. Fold in flour mixture until thoroughly combined.
  • Mix half of the banana mixture into the cocoa mixture until well combined.
  • Spoon banana mixture and cocoa mixture into the prepared pan, alternating between the two.

I also added half a banana for decoration on the cake. Can't wait to bake it again! I adapted a bit this recipe from a R. Reisman recipe.

1/3 cup granulated sugar
1 egg
1 large ripe banana, mashed
1 teaspoon vanilla
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 cup low-fat yogurt
3 tablespoons margarine or 3 tablespoons butter
3/4 cup brown sugar
1 egg
3 tablespoons cocoa
1/2 cup flour
1/2 teaspoon baking soda

1/3 cup low-fat yogurt
1 1/2 cups 5% fat ricotta cheese
3/4 cup icing sugar

Steps:

  • Preheat oven to 350° F (180° C and spray 2 8-inch round cake pans with vegetable spray.
  • Banana Cake: Combine margarine and sugar in large bowl or food processor; mix until smooth. Add egg, banana and vanilla; mix until well-combined. In small bowl, stir together flour and baking soda; add flour mixture to banana mixture alternately with yogurt and mix just until combined. Pour into prepared pan and bake for 15 to 20 minutes or until cake tester inserted in the center comes out clean.
  • Chocolate Fudge Cake: Combine margarine, sugar and egg in large bowl; mix until well combined (mixture may look curdled). In small bowl, stir together cocoa, flour, baking soda and baking powder; add to the batter alternately with the yogurt. Mix just until combined. Pour into prepared pan and bake for 15 to 20 minutes or until cake tester inserted in the center comes out clean.
  • Frosting: Put ricotta cheese, icing sugar and cocoa in food processor; process until smooth, or beat with electric mixer.
  • Assembly: Put banana cake on serving plate; top with one-quarter of the frosting. Place banana slices over top. Put chocolate cake on top and use remaining frosting to frost sides and top.

1-3/4 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup canola oil
1/2 cup plain yogurt
1 teaspoon vanilla extract
1 cup mashed ripe bananas (2 to 3 medium)
3/4 cup semisweet chocolate chips

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, whisk the egg, oil, yogurt and vanilla. Stir into dry ingredients just until moistened. Fold in bananas and chocolate chips. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 22-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.

  • In large bowl combine well-mashed banana with maple syrup and granulated sugar, if using. Whisk in yogurt, then add eggs and vanilla, whisking until smooth. Slowly add in half of the flour, gently stir a few times then add milk, remaining flour and fold in chocolate chips. Careful not to over-mix or you’ll end up with tough muffins.
  • Evenly distribute batter into prepared pan, filling about 2/3 way full. Top with more chocolate chips if you want some to show in the muffin tops. Bake muffins at 425ºF for 5 minutes. Then drop oven temp down to 350ºF and continue baking for 10-15 minutes. Check muffins at 10 minutes with inserted toothpick. Muffins are done when no wet batter is present on the toothpick.
