8 large Garlic cloves (minced/grated )
3 inch Fresh ginger (grated)
4 tbsp Onion flakes (1 tbsp onion powder)

1 tbsp Lemon juice
2 tbsp Coriander powder
1 tsp Cumin powder
½ tsp Turmeric powder
1 tsp Chilly powder (or cayenne pepper)
2 tbsp Smoked sweet paprika
½ tsp Garam masala
1 tsp Kosher salt
½ tsp Black pepper
½ cup Greek yogurt (or 1 cup coconut milk )
1 cup Chicken stock
¼ cup Cilantro chopped

1 tablespoon vegetable oil
4 boneless skinless chicken breast halves
3 medium potatoes, peeled and chopped
1 medium onion, sliced
1 (14 ounce) can coconut milk
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons curry powder (or to taste)
1 teaspoon hot sauce (optional, more if desired)
1 cup chicken broth
1 (10 ounce) package frozen peas, thawed
2 -3 tablespoons toasted flaked coconut (optional)

Steps:

  • Heat oil in a medium fry pan.
  • Add chicken breasts and brown on both sides.
  • Place potatoes and onion in crock pot.
  • Place chicken breasts on top.
  • Combine coconut milk, salt, pepper, curry powder, hot sauce and chicken broth in a bowl and stir thoroughly.
  • Add to crock pot.
  • Cover and cook on low 6 to 8 hours.
  • One half hour before serving, add peas on top of chicken mixture.
  • Just before serving, stir mixture thoroughly and sprinkle with toasted coconut if using.
  • Serve over rice or Asian noodles, if desired.

2 tsp Fresh ginger (Peeled and grated, or use a ready prepared paste)
3 tbsp Medium curry powder
1/2 tsp Chilli flakes
1/2 tsp Salt
100 g Mango chutney
400 ml Reduced fat Coconut Milk
1 Large Onion (Peeled and very finely chopped, I use frozen ready prepared)
1 kg Boneless, skinless chicken thighs
1 tsp Garam Masala

Steps:

  • Put everything APART FROM the Garam Masala into the slow cooker (crock pot). Give it a good stir.
  • Put the lid on and cook on HIGH for 4 hour or LOW for at least 6 hours.
  • When the chicken is tender and falling apart, gently shred it with two forks and stir in the Garam Masala. Mix well until everything is coated and softened in the sauce.

1 cup (250ml) unsalted chicken stock
3 tablespoons (24g) curry powder ((try to use High Quality curry powder))
2 tablespoons (30g) ghee ((or unsalted butter or olive oil))
1.5 tablespoon (22.5ml) regular soy sauce
2 (405g) medium carrots (, cut into chunks)
2 (510g) russet potatoes (, cut into quarters)
1 (130g) medium onion (, diced)
8 cloves (29g) garlic (, minced)
1 tablespoon (15g) ginger (, minced)
½ - 1 teaspoon (1.4g - 2.8g) cayenne pepper
2 tablespoons (30g) tomato paste
¼ cup (63ml) - ½ cup (125ml) coconut milk ((optional))

Steps:

  • Brown Chicken in Instant Pot: Press "Saute" button to "Sauté More" function to heat up Instant Pot. Wait until the indicator says "HOT" (~8 mins). Pat dry the chicken parts with a paper towel, then season one side of the chicken with kosher salt and ground black pepper.Add 2 tbsp (30g) ghee or unsalted butter in Instant Pot. Place the chicken in Instant Pot (seasoned side face down), then brown for 4 minutes. Season the other side of chicken with salt and ground black pepper.   • Pressure Cook Chicken Curry: Add in 1.5 tbsp (22.5) regular soy sauce, then give it a quick mix. Add in the browned chicken & its meat juice. Layer the carrot and potato chunks on top. No need to mix.With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure cook: -Bone-in Chicken Thighs or Drumsticks: High Pressure for 5 minutes + 10 minutes Natural Release. -Bone-in Chicken Breasts: High Pressure for 4 minutes + 10 minutes Natural Release. Release remaining pressure, then open the lid.
  • Add Coconut Milk: Set aside all the chicken and half of the potatoes & carrots. Bring the curry sauce to a simmer with "Saute More" function. Mix in ¼ cup (63ml) - ½ cup (125ml) coconut milk.
  • Thicken & Season: With a wooden spoon, break down the remaining potatoes in Instant Pot to give the sauce some extra texture & body. Taste and adjust the seasoning by adding more salt. *For reference: We added roughly 1 - 2 large pinches of salt.
  • Serve: Garnish the chicken curry with cilantro (optional) & serve with rice or your favorite side dishes. Enjoy~

Steps:

  • Get "choppy" with your veggies.
  • These are the canned goods I used in my crock pot curry =D
  • Place your chopped onions and minced garlic into your crock pot.
  • Then add the rest of your veggie friends to the party.
  • Canned tomatoes +sauce, coconut milk and Chicken breasts with lentils go on top. Cover and cook on high for 4 hours or low for 6-8 hours(you can add in 1/2 cup of water or broth if you want).
  • When it's fully cooked just stir it up and use two forks to pull apart the chicken breasts.

