DAD'S FAMOUS STUFFIES

The third of July is almost as important as July Fourth in my family. We make these stuffed clams on the third every year, and it's an event in and of itself! -Karen Barros, Bristol, Rhode Island

20 fresh large quahog clams (about 10 pounds)
1 pound hot chourico or linguica (smoked Portuguese sausage) or fully cooked Spanish chorizo
1 large onion, chopped (about 2 cups)
3 teaspoons seafood seasoning
1 package (14 ounces) herb stuffing cubes
1 cup water
Optional: Lemon wedges and hot pepper sauce

Steps:

  • Add 2 in. water to a stockpot. Add clams and chourico; bring to a boil. Cover and steam 15-20 minutes or until clams open., Remove clams and sausage from pot, reserving 2 cups cooking liquid; cool slightly. Discard any unopened clams., Preheat oven to 350°. Remove clam meat from shells. Separate shells; reserve 30 half-shells for stuffing. Place clam meat in a food processor; process until finely chopped. Transfer to a large bowl., Remove casings from sausage; cut sausage into 1-1/2-in. pieces. Place in a food processor; process until finely chopped. Add sausage, onion and seafood seasoning to chopped clams. Stir in stuffing cubes. Add reserved cooking liquid and enough water to reach desired moistness, about 1 cup., Spoon clam mixture into reserved shells. Place in 15x10x1-in. baking pans. Bake until heated through, 15-20 minutes. Preheat broiler., Broil clams 4-6 in. from heat 4-5 minutes or until golden brown. If desired, serve with lemon wedges and pepper sauce. Freeze option: Cover and freeze unbaked stuffed clams in a 15x10x1-in. baking pan until firm. Transfer to freezer containers; return to freezer. To use, place 3 stuffed clams on a microwave-safe plate. Cover with a paper towel; microwave on high until heated through, 3-4 minutes. Serve as directed.

2 cups sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1 cup angel flake coconut
2 cups quick-cooking rolled oats (not instant)

Steps:

  • Grease cookie tins.
  • Preheat oven to 375°F (190°C).
  • Beat butter, eggs, sugar and vanilla together until they are light and fluffy.
  • Sift flour with baking powder, soda and salt and stir them into the first mixture. Blend well.
  • Stir in coconut and rolled oats.
  • Drop by heaping teaspoonfuls onto cookie sheets and bake for 10 minutes.
  • Cool on wire racks and store in tightly covered cookie tins.

1 ½ cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon salt
1 cup white sugar
1 cup brown sugar
1 ½ cups rolled oats
½ cup flaked coconut
¾ cup vegetable oil
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, stir together the flour, baking soda, salt, white sugar, brown sugar, oats and coconut. Make a well in the center and pour in the oil, eggs and vanilla. Mix well using your hands or a wooden spoon. Roll the dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets. Flatten slightly with a fork.
  • Bake for 10 to 12 minutes in the preheated oven, cookies should be a very light brown and chewy - not crisp. Cool for a couple of minutes on the baking sheets before removing to wire racks to cool completely.

½ cup crunchy peanut butter
½ cup white sugar
½ cup packed brown sugar
1 egg
1 ¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt

Steps:

  • Cream together the shortening, peanut butter and sugars. Beat in egg. Combine the flour, baking soda, baking powder and salt; gradually stir into the peanut butter mixture. Cover and refrigerate dough for at least one hour.
  • Preheat oven to 375 degrees F (190 degrees C). Make small balls of dough. Flatten with fork dipped in flour to form cross-wise pattern.
  • Bake for 10-12 minutes in the preheated oven, or until just set. Remove from baking sheets to cool on wire racks.

Dads Stuffed Peppers Recipe - (3.6/5) image

4 bell peppers, any color
Salt
5 Tbsp extra-virgin olive oil
1 medium yellow onion, peeled and chopped
1 clove of garlic, peeled and chopped
1 lb of lean ground beef
1 1/2 cup of cooked rice
1 cup chopped tomatoes, fresh or canned (if using can, drain of excess liquid first)
1 tbsp chopped fresh oregano or 1 teaspoon of dried oregano
Fresh ground pepper
1/2 cup ketchup
1/2 tsp of Worcestershire Sauce
Dash of Tabasco sauce

Steps:

