"I first made this zippy dip for my husband's birthday party," recalls Nikki Rosati of Franksville, Wisconsin. "So many people asked for the recipe that I photocopied it to pass out."

1 jar (24 ounces) salsa
1 can (15 ounces) chili with beans
2 cans (2-1/4 ounces each) sliced ripe olives, drained
12 ounces Velveeta, cubed
Tortilla chips

Steps:

  • In a 1-1/2-qt. slow cooker, combine the salsa, chili and olives. Stir in cheese. Cover and cook on low for 1-2 hours or until cheese is melted, stirring halfway through. Serve with tortilla chips.

I got this dip from the WW site...it is absolutely delicious and just ONE POINT per serving! I serve it with baked Tostitos chips for a guilt-free treat, but no one would ever guess it's low fat if you served it to guests. Keep in mind, the creamy ingredients cool down the salsa, so a hot salsa will yield a nice medium dip. Great way to get your mexican dip fix. Enjoy!

1 cup fat-free Greek yogurt, plain
1/2 cup salsa
3/4 cup avocado, diced
1/3 cup fresh cilantro, chopped
1/4 cup red onion, finely chopped
1/2 teaspoon ground cumin
1/2 teaspoon salt (to taste)

Steps:

  • In a medium bowl, stir together yogurt and salsa until blended.
  • Stir in remaining ingredients. Cover and refrigerate up to 1 day.
  • Before serving, garnish with additional cilantro, chopped avocado and chopped red onion.

Tried this recipe thinking I'd be the only one to eat it, but family enjoyed it so much said to SAVE this recipe. A win-win for me as it's fast, easy, and only 1 WW Smart Point. Freeze leftovers in 1-cup containers for easy, portion-controlled lunches another time.

1 tbspolive oil
1 large onion, chopped
4 medium poblano chiles, seeded, diced
2 serrano chilies, seeded, minced
1 tablespoon minced garlic
1 tablespoon chili powder
2 teaspoons kosher salt (to taste)
1 1/4 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
3 cups reduced-sodium chicken broth
2 lbs uncooked boneless skinless chicken, breast(s)
45 ounces canned cannellini beans, rinsed and drained
1/3 cup salsa verde
2 tablespoons fresh lime juice
1/3 cup cilantro, fresh, minced

Steps:

  • Heat oil in a large soup pot over medium heat. Add onion and peppers; sauté, stirring often, until softened, about 5 to 10 minutes. Add garlic, chili powder, salt, cumin, coriander and oregano; stir and cook, 1 minute.
  • Add broth, chicken and beans; increase heat to high and bring to a boil. Reduce heat to medium-low and simmer, covered, until chicken is cooked through, about 15 to 20 minutes. Remove chicken to a plate; let rest 5 minutes and then shred with two forks.
  • Return shredded chicken to pot and stir in salsa verde, lime juice and cilantro; heat through.
  • Serving size: 1 c.

2 teaspoons canola oil
2 garlic cloves, minced
2 cans (15 ounces each) chili without beans
2 cups salsa
2 packages (3 ounces each) cream cheese, cubed
2 cans (2-1/4 ounces each) sliced ripe olives, drained
Tortilla chips

Steps:

  • In a small skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer., Transfer to a 3-qt. slow cooker. Stir in the chili, salsa, cream cheese and olives. Cover and cook on low for 4 hours or until heated through, stirring occasionally. Stir before serving with tortilla chips.

I came across this recipe years ago and always seem to use it when I am in a pinch. It is fast, easy and can't get any more simpler than this!!! Hot or mild salsa can be used. This weighs in at 2 points on Weight Watcher

1 -1 1/2 cup chunky salsa
1/2 cup low-fat sour cream
1 cup low-fat cheddar cheese

Steps:

  • Drain the salsa of excess water, if necessary.
  • In a onion soup bowl or a small oven proof dish, add salsa, using 1 cup or fill until half filled (depending on the size of dish used). Add sour cream on top and spread around. Sprinkle with cheddar cheese. (can be made up ahead of time).
  • Bake in 350 oven for 20 minutes. Remove from oven and stir the cheese and sour cream into the salsa. Let cool slightly, as it does retain the heat. Serve with red, green or purple corn chips.
  • Note: I use my toaster oven for convience. If a large dish is used, just adjust the sour cream and cheese.
