A great Iranian breakfast and a good way to get the kids to eat dairy. My daughter loves honey (that's what she would like to eat every morning) so it's a good way for her to have it other than just with butter and bread.

HONEY AND CREAM - IRANIAN BREAKFAST
In early 2008 we spent a few days in the northwest Iranian city of Tabriz. We wanted to go to Tehran but all the roads were closed by snow so instead we got to know Tabriz. One of our favourite routines became going for breakfast at tiny restaurants that served honey, freshly drained from the honeycomb, along with a thick, spreadable cream and warm bread for breakfast. So simple yet so delicious. The bread should be like a plain naan bread and you can serve this with either sugary tea (no milk for Iranian style) or plain hot milk. A lighter version of this is yogurt with honey mixed in. Iranians also like honey and butter together on bread. Honey and just about anything is good!

PERSIAN HALEEM WITH TURKEY
Haleem is a traditional Iranian breakfast dish that's usually served on weekends. It's often described as a "wheat and meat" porridge, which is fitting because it is mainly made with pelted wheat and turkey or lamb. Here I use coarse bulgur instead of wheat to make the process easier. It still takes time to prepare, but nothing like the classic way, whereby restaurants or home cooks would cook it overnight while stirring constantly. Because of its neutral flavor profile, haleem can be served sweet with sugar and cinnamon or savory with salt. I like mine pretty sweet, so that's the way the recipe is written. For a savory version, omit the sugar and ground cinnamon but keep the cinnamon stick to flavor the meat. Either way, this is a hearty dish that can keep you full for hours.

Steps:
- Place the bulgur in a large bowl and pour 8 cups of water over it. Stir and cover the bowl with plastic wrap or a clean kitchen towel. Let the bulgur soak until just tender, about 2 hours. Drain and discard the water.
- Place the bulgur in a large pot with 10 cups of water. Bring to a simmer over medium-high heat, then lower the heat to medium. Rest a wooden spoon in the pot and then place the lid on the pot, propping it on the spoon to leave an opening (to keep the water from overflowing during cooking). Cook, stirring occasionally, until the bulgur has completely fallen apart and the consistency is like a thick soup, 3 1/2 to 4 hours; after every hour of cooking, add 2 more cups of water for a total of 16 cups from start to finish.
- While the bulgur is cooking, place the turkey breast in a separate large pot with the cinnamon stick and onion and add enough water to submerge the turkey breast. Bring it to a simmer over medium-high heat, then cover and simmer over medium heat until an instant-read thermometer inserted thickest part reads 165 degrees F, about 1 hour 30 minutes.
- Puree the bulgur using an immersion blender until it's completely smooth. (Alternatively, puree the soup in a regular blender and then pass it through a fine-mesh sieve to make sure it's completely smooth.)
- Remove the turkey from the pot, cut it into smaller pieces and finely shred in a mixing bowl using a stand mixer fitted with the paddle attachment or a handheld electric mixer on medium speed, about 2 minutes. Add 1 cup of the bulgur mixture to the turkey and mix using a wooden spoon to form a thick paste, adding up to 1/2 cup more bulgur as needed.
- Return the turkey mixture to the remaining bulgur in the pot and stir to combine. Bring to a low simmer over medium-low heat. Mix half of the melted ghee with the cinnamon and 1/2 teaspoon salt in a small bowl. Add the ghee mixture to the pot and cook, stirring occasionally, to allow the flavors to develop and the porridge to thicken, about 1 hour.
- Divide the haleem among eight bowls and top each one with 1 tablespoon of the remaining melted ghee and additional ground cinnamon. Sprinkle with some sugar and sesame seeds to your liking and enjoy.
PERSIAN PASTRIES
Steps:
- In a bowl combine the walnuts, sugar and cardamom. Butter a 9 by 9 by 1 3/4-inch baking dish. Cover phyllo with a very lightly dampened towel and keep covered at all times when it is not being used. Cut phyllo into 8 by 11-inch sheets. Place 1 sheet at a time on a work surface and lightly brush with butter. Place 2 tablespoons of the spiced sugar-nut mixture lengthwise down the center of each leaf of phyllo. Fold each sheet over several times lengthwise to form a 1-inch wide strip, enclosing the filling. Roll up each strip to make a coil and place flat (coil side up) in the prepared dish against the side to prevent it from uncoiling. Repeat the whole procedure with the rest of the phyllo sheets. Brush with butter and bake in a preheated 350 degrees F oven for 40 minutes.
- Combine all of the ingredients, except nuts, and bring to a boil. Simmer for 30 minutes, cool for 10 minutes, then strain. Pour over pastries once they have come out of the oven and let soak for 1 hour. Sprinkle with walnuts or pistachios.
PERSIAN CREAM PUFFS (NOON'E CHAMEI)

