- In a ziploc, combine orange juice, soy sauce, honey, lemon-pepper seasoning, ginger, and garlic powder; Set aside.
- Place each chicken breast half between 2 pieces of plastic wrap.
- Working from center to the edges, pound lightly with the flat side of a meat mallet to an even thickness.
- Remove plastic wrap.
- Place chicken pieces in marinade.
- Cover and chill for 4 to 6 hours or overnight.
- Remove chicken from marinade, reserving marinade.
- To grill, place chicken on an uncovered grill directly over medium coals.
- Grill about 12 minutes or until tender and no longer pink, turning and brushing chicken with marinade once.
- Discard any remaining marinade.
- (Or, place chicken on the unheated rack of a broiler pan.
- Broil 4 to 5 inches from heat about 7 minutes, turning and brushing chicken with marinade once).

- Place raw chicken in a large plastic "Ziplock-type: baggie.
- In a bowl, whisk together all remaining ingredients. Reserve about 1/4-1/3 cup in a seperate container for basting. Pour the rest over the chicken.
- Seal bag and "squish: around to coat.
- Refridgerate for at least 4 hours (longer if you have time); turning bag once halfway through marinating time.
- Remove chicken to hot grill; discard marinade that raw chicken was inches Grill chicken over hot grill, and brush with reswerved marinade. Grill for 3-5 minutes on each side (depending on type and size of chicken pieces) or until juices run clear.

GRILLED CHICKEN BREAST WITH GINGER AND SOY
Steps:
- Combine the 1 cup soy sauce, 1/4 cup olive oil, 2 tablespoons sesame oil, half of the lime juice, ginger, and garlic, and 1/4 cup cilantro in the bottom of each of 2 large freezer bags. Put 2 chicken breasts in each bag and get them coated with the marinade. Then set the bags on a work surface, force the air out and seal them. Allow chicken to marinade for 1 hour. You can also freeze the chicken right in the marinade at this point. To do so fold each bag over the chicken 3 times, tape them well, and date them. Put it in the freezer for up to 2 months.
- Place a large grill pan on 2 burners over medium-high heat, or preheat an outdoor gas or charcoal grill. Fold a few paper towels into a thick square. Blot some oil on the paper towels and then carefully and quickly wipe the ridges of the gill pan or the hot grates of the grill to make a non-stick surface.
- Remove the chicken breasts from the marinade and season with salt and pepper. Lay the chicken on the hot grill and cook 3 to 5 minutes on each side until charred and firm. Serve with the sesame noodles and cucumber pickles.
HONEY GARLIC CHICKEN THIGHS
Steps:
- Mix together the honey, soy sauce, vinegar, thyme, pepper and garlic in a bowl. Reserve 1/4 cup of the marinade to use for basting later. Marinate the chicken with the remaining liquid in a resealable bag for 2 to 3 hours in the refrigerator.
- Heat one side of a gas grill to medium heat, keeping one side cooler. Grill the chicken thighs on medium for approximately 5 minutes on each side, taking care not to let the sugars burn. Move the thighs to the cool side of the grill and baste with the reserved marinade. Cover the grill and cook, basting every 3 to 4 minutes, until the thighs are cooked completely through, about 10 minutes more.

- In a small bowl, combine the first eight ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 8 hours or overnight. - Preheat a grill for medium heat.
- Melt butter in a skillet over medium heat. Add the garlic, and cook until fragrant, 1 to 2 minutes. Whisk in honey and lemon juice. Reserve half for basting, and brush the other half onto the chicken breasts.
- Lightly oil the grill grate, and place chicken on the grill. Cook for 6 to 8 minutes per side, turning frequently. Baste often during the last 5 minutes. Chicken is done when the meat is firm, and juices run clear.

- Remove neck and giblets from chicken. Skewer neck skin of chicken to back; tie legs to tail with 100-percent-cotton kitchen string. Twist wing tips under back. Place chicken in a large resealable plastic bag set in a deep bowl.
