- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Mix butter, olive oil, minced garlic, garlic powder, parsley, and salt in a bowl until well combined.
- Cut bread loaf into 1-inch slices and spread garlic mixture over each slice. Place each on a baking sheet. Wrap with additional aluminum foil.
- Bake in the preheated oven until bread is crispy and heated through, 25 to 30 minutes.

PERFECT GARLIC BREAD FROM SCRATCH
you can do this with pre-made french bread if you're short on time but i really think it's worth it to do this from start to finish on a lazy afternoon. goes beautifully with pasta or a nice light cream soup. i use my own homemade butter for this (possibly because i'm crazy). if you want to do that it's really easy: just take whipping cream at room temp, whip it way past the point of whipping cream and you'll see the fat separate from the milk. squeeze the newborn butter to the side of the bowl and pour off the milk (keep that, it's perfectly good), rinse the butter under cold water three or four times, breaking it up to wash out the extra milk, then mix in a little salt. you can easily double or triple this but it may or may not freeze well. the dough and butter would probably freeze better separately.

- mix the yeast and sugar in a measuring cup, that keeps it from getting lumpy, add the cup of warm water and stir together. let sit for 5 minute.
- mix 2 cups flour and salt in a med sized bowl, then dump in yeast mix and stir until a soft dough forms.
- kneed until dough is smooth and elastic, adding more flour if needed. don't add so much flour that it becomes dry, it should still be slightly sticky.
- rinse out the bowl and swirl the oil around in it, put the dough back in and turn it over so it's coated.
- cover the bowl (i like to wrap a tea towel over and under it), and place in a warm (not hot!) oven to rise. i usually turn my oven on to the lowest setting that will turn on the element for 5 min and then turn off.
- once the dough has doubled in size, punch it down and form into a long, thin loaf. place on a cookie sheet that you've oiled and sprinkled with cornmeal. slash diagonally with a sharp knife 3 or 4 times. place it back in your warm oven until it's doubled again.
- turn the oven up to 375f for 20 minutes. my oven runs a little cool so i turn it up to closer to 380 or 390. a little too warm is better then a little to cool in this case. after 20 min it should be nicely golden on top. let it cool until no more then warm.
- in the mean time mix all ingredients of the garlic butter.
- slice vertically into 3/4-1 inch slices, leaving the bottom crust intact. carefully pull slices apart so you can spread the butter on each side of each slice without breaking them apart.
- wrap loosely but completely in foil and bake at 400f for 10-15 minutes. serve immediately.

HOW TO MAKE GARLIC BREAD (GARLIC KNOTS)
Garlic Bread made from scratch, no knead, brushed with a mixture of butter, Garlic, and Parsley. It's incredibly soft, fluffy, and very delicious. It's a great bread that can easily serve as an accompaniment to any meal.

- In a large bowl, proof the yeast by mixing the yeast and 1 tablespoon of sugar in warm milk and leave it for about 5 minutes until it froths. (The temperature of the milk should be between 95° F and 115° F).
- Combine the Flour, remaining Sugar, salt, Eggs, garlic powder, chopped scallions, melted butter, and proofed yeast and mix with a wooden spoon for about 2 to 3 minutes or till everything is well combined. At this point, you will have a wet and sticky dough.
- Cover the dough with a lid or a plastic wrap and leave to rise in a warm place for 1 to 1-1/2 hours or till almost tripled in size.
- Rub the baking pan with some room temperature butter and sprinkle a generous amount of flour over it. Then, tip the pan all around and make sure the flour sticks to all the sides of the pan and dump out the excess. Set it aside.
- After the dough has risen, mix it to remove the trapped air and start shaping your rolls. (Please read notes above on how to make the knots).
- Carefully arrange the Garlic knots inside the Pan and leave it to proof again for another 15 minutes
- Brush the surface of the dough with the Eggwash (1 Egg + 2 Tbsp water whisked together) and bake in a 350°F preheated oven for 20 minutes.
- Once you take the bread out from the oven, while still hot, generously brush the surface of the rolls with the garlic butter.
- Allow the bread to cool for a few minutes before serving - if you can wait :). Enjoy!
- When the rolls are almost done in the oven, combine 2 tablespoons of warm melted butter, the garlic, and the parsley in a small bowl and stir. Please add a pinch of salt if you are using unsalted butter.

ARTISAN SOURDOUGH GARLIC BREAD
I love to buy the garlic bread with the whole cloves of garlic from Costco, however I can't always get there when I want. I fiddled around a little and this one is pretty close, you do have to plan ahead because the sponge takes at least 18 hrs but the bread is well worth the trouble. This bread makes the BEST grilled sandwiches! I also like to butter it and grill it to go with a salad. YUMMY!!!

- The Sponge: Combine the sponge ingredients in a large plastic bowl, cover with plastic wrap and keep in a warm place for 18-20 hours.
- When ready the sponge should have expanded and smell pleasantly sour and bubbling. (at this point you may wish to refrigerate for up to 7 days, just remember to bring back to room temp).
- Bread: Place sponge and all other ingredients except garlic in mixing bowl, mix well and let rest 20-30 minutes.
- Mix again for 5-10 minutes, then cover and allow to rise 2-3 hours.
- Turn out onto lightly greased surface and flatten like you would cinnamon rolls .
- Sprinkle the garlic cloves evenly over the dough and roll up in cinnamon roll fashion pinching the sides in as you make a long oblong shaped loaf.
- Allow the loaf to rise covered with a towel for 2 hours or till almost doubled in size.
- Preheat oven to 475°F.
- Slash the top of the loaf 4 times with a sharp knife.
- Spritz loaf and oven with water.
- Bake in 475°F oven for 3 minutes spraying 2 more times.
- Turn the oven down to 375°F (if it is baking to fast try 350°F).
- Spray often with the water and watch for the bread turning brown too fast. If it does, cover with a foil tent.
- Bake approx 30-40 minutes or till nicely browned and bottom thumps hollow.
- This bread can be a little temperamental, just watch the coloring and adjust temp and cook time as needed.

- For the dough, mix together the flour, yeast, and salt, and make a well in the middle.
- Pour the water and 1 teaspoon of olive oil into the well and mix together.

- PIZZA DOUGH: In a large mixing bowl, preferably that of a stand mixer, stir yeast and honey into warm water. Sit for 5 to 10 minutes or until bubbles form and mixture starts to foam. This tells you that the yeast is alive and kicking. Pour in salt, oil and half the flour and mix. Once that flour is incorporated, start adding flour in bit by bit until you get the pizza dough to the consistency you want: slightly tacky, but when you touch it it doesn't stick to your hands. Once you reach this stage, turn the mixer on high to knead for 6 minutes. Turn a timer on and walk away! Resist the temptation to stop earlier than 6 minutes! That seems to be the magical number.