- 1. Preheat oven to 400°F. Line two cookie sheets with parchment paper.
- 2. In a small nonstick saucepan, bring water, margarine, and salt to a boil. When margarine melts, add flour all at once, stirring rapidly. Reduce heat to medium and continue to cook until a ball of dough that detaches easily from the pot forms. Set aside and let cool for 10 minutes.
- 3. In the meantime, make the cream filling by beating the parve whipping cream until it forms peaks. Add the powdered sugar and mixing well. Store in a cool place until ready to use.
- 4. Transfer cooled dough to the bowl of stand mixer fitted with a flat paddle attachment. Add eggs, one by one, making sure each egg has completely incorporated into the dough before adding the next.
- 5. Transfer dough to a pastry bag fitted with a large star pastry tip (Wilton 4B is perfect) or simply use an ice cream scoop to form puffs. Form meringue-like mounds, 3" in diameter and 2" in height, directly on the prepared pans.
- 6. Bake for 20 minutes until golden brown; transfer puffs to a cooling rack.
- 7. When the puffs are completely cooled, cut in half, using a serrated knife, and fill the cavity with whipped cream.
- 8. Optional: To make the syrup, mix all ingredients in a bowl and microwave for 1 minute. Drizzle cooled syrup on cream puffs right before serving. Can also be served with a drizzle of melted chocolate or sprinkled with powered sugar.
TAHINI CHIFFON CAKE WITH BURNT HONEY CREAM AND POACHED RHUBARB
Chiffon cake has all the fluffy texture of angel food cake, with a touch of extra richness. This cake recipe is made with tahini and sesame seeds for crunch.

- Burnt honey
- Bring honey to a boil in a medium saucepan (slightly larger than you think you'll need because the honey will bubble up) over medium heat and cook until golden brown and toasty smelling, about 2 minutes. Remove from heat and stir in salt. Carefully pour in cream (this will help stop the cooking). The honey will bubble and sputter, so be careful. Stir with a wooden spoon or rubber spatula until homogenous. Let burnt honey mixture cool, then transfer to an airtight container. Cover and chill until cold, at least 3 hours. Do ahead: Burnt honey mixture can be made 3 days ahead. Keep chilled.
- Poached rhubarb
- Bring cardamom (if using), sugar, and ¾ cup water to a boil in a medium saucepan over medium-high heat, stirring to dissolve sugar.
- If using cardamom, remove from heat, cover, and let sit 15 minutes to infuse. Set syrup back over medium-high heat and return to a boil.
- Add rhubarb and cook until mixture just starts to bubble again; remove from heat. Cover and let sit until rhubarb pieces are softened but still hold their shape, 70-80 minutes. Do ahead: Rhubarb can be poached 1 day ahead. Transfer to an airtight container; cover and chill.
- Cake and assembly
- Preheat oven to 350°F. Lightly coat cake pan with nonstick spray or lightly oil. Line bottom with a parchment paper round and spray or oil round. Pour sesame seeds into pan and gently shake and tilt pan to coat bottom and sides, pat out any excess. Sift cake flour, baking powder, and salt into a medium bowl.
- Whisk egg yolks, tahini, 6 Tbsp. (75 g) sugar, and 3 Tbsp. room-temperature water in a small bowl to combine. Add dry ingredients and whisk well; set batter aside.
- Beat egg whites and cream of tartar in the bowl of stand mixer fitted with the whisk attachment on medium speed just until foamy bubbles appear, about 15 seconds. With the motor running, sprinkle in remaining 2 Tbsp. (25 g) sugar a teaspoonful at a time, beating 15-20 seconds after each addition to incorporate before adding more. (Take the time to build a strong meringue and your cake will thank you for it.) Beat until meringue is glossy and stiff peaks form.
- Using a rubber spatula, add one third of meringue to reserved batter and fold until just streaky, taking care not to deflate meringue. Repeat two more times, dividing remaining meringue in half and mixing the final addition until no streaks remain. Immediately scrape batter into prepared pan and lightly tap pan on counter to evenly distribute and even out size of bubbles.
- Bake cake until a tester inserted into the center comes out clean and top is puffed and bounces back when gently pressed, 30-35 minutes. Immediately invert cake onto a wire rack, peel away parchment round, and turn right side up. Let cool (the top will flatten as it cools). Invert cake onto a cake or other large plate so sesame crust is on top.
- Beat chilled burnt honey mixture and cream in the clean bowl of a stand mixer fitted with the whisk attachment (a medium bowl and a whisk will also work) until medium firm peaks form. (You want that perfect dollop consistency, where it holds its shape on a plate but still has some slack.)
- To serve, slice cake into six wedges with a serrated knife, using a long, gentle sawing motion. This will help preserve the crumb of the cake and give you a clean wedge. Divide, cut side down, among plates and spoon a couple of heaping tablespoonfuls burnt honey cream alongside. Using a fork, lift 3-4 rhubarb pieces out of the syrup and arrange next to cake. Drizzle a little rhubarb syrup over the cake if desired. Do ahead: Cake can be baked 2 days ahead; keep tightly wrapped at room temperature. Burnt honey cream can be made 3 hours ahead; cover and chill. Beat again briefly before using if needed.
