Honey Orange Shrimp w/Stir Fry Vegetables image

Honey orange shrimp is Asian-inspired and totally delicious. In less than 30 minutes, you'll have this shrimp in orange sauce on the table!

¼ cup fresh squeezed orange juice ((about 1 large orange))
1 tbsp orange zest
2 cloves garlic (minced)
1 tsp low sodium soy sauce
¼ cup honey
1 tsp fresh ginger (minced)
1 tbsp corn starch
2 tbsp sesame oil (divided)
1 red bell pepper (sliced fajita style)
1 green bell pepper (sliced fajita style)
1 cup carrots (cut matchstick style )
1 lbs medium or large shrimp
green onions & sesame seed ((optional))

Steps:

  • Combine the orange juice, orange zest, garlic, soy sauce, honey, ginger, and corn starch. Whisk until no clumps remain, and set aside.
  • Remove the tails from the shrimp, and set aside.
  • Heat 1 tbsp sesame oil in a large skillet over medium heat. Add bell peppers and carrots, and saute until tender (10-15 minutes). Set aside.
  • In the same skillet, heat 1 tbsp of sesame oil over medium heat. Add the deveined, tail-off shrimp and saute for 4-5 minutes. If using raw shrimp, saute until they turn pink.
  • Add the sauce to the skillet with the shrimp. Heat until the sauce is slightly thickened, stirring occasionally, about 1-2 minutes.
  • Add the peppers and carrots back to the skillet and toss until everything is coated in the orange sauce. Serve over rice, and sprinkle with green onions and sesame seeds if desired!

1 tablespoon cornstarch
1/4 cup fresh orange juice

Kosher salt
1 tablespoon cornstarch
5 blood oranges
3 tablespoons rice vinegar
3 tablespoons honey
3 tablespoons ketchup
1 teaspoon toasted sesame oil
8 ounces snow peas, trimmed
3 tablespoons vegetable oil
1/3 cup dried chiles de arbol (about 24) or other small dried chiles
3 cloves garlic, minced

4 scallions, cut into 1- to 2-inch pieces
1 tablespoon sesame seeds

Steps:

  • Season the shrimp with 1/2 teaspoon salt in a large bowl. Add the cornstarch and toss to coat; set aside. Juice 3 blood oranges into a small bowl; add the vinegar, honey, ketchup, sesame oil and 1/2 teaspoon salt and whisk to combine. Quarter the remaining 2 oranges and thinly slice; set aside.
  • Fill a large bowl with ice water and set aside. Bring a medium pot of salted water to a boil. Add the snow peas and cook until crisp-tender, about 1 minute. Drain and immediately transfer to the ice bath; let sit until cool, then drain and pat dry.

1 tablespoon grated ginger
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon cornstarch

1 clove garlic, grated
Vegetable oil, for frying
1/2 cup all-purpose flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 large eggs
1 1/2 cups panko breadcrumbs
1 pound peeled and deveined jumbo shrimp, butterflied and tails removed
Rice, for serving
2 scallions, sliced thin, for garnish

Steps:

  • For the sauce: Put the orange juice, ginger, honey, soy sauce, cornstarch, crushed red pepper, vinegar, sesame oil, salt and garlic in a small nonstick skillet over medium heat and whisk thoroughly to incorporate the cornstarch into the liquid. If you have a few lumps remaining, that is fine. Heat until bubbling and starting to thicken, about 5 minutes. Remove from the heat and set aside.
  • For the crispy shrimp: Heat about 1/2 inch of vegetable oil in a nonstick skillet over medium heat to 350 degrees F.
  • Add the flour, salt and pepper to a shallow dish. Crack the eggs into a second shallow dish and beat well. Place the panko in a third dish. Bread the shrimp by dipping them first in the flour mixture and shaking off any excess, then in the egg and finally in the breadcrumbs, pressing to make sure each shrimp has an even coating.
  • Fry the shrimp in 2 batches, flipping halfway through, until golden, 1 to 2 minutes per side. Drain on a paper towel-lined plate.
  • Before serving, add the sauce to the bottom of a bowl. Add the shrimp and toss gently to coat. Serve over rice and garnish with the sliced scallions.

⅓ cup soy sauce

Steps:

  • Place shrimp in a sealable bag or medium bowl.
  • In a small bowl or measuring cup, mix marinade ingredients.
  • Pour half of the marinade on the shrimp. Save the other half for later.
  • Let the shrimp marinate in the refrigerator for at least 15 minutes.
  • In a medium pan, heat oil. Add shrimp to the pan, but discard the used marinade. Cook shrimp on one side for about a minute, then flip over.
  • Pour in remaining marinade and cook until shrimp is cooked through and just firm. Remove the shrimp from the pan and let the marinade reduce.
  • Serve the shrimp with sauce and garnish with green onion.
