I love my cola too much to give it up. Here is a recipe for homemade cola syrup so at least I can ditch those high sugar chemical sodas for good.

4 cups filtered water
juice and zest of 1 lemon
juice and zest of 1 lime
juice and zest of 2 oranges
3 cinnamon sticks
2 tbsp. dried orange peel
2 tsp. whole coriander seeds
1/2 tsp. ground or finely grated nutmeg
1/2 cup green coffee bean powder, (optional for caffeine)
4 cups sugar, coconut palm or raw cane sugar work best
1/4 cup browning sauce
1 tsp. pure vanilla extract
seltzer water, for mixing

Steps:

  • Stir the water, lemon zest, lime zest, orange zest, cinnamon sticks, dried orange peel, whole coriander seed, nutmeg, and green bean coffee powder (if using) in a large saucepan over medium heat.
  • Stir in the sugar and bring to a boil.
  • Continue stirring until the sugar dissolves. (The spices will not dissolve)
  • Remove syrup from the heat.
  • Add the lemon juice, lime juice, orange juice, browning sauce, and pure vanilla extract to the saucepan mixture and stir.
  • Let mixture cool, then use a fine mesh strainer and strain syrup into a mason jar or other sealable bottle for storage.
  • To make one cola drink: Combine 1/2 cup of the cola syrup with 1 1/2 to 2 cups of seltzer water (pour slow as the mix will fizz, just as regular soda).
  • Add ice, if desired, and serve.

½ pound crumbled coca leaves (whole leaf coca tea)
1 ½ cups 190 proof grain alcohol (such as Everclear®)
10 drops orange oil
15 drops lemon oil
5 drops nutmeg oil
2 ½ drops coriander oil
5 drops neroli oil
5 drops cinnamon oil
½ cup 190 proof grain alcohol (such as Everclear®)
1 ¼ gallons water
15 pounds white sugar
¾ fluid ounce caramel color
½ fluid ounce vanilla extract
½ fluid ounce caffeine
2 cups lime juice
1 ½ ounces citric acid powder
12 ½ gallons carbonated water

Steps:

  • To make the coca extract, moisten coca leaf powder with 3 ounces of grain alcohol. Then pack the wet leaves into a percolator and add more diluted alcohol until the leaves are fully saturated and slightly covered by alcohol. When the extract begins to drip from the percolator, stop up the hole, cover the percolator tightly and allow to macerate for 2 days. Then continue the percolation, adding more alcohol until you have 8 ounces of extract.
  • To make the flavoring, combine drops of orange oil, lemon oil, nutmeg oil, coriander oil, neroli oil, and cinnamon oil with 1/2 cup of grain alcohol.
  • To make the syrup, mix together water, sugar, caramel, and 1/8 ounce (or 3/4 tablespoon) of coca extract. Stir in vanilla extract, caffeine, lime juice, and citric acid. Combine 1/4 ounce flavoring with the entire amount of syrup.
  • To prepare Kook-a-Cola, combine 1 part flavored syrup to 5 parts carbonated water.

3 cups jiffy pancake mix (maybe a bit more if too wet)
1 (12 ounce) can Coke (any soda or beer will do)

Steps:

  • Mix soda with pancake mix just till wet. Do not over mix. Dough will be very lumpy and thick.
  • Grease a bundt pan add mix bake at 4OO degrees for 45-60 minute.
  • Let cool at least a little bit to make it easier to cut.

Grated zest of 2 medium oranges
Grated zest of 1 large lime
Grated zest of 1 large lemon
1/8 teaspoon ground cinnamon
1/8 teaspoon nutmeg, preferably freshly grated
1 section of a star anise pod, crushed
1/2 teaspoon dried lavender flowers
2 teaspoons minced ginger
1 one-and-a-half-inch piece vanilla bean, split
1/4 teaspoon citric acid (available at health food stores, or canning supply stores or kingarthurflour.com)
2 cups plus 2 tablespoons sugar
1 tablespoon (packed) light brown sugar
3/4 teaspoon caramel color powder, optional available at kingarthurflourcom

Steps:

  • In a heavy pot over medium heat, bring 2 cups water to a simmer with the zests, cinnamon, nutmeg, star anise, lavender, ginger, vanilla and citric acid. Reduce the heat to low, cover and simmer gently for 20 minutes.
  • In a food processor, whirl the sugars together for one minute (this will help them dissolve), then transfer to a large bowl. If using caramel color, sprinkle it over the sugar.
  • Line a sieve or colander with a double thickness of cheesecloth and place over the bowl. Pour the contents of the pot through the sieve. Carefully gather up the corners of the cheesecloth and twist the top to close. Use a spoon to press the bundle against the sieve, squeezing out all the flavorful liquid.
  • Stir the syrup and let cool, stirring occasionally until the sugar dissolves, about 15 minutes. Transfer to containers and keep refrigerated. To make a soda, pour 1/4 cup syrup over ice and add 1 cup seltzer. Stir.
