½ cup milk

  • Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
  • Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

1 cup water (110 degrees F)
2 packages yeast (Do not use the quick rising in this recipe)
1/2 cup butter, melted
1/2 cup sugar
3 eggs
1 teaspoon salt
4 1/4 cups flour

Steps:

  • Combine water and yeast in lg bowl; let stand for 5 minutes.
  • With wooden spoon, stir in butter, sugar, eggs and salt.
  • Add flour, 1 cup at a time and beat in as much as you can.
  • (you will probably be able to use all the flour) Cover and refrigerate for at least 2 hours, or up to 3 days.
  • Grease a 13x9 baking pan.
  • Turn dough out onto floured surface.

1 (1/4-oz.) packet active dry yeast
1/4 cup warm water (110°F)
2 Tablespoons sugar
2 cups all-purpose flour, plus more as needed
1/2 teaspoon salt
1/2 cup whole milk
2 Tablespoons unsalted butter, melted, plus more for brushing
Large-flake sea salt (optional)

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, combine the warm water, yeast and sugar. Let the mixture stand for 5 minutes.
  • Add 1 cup of the flour, as well as the salt, whole milk and melted butter and beat for 2 minutes.
  • Add an additional 1 cup of flour and beat on high speed for 2 minutes until the dough begins to form a ball. (If the dough is still very sticky, add an additional 1/4 cup flour as needed.)
  • Lightly flour your work surface. Scrape the dough onto your work surface, and using the heel of your hand, knead it for 2 minutes then place the dough in a greased bowl and cover the bowl with a towel. Set the bowl in a dark, warm place for 30 minutes until it has doubled in size.
  • Grease an 8-inch round pan with cooking spray or butter.
  • Divide the dough into 12 pieces then roll each piece into a ball and arrange the balls in the prepared pan. Cover the pan with a towel then return it to a dark, warm place for 30 minutes.
  • Preheat the oven to 375°F. Uncover the rolls then bake them for 20 to 25 minutes until they are golden brown and cooked through.
  • Remove the rolls from the oven, brush them with additional melted butter and immediately sprinkle them with the sea salt (optional). Serve them warm.
  • If you want to prepare the rolls in advance, follow the directions up until you place the (unbaked) rolls in the baking pan then tightly cover the pan with plastic wrap. When ready to serve, remove the rolls from the freezer and place them in the fridge overnight then bring them to room temp to rise before baking them as directed.

  • Mix together 1-1/4 cups flour and yeast in an electric mixing bowl.
  • In a small saucepan, add milk and sugar. Heat on medium low heat, stirring constantly until sugar is dissolved and the milk begins to steam. Remove from heat and add butter. Mix well until completely melted. Add egg and milk mixture to mixing bowl and beat on low for 30 seconds. Scrape down sides if necessary. Increase speed to high and beat for 3 minutes.

1/4 cup (50g) granulated sugar
1 large egg, (room temperature)
1 teaspoon salt
1 1/2 cups (367g) whole milk
2 tablespoons salted butter, (melted)
1 teaspoon kosher salt, (optional)

Steps:

  • Combine 3 cups flour, undissolved yeast, sugar, egg, and salt in a large bowl or in the bowl of your stand mixer fitted with dough hook.
  • Heat milk until very warm (110°F to 120°F).
  • Add warm milk to flour mixture. Knead 2 minutes at medium speed, scraping bowl occasionally if needed. Add 1/2 cup flour; knead 2 more minutes.
  • Add remaining 1/2 cup flour. The dough should be pulling away from the sides of the bowl and very soft. (If the dough seems too wet you may need more flour. Add in 1/4 cup increments until the dough has pulled away from the sides of the bowl while kneading.)
  • Cover with a clean towel and let REST 30 MINUTES.
  • Remove towel and punch down dough.
  • Divide dough into equal pieces and shape into balls. Place in greased 9x13 inch pan. Cover with plastic wrap and REST in a warm place - over 70°, preferably 75° - until doubled in size, about 30 minutes. (I had 6 left over and added them to a greased 7-inch pie dish and baked as directed.)
  • Bake in preheated 375°F oven for 12-17 minutes or until golden brown.
  • Brush with melted butter while warm.

  • Pinch off pieces of the dough and form 24 rolls. You can weigh them to keep the rolls close to the same size. Mine were about 2 ounces each but this will vary depending on how much flour you added.
  • Transfer the rolls to a lightly greased quarter baking sheet or 9 x 13 baking dish. Cover with a towel or plastic wrap and let rise for an additional 30 minutes at room temperature.
  • Preheat oven to 375 degrees. Bake the rolls for 12 to 15 minutes or until golden brown and cooked through. If the rolls are getting too brown, just tent the rolls with foil.
  • Remove rolls and brush hot rolls with the melted butter. Serve immediately or store cooled rolls in a plastic bag for up to 3 days.

