SOUTHERN COUNTRY CORNBREAD

Southern Country Cornbread image

Watching my grandpa make cornbread over the years I am now soo sad I never asked him for the recipe, that and his biscuits are now lost forever, I am trying to recreate them and this is the closest I've come to the cornbread. Though it is nowhere near what he made. It is a tweaking of several recipes and of what I remember, and do not add sugar!! I will cry if anyone does!!

Categories     Breads

Time 35m

Yield 1 pan, 5-8 serving(s)

Number Of Ingredients 8

3 tablespoons shortening (I use crisco butter flavor, or bacon drippings are awesome, too!)
1 cup cornmeal
1/2 cup flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 1/2 cups buttermilk

Steps:

  • Preheat the oven to 425°.
  • Put the shortening in a cast-iron skillet and place in the oven till melted.
  • Combine the cornmeal and flour. In seperate bowl whisk eggs until foamy then whisk in buttermilk. Add the rest of the dry ingredients to the cornmeal mixture.
  • Combine wet and dry ingredients. Mix should be pourable. Take the hot skillet from the oven, pour the batter into the hot pan directly onto the melted hot shortening, this is what makes it sooo yummy!.
  • Place back in the oven and bake for 20 to 25 minutes, until golden brown or when knife inserted in center comes out clean.

CAST-IRON OYSTER AND CORNBREAD STUFFING

Cast-Iron Oyster and Cornbread Stuffing image

Growing up in the mid-Atlantic region, my family has always included oysters as a big part of our dining table. This recipe is the perfect way to incorporate these typically uncooked gems into the traditional Thanksgiving spread and pay homage to the early Black oyster farmers of America. The briny and buttery flavor combined with the sweet cornbread is sure to be the talk of the table!

Provided by Food Network

Time 1h55m

Yield 8 to 10 servings

Number Of Ingredients 15

12 tablespoons (1 1/2 sticks) unsalted butter
3/4 cup small-diced tasso ham (see Cook's Note)
5 cups 3/4-inch-cubed cornbread, dried overnight (see Cook's Note)
5 cloves garlic, finely minced
3 stalks celery, small diced
1 small leek, white and light green parts only, small diced
1 small yellow onion, small diced
1/4 cup chopped fresh sage
1/4 cup chopped fresh thyme
1/2 cup dry white wine
24 fresh oysters, shucked and halved, plus 1/2 cup oyster liquor (see Cook's Note)
1/2 cup unsalted chicken stock
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh parsley
3 large eggs, lightly beaten

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt 10 tablespoons of the butter in a 10-inch cast-iron skillet over medium heat. Add the ham and cook, infusing the butter with the ham flavor, about 5 minutes. Remove the ham to a large mixing bowl with the cornbread, leaving the butter in the skillet.
  • Add the garlic, celery, leeks, onions, sage and thyme to the skillet with the flavored butter. Sweat the vegetable mixture over medium heat, stirring as needed, until the vegetables are softened, 5 to 8 minutes. Add the wine and continue to cook over medium heat until the wine is reduced by half, 3 to 5 minutes. Increase the heat to medium-high, then add the oyster liquor and chicken stock. Bring to a boil, then remove from the heat and let cool at room temperature for 10 to 15 minutes.
  • Add the oysters to the mixing bowl with the cornbread and ham. Pour the cooled vegetables into the mixing bowl and lightly mix together. Season with salt and pepper, then fold in the parsley and eggs (see Cook's Note).
  • Grease the inside of the same skillet with the remaining 2 tablespoons butter. Transfer the cornbread mixture to the skillet, making sure it's evenly distributed throughout the skillet. Cover with aluminum foil and bake for 35 minutes. Remove the foil and bake until the top is nice and browned, 10 to 15 minutes. Allow to cool before serving, about 10 minutes.

REAL SOUTHERN HERBED CORNBREAD STUFFING

Real Southern Herbed Cornbread Stuffing image

NO bread, NO oysters, NO sausage, NO Eggs, NO Giblets. Simply the best cornbread stuffing you will ever put in your mouth. This is one of those 'secret' recipes handed down from my grandmother's grandmother. It has never been written down until now, but was taught in the kitchen to each generation during the holidays while helping grandma prepare the stuffing and listening to the stories of when they were little girls in the kitchen helping their grandmas.

Time 1h20m

Yield 12

Number Of Ingredients 12

12 cups crumbled cornbread
1 cup butter
1 cup finely chopped onion
1 cup finely chopped apple
1 cup finely chopped celery
2 tablespoons chopped fresh sage
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
1 tablespoon chopped fresh marjoram
1 tablespoon salt
4 cups turkey broth, or as needed

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place crumbled cornbread into a large bowl.
  • Melt butter in a skillet over medium heat and saute onion, apple, and celery until onion is soft and translucent, about 5 minutes. Add to crumbled cornbread. Season with sage, parsley, rosemary, thyme, marjoram, and salt. Add turkey broth 1 cup at a time and stir after each addition until stuffing is moist. Adjust turkey broth amount to your liking, less if you like the stuffing a little drier or more of you like it more moist. Place stuffing in a large baking pan.
  • Bake in the preheated oven for 45 minutes, turning stuffing over every 20 minutes by scraping the bottom of the pan.
