FIVE-SPICE ROAST CHICKEN DRUMSTICKS
In Hong Kong they love and are famed for their skill at rotisserie-style cooking, where whole ducks, chickens and pigs, with their entrails, are roasted to a golden or soy color. Many eateries display a range of cooked food in their window fronts to entice diners. Inspired by this style of cooking, my simple five-spice roasted drumsticks make a simple dinner.

- In a bowl, combine the garlic, ginger, honey, soy sauce, groundnut oil, rice wine, and five-spice powder. Add the drumsticks, and cover the bowl with plastic wrap. Then, let the chicken marinate in the refrigerator for as long as possible. Overnight is ideal, but 10 minutes is fine if you do not have enough time. When ready to cook, preheat an oven to 350 degrees F. Arrange the chicken drumsticks on a roasting pan, and roast for 30 minutes, or until their skins are golden.

- Preheat barbecue to medium-high and lightly grease the grate. Stir ketchup with honey, orange zest, orange juice, Worcestershire sauce, rosemary, garlic, cumin and pepper. Divide in half. Toss one half with the drumsticks and marinate for 30 minutes. Reserve remaining sauce mixture.
- Discard the marinade and grill the chicken, turning occasionally, for 15 minutes. Brush chicken all over with reserved sauce and grill for 5 minutes or until no longer pink near the bone.

- Preheat the oven to 400°F.
- Place the drumsticks on 2 rimmed baking sheets and season with the salt and pepper; bake for 30 minutes.
- Meanwhile, in a medium bowl, combine the honey, garlic, and hot pepper sauce; mix well.
- Remove the drumsticks from the oven and brush with the sauce.
- Bake for 20 to 25 more minutes, or until no pink remains and the juices run clear.

SWEET "N" SPICY DRUMSTICKS
From Huey's Cooking Adventures. Times are estimated but to be honest I would be cutting the honey back to about 2 tablespoons from a 1/2 cup due to diabetic reasons but otherwise happy witht he recipe, he posted as a kids like recipe so servings are for 4-6 kids but I would say 3-4 adults Serve just the drumsticks as an appertizer or at a picnic could be good too.

Steps:
- Preheat oven to 180°C.
- Mix together hoisin, soy, honey, ginger and garlic and add the chicken drumsticks and toss well to coat.
- Put a sheet of baking paper/parchment onto 1 ot 2 baking trays and place drumsticks on top (in one layer).
- Spoon a little sauce over the top of each drumstick/leg and cook in oven for about 20 to 30 minutes until cooked through, turning once.
- Heat oil in a wok (or large non stick frying pan) and briefly toss snowpeas until tender.
- To serve, mound snowpeas on individual plates and top with chicken, cooking juices and spring onion.

- Prepare a baking pan by lining with foil (for easier cleanup). Place a baking rake inside the pan. A roasting pan with rack is perfect.
