PAULA DEEN'S HOT CRAB DIP



Paula Deen's Hot Crab Dip image

From Nov 09 issue of Good Housekeeping, featuring Paula Deen. There are other recipes for her crab dips on here, but this one is very quick and simple, with ingredients that I typically have on hand. I used nuefchatel cheese, and fat free Miracle Whip for a low-fat alternative, and the flavor didn't suffer at all.

1 (8 ounce) package cream cheese
8 ounces crabmeat
1/3 cup mayonnaise (or Miracle Whip)
2 tablespoons finely chopped onions
1 tablespoon milk
1/4 teaspoon garlic salt
1 1/2 teaspoons prepared white horseradish

Steps:

  • Mix all ingredients thoroughly together in a medium oven-proof dish.
  • Bake at 350 degrees for 25 minutes, or until browned around the edges.
  • Alternatively, microwave for 3 minutes (for those of us who are less patient!).

1 lb lump crabmeat, free of shells
1 cup grated monterey jack pepper cheese
3/4 cup mayonnaise
1/4 cup grated parmesan cheese
1/4 cup green onion, minced (optional)
2 garlic cloves, minced
3 tablespoons Worcestershire sauce
2 tablespoons fresh lemon juice or 2 tablespoons fresh lime juice
1 teaspoon hot pepper sauce
1/2 teaspoon dry mustard
salt and pepper

Steps:

  • Gently combine all ingredients in a casserole until thoroughly mixed.
  • Bake at 325°F for 40 minutes; serve hot.
  • (Will set up a bit as it cools).

1 lb crabmeat, picked over to remove bits of shell
1 1/2 cups shredded sharp cheddar cheese
8 ounces cream cheese, at room temperature
1/4 cup mayonnaise
1/4 cup sour cream
4 scallions, finely chopped (white and light green parts)
2 garlic cloves, finely chopped
2 teaspoons fresh lemon juice
1 1/2 teaspoons Worcestershire sauce
1 teaspoon hot sauce, to taste
1/2 teaspoon mustard powder
tortilla chips or cracker, for dipping

Steps:

  • Preheat oven to 325°.
  • In a bowl, stir together the crabmeat, Cheddar, cream cheese, mayonnaise, sour cream, chopped scallions, garlic, lemon juice, Worcestershire sauce, hot sauce, and mustard powder.
  • Scrape the mixture into a wide baking dish; one that is pretty enough for serving.
  • Bake until the dip is golden and bubbling, 45-55 minutes.
  • Chop the dark green scallion tops and sprinkle over the dip to add a little color.
  • Serve hot with a bowl of tortilla chips or crackers to use as dippers.
