HOT COCOA MIX
My homemade hot cocoa mix packs a warming punch with a pinch of cayenne and plenty of chocolate flavor from Dutch process cocoa.Instant cocoa is a fine concept, but most commercial mixes aren't exactly packed with quality ingredients or flavor. My signature instant cocoa blend will fortify you through winter's worst. My homemade marshmallows go pretty good with this mix too. Just sayin'. This recipe first appeared in Season 5 of Good Eats.

- In a large airtight container, combine the powdered sugar, cocoa, powdered milk, salt, cornstarch, and cayenne. Place the lid on the container and shake vigorously to combine. Sealed in an airtight container, this mix keeps indefinitely in the pantry.
- To serve: Place two tablespoons of the mix in a mug and add about 2 fluid ounces hot water or milk. Stir to combine. Fill the rest of the mug with hot water or milk and enjoy.

- In a large bowl combine all ingredients. Mix well.
- Pour 1/3 of the mixture into a blender with a lid and blend well. Pour into a quart jar with lid.
- Blend remaining 2/3 powder in batches until all blended.
- Blending is not required but if you do not blend, you'll get clumps. Blending it ensures an even mixture and no clumps.
- When ready to enjoy, add 1/3 cup of hot cocoa powder to 8 ounces of boiling water.
- The cooler the hot cocoa gets, the thicker your hot chocolate will be!
SIMPLE HOT COCOA FOR ONE
As with hot chocolate, use any milky liquid you prefer, whether it's from a cow, nuts (almond milk), beans (soy milk), or grains (rice milk). For sweeteners, feel free to substitute maple syrup, honey, or agave nectar for sugar, but start with less, about 1 tablespoon, and taste the combination before adding more.