  • Bring a large pot of water to a boil over high heat. Meanwhile, cut top off peppers 1 inch from the stem end, and remove seeds. Add several generous pinches of salt to boiling water, then add peppers and boil, using a spoon to keep peppers completely submerged, until brilliant green (or red if red peppers) and their flesh slightly softened, about 3 minutes. Drain, set aside to cool. Preheat oven to 350 degrees F. Heat 4 tbsp of the oil in a large skillet over medium heat. Add onions and cook, stirring often, until soft and translucent, about 5 minutes. Add the garlic and cook a minute more. Remove skillet from heat, add meat, rice, tomatoes, and oregano, and season generously with salt and pepper. Mix well. (You may find it easier to put the ingredients at this point into a large bowl and mix together with your hands.) Drizzle remaining 1 tablespoon of olive oil inside the peppers. Arrange the cut side of the peppers up in a baking dish, then stuff peppers with filling. Combine ketchup, Worcestershire sauce, Tabasco sauce, and 1/4 cup of water in a small bowl, then spoon over filling. Add 1/4 cup of water to the baking dish. Place in oven and bake for 40-50 minutes (or longer, depending on how big the peppers are that you are stuffing), until the internal temperature of the stuffed peppers is 150-160°F. Serves 4-6.

This is a recipe I got from my friend Mabel many years ago. They are a delicious and easy cookie to make. You can freeze the logs and take them out when you want to bake them. Chill time is not reflected in the preparation time so plan ahead.

  • Cream together butter and sugars.

DAD'S MELT-IN-YOUR-MOUTH COOKIES

1/2 pound salted butter
1 teaspoon real vanilla extract
1 tablespoon brewed espresso coffee
3 heaping tablespoons confectioners' sugar, sifted
2 cups all-purpose flour, sifted
1/2 teaspoon sea salt
1/2 cup toasted pine nuts, coarsely chopped
1 pound confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In the bowl of a large mixer cream the butter until fluffy, then add vanilla and the espresso.
  • In a large bowl sift the confectioners' sugar then add to it the butter mixture in the mixer and mix well.
  • In the same bowl used to sift the sugar, add flour and salt and sift. Add them to the mixer that contains the cream, butter mixture. Turn the mixture out on a floured board and sprinkle the pine nuts on the mixture and mix nuts in well with your hands (if dough gets too sticky add a bit more flour to the board and to your hands). When nuts are mixed in, place mixture in a large glass bowl and put in refrigerator for 1/2 hour to make it easier to roll. Take bowl out of the refrigerator and with your hands pick up walnut sized balls of dough, roll them in your hands and place them in an ungreased cookie sheet.
  • Bake for 20 minutes or until cookies turn a light golden brown. When all of the cookies have been baked place them on a cooling rack overnight. If you are pressed for time 5 hours will do.
  • In a large resealable plastic bag place the pound of confectioners' sugar (this is a bit of overkill but I wanted to have enough powdered sugar for the cookies). Add 6 to 12 cookies at a time and gently toss them in the powdered sugar and then place them on a cooling rack trying not to disturb the sugar coating. Continue until all cookies are coated. Let cookies rest so that the coating really adheres. Now - when you eat one - you will want another and another and another!
  • My Dad used to also coat these cookies with raw sugar (that he had family ship from Italy), and I have made them that way also. However, people seem to like the powdered sugar more.

3 squares chocolate ( 2 semi sweet and 1 unsweetened)

  • Mix crushed cookies and butter together. Line pan with parchment paper. Press 2/3 of the mixture into pan. Bake for 10 min in a 350 oven. Put chocolate and butter in a double boiler to melt. Add icing sugra, eggs , vanilla. Beat until fluffy. Add walnuts. Put on top of hot crumbs and sprinkle rest of crumbs on top. Press down gently. Place in fridge to cool.

1 large egg

  • Whisk together flour, baking powder, and salt. Stir in seeds.
  • Beat butter and sugar with a mixer on medium speed until pale and fluffy, about 6 minutes. Beat in egg and vanilla. Reduce speed to low; gradually beat in flour mixture. Divide dough in half. Shape each half into a disk; wrap in plastic. Refrigerate until firm, at least 1 hour or overnight.
  • Preheat oven to 325 degrees. Roll out dough 1 disk at a time to just under a 1/4-inch thickness on a lightly floured surface. Using templates, cut out letters with a paring knife.