  • In a liquid measuring cup or small bowl, combine the warm milk, warm water, melted butter, and sugar.

  • In a large bowl, combine the flour and salt, and stir to combine. Beat 1 egg, then add to the bloomed yeast mixture. Pour the wet ingredients into the flour and use a knife to stir until the mixture just comes together and forms a dough. Turn the dough out onto a lightly floured surface and knead for 5-10 minutes, or until the dough becomes smooth. Add more flour as needed to keep the dough from sticking. 1/2 cup warm water, ((110-115˚F))
1 cup milk
1/4 cup butter, (melted)

4 cups bread flour, ((or all purpose four), plus about 1/4 cup extra for dusting your work surface)
2 tablespoons melted butter, (for brushing baked rolls)

Steps:

  • Heat oven to 200°F | 100°C (if using your oven to proof the dough).
  • Mix the yeast, 1 tablespoon of sugar and warm water in a large bowl. Let sit for 7-10 minutes until foamy and frothed.
  • While yeast is activating, combine the milk and butter in a 2-cup capacity microwave safe jug. Microwave on high for about 40-50 seconds, or until butter has half melted and milk is luke warm. Stir in remaining sugar and salt. Give it a light mix until the butter completely melts through the milk, and the sugar dissolves. Add to the yeast in the bowl.
  • Add in 2 cups of flour, giving it a light mix to combine with a wooden spoon, then add in the remaining 2 cups of flour. Mix until starting to pull away from the walls of the bowl (about 1-2 minutes). Turn out on a lightly floured work surface and use the extra 1/4 cup of flour in tablespoon increments to knead until smooth, elastic and slightly sticky (about 4-5 minutes kneading). (Lightly oil your hands if the dough gets too sticky.)
  • Transfer dough back into the bowl. Cover with a warm damp towel. TURN OVEN OFF and transfer bowl of dough to the warm oven, leaving the door ajar for the first 10-15 minutes or so. After 15 minutes, close oven door and allow the dough to double in size (another 45 minutes).
  • Scrape dough onto a lightly floured work surface or kitchen bench, knead lightly for about 30-40 seconds if needed to bring the dough together, and mould into a loaf shape. Cut in half, then cut both halves into 6 equal pieces (you should now have 12 equal pieces all together).
  • Working one by one, lightly flatten each piece of dough in the palm of your hands, then bring up all sides to form a peak on top (like a tent shape), and pinch and seal this peak. Flip it over and you should have a smooth top! Ensure there are no cracks. If there are, turn the roll upside down again and smooth the cracks out towards the peak you just made, pinching the seal again, and flip over to double check the top is smooth. (Use a light dusting of flour in your hands to prevent sticking if you need to.)
  • Arrange rolls, smooth side up into a lightly greased 9x13-inch baking pan or dish (you can line your pan or dish with parchment paper if you wish).Preheat oven to 375˚F | 190˚C (or 350°F | 180°C for fan forced ovens).
  • Lightly spray rolls with cooking oil spray, cover with plastic wrap and let rise again until just about doubled in size, (about 30 minutes).
  • Bake in a preheated oven for 20-25 minutes, or until rolls are golden browned. (Check them after 18 minutes to make sure they are ok.)

2 and 1/4 teaspoons Platinum Yeast from Red Star instant yeast (1 standard packet)
2 Tablespoons granulated sugar, divided

1/4 cup (60g) unsalted butter, softened to room temperature and cut into 4 pieces
1 teaspoon salt
3 cups (390g) all-purpose flour or bread flour*
optional topping: 2 Tablespoons melted unsalted butter mixed with 1 Tablespoon honey

Steps:

  • Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer. Cover and allow to sit for 5 minutes. *If you do not own a stand mixer, you can do this in a large mixing bowl and in the next step, mix the dough together with a large wooden spoon/rubber spatula. It will take a bit of arm muscle. A hand mixer works, but the sticky dough repeatedly gets stuck in the beaters. Mixing by hand with a wooden spoon or rubber spatula is a better choice.*
  • Add the remaining sugar, egg, butter, salt, and 1 cup flour. With a dough hook or paddle attachment, mix/beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If the dough seems too wet to a point where kneading (next step) would be impossible, beat in more flour 1 Tablespoon at a time until you have a workable dough, similar to the photos and video above. Dough should be soft and a little sticky, but still manageable to knead with lightly floured hands.
  • Keep the dough in the mixer and beat for an additional 3 full minutes or knead by hand on a lightly floured surface for 3 full minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
  • Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size. (I always let it rise on the counter. Takes about 2 hours. For a tiny reduction in rise time, see my answer to Where Should Dough Rise? in my Baking with Yeast Guide.)
  • Grease a 9×13 inch baking pan or two 9-inch square or round baking pans. You can also bake the rolls in a cast iron skillet or on a lined baking sheet.*
  • When the dough is ready, punch it down to release the air. Divide the dough into 14-16 equal pieces. (Just eyeball it- doesn't need to be perfect!) Shape each piece into a smooth ball. I do this entirely in my hands and you can watch in the video tutorial above. Arrange in prepared baking pan.
  • Cover shaped rolls with aluminum foil, plastic wrap, or a clean kitchen towel. Allow to rise until puffy, about 1 hour.
  • Adjust oven rack to a lower position and preheat oven to 350°F (177°C). (It's best to bake the rolls towards the bottom of the oven so the tops don't burn.)
  • Bake for 20-25 minutes or until golden brown on top, rotating the pan halfway through. If you notice the tops browning too quickly, loosely tent the pan with aluminum foil. Remove from the oven, brush with optional honey butter topping, and allow rolls to cool for a few minutes before serving.
  • Cover leftover rolls tightly and store at room temperature for 2-3 days or in the refrigerator for up to 1 week.

1 cup warm tap water
⅓ cup oil
¼ cup sugar
2 tablespoons yeast
1 egg (beaten)
1 tablespoon softened butter
½ teaspoon salt
3 to 4 cups all-purpose flour (I used closer to 3)
⅛ cup milk (room temperature)

Steps:

  • Preheat oven to 400*F.
  • In a large bowl, combine 1 cup water, oil, sugar, and yeast. Let sit until yeast is bubbly (about 8 minutes). Stir in beaten egg, softened butter, and salt.
  • With a stand mixer or by hand, add flour, one cup at a time until you have a soft dough that isn't sticky. Knead by hand 10 minutes or 5 minutes with a stand mixer.
  • Divide dough into 18 even pieces, and form into balls. Place in a greased pan and cover with parchment paper and a kitchen towel.
  • Let rise 10 minutes in a warm place. (You can allow them to rise up to an additional 30 minutes if time allows).
  • Lightly brush with milk and bake on the middle rack for 10-12 minutes or just until browned.

1 cup plus 2 tablespoons warm water
1 packet active dry yeast (rapid rise)
1/4 cup sugar
1/3 cup Vegetable oil
1 egg (room temperature)
1/2 teaspoon salt
3 1/2 cups flour
2 tablespoons butter (melted, plus a cold stick for greasing the pan)

Steps:

  • In a large mixing bowl or a stand mixer fitted with the bread hook, combine sugar and yeast, giving a quick stir to combine. Add warm water and allow to bloom for 10-15 minutes. The mixture should be frothy and fragrant.
  • Preheat oven to 400 degrees and grease a 9x13 baking dish with a cold stick of butter.
  • Add oil, egg and salt, stir to combine. Add flour, 1/2 cup at a time, mixing between each addition.
  • Knead until bread comes together and slaps against the side of the bowl.
  • Turn dough onto a lightly floured cutting board or work surface. Divide into 12 equally sized balls and place into baking dish. Cover and allow to rise for 10 minutes.
  • Bake for 12-15 minutes, or until tops are lightly browned. When you remove rolls from oven, baste the tops with melted butter. Serve warm.

These homemade dinner rolls are an easy, delicious addition to almost any meal! If you have leftovers, freeze them in an airtight container or bag for up to 2 months. They thaw perfectly!

1 cup almond milk (or any milk) (warmed)
1 pkg. (¼-ounce) active dry yeast (2¼ teaspoons)
2½ tablespoons cane sugar
3 cups bread flour, spooned and leveled (390g)
1 teaspoon sea salt
⅓ cup extra-virgin-olive oil (more for brushing)

Steps:

  • In a small bowl, combine the almond milk, yeast, and 1 tablespoon of the sugar and proof for 5 minutes or until foamy.
  • In the bowl of a mixer fitted with a dough hook attachment, place the flour, salt, the remaining sugar, olive oil, and the yeast mixture. Mix on medium-low speed for 2-3 minutes until the dough is well-formed around the hook and pulling away from the sides.
  • Transfer the dough to a floured work surface and knead a few times to form into a ball. The dough should be sticky, but if it's too sticky to work with, add a little more flour. Brush a large bowl with ½ teaspoon olive oil and place the dough inside. Cover with plastic wrap and set aside in a warm spot for 60 to 90 minutes, or until the dough is doubled in size.
  • Brush a large baking sheet with olive oil and set aside. Turn the dough out onto a clean work surface and lightly flour your hands. Divide the dough into 15 equal pieces. Form each piece into a ball by rolling on the countertop with a cupped hand. Place each piece onto the baking sheet. Dust the tops with a very slight amount of flour to keep the plastic wrap from sticking to the dough. Cover with plastic wrap and set aside for 1 hour, or until puffy.
  • Preheat the oven to 350°F and move the oven rack to a low position.
  • Bake the rolls for 20 to 25 minutes, or until lightly golden brown, rotating the pan halfway. Let the rolls cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