2 T tomato paste
1 T organic, cold-pressed coconut oil
1 cup full-fat coconut milk
3/4 cup chicken broth
1 thumb fresh ginger, minced
2-6 garlic cloves, minced
1 medium fresh green chilli, minced
1 onion, finely chopped
2 medium red bell peppers, diced
3-4 T Garam Masala
1 t cumin seeds
Salt and pepper to taste

Steps:

  • Heat the coconut oil in your crockpot and add the Garam Masala and cumin seeds, gently heating them until they begin crackle.
  • Add the tomato puree, coconut milk, ginger, garlic, chilli, salt, and pepper, and mix thoroughly.
  • Give your spicy, coconutty mixture a hearty sniff and then throw in the onions, peppers, chicken, and broth.

2 medium tomatoes, diced
1 medium green pepper, chopped
4 cups hot water
3 tablespoons curry powder
4 teaspoons low-sodium instant chicken bouillon granules
1 tablespoon ketchup
1/2 teaspoon salt
1 1/2 lbs boneless skinless chicken thighs or 1 1/2 lbs boneless skinless chicken breasts

Steps:

  • Put onion in crock pot, followed by tomato and green pepper.
  • In a bowl, whisk together the hot water, curry powder, bouillon powder, ketchup and salt; pour mixture over vegetables.
  • Arrange chicken pieces over top.

1 tbsp vegetable oil
1 large onion (peeled and chopped)
3 chicken breasts (boneless and skinless diced (approx 500g/17.5 oz) )
3 cloves garlic (peeled and minced)
1 large piece of ginger (about the size of your thumb, peeled and finely chopped)
1 tsp salt
½ tsp ground black pepper
3 tsp hot chilli powder (use less or mild chilli if you don't like your curry too hot)
1 tbsp ground coriander
½ tbsp cumin
1 tbsp curry powder
1 tsp paprika
1 tsp cinnamon
240 ml (1 cup) chicken stock ( (water plus a stock cube - or bouillon for gluten free - is fine))
400 g (14 oz) tinned chopped tomatoes
2 tbsp tomato puree/paste
2 tsp sugar (this is to counteract the acidity in the tomatoes)
400 ml (14oz) can full-fat coconut milk
2 tbsp cornflour (cornstarch) (mixed with 5 tbsp cold water to make a slurry - *optional*)
Boiled rice
Chopped coriander (cilantro) and finely chopped chillies

Steps:

  • Preheat your slow cooker (crockpot) to high. Heat the oil in a large pan (or the Crock Pot if it has a sear function), add in the onion and cook on a medium heat for 5-6 minutes until softened.
  • Add the chicken and cook for 3-4 minutes until just sealed.
  • Add in the garlic, ginger, salt, pepper, chilli powder, ground coriander, cumin, curry powder, paprika and cinnamon.
  • Stir to coat the chicken and cook for 1-2 minutes.
  • Add in the stock, tinned tomatoes, tomato puree, sugar and coconut milk.
  • Stir, bring to a gently bubble then pour into your slow cooker and cook for 3-4 hours on high or 5-6 hours on low.
  • Take the lid off and give everything a stir (the oils will have risen to the top, so you can spoon most of it out, or just stir it back in).
  • If you would like to thicken the curry, stir in the cornflour slurry. This is optional, you can leave it out if the curry thickness is to your liking.
  • Sprinkle with coriander (cilantro) and serve with rice.

½-1 teaspoon paprika
1 1/2 -2 Tablespoons Curry spice/powder
1- cup coconut milk
½ cup chicken broth or water
1 bay leaf

1 scotch bonnet pepper
1- pound potatoes or more peeled cut in medium pieces
1- pound carrots and green beans ((more or less))

Steps:

  • Season chicken with, salt, pepper and curry spice and set aside
  • In a large skillet or non stick pan, heat oil over medium heat, until hot, and then add the chicken and brown on both sides about 4-5 minutes until chicken is brown.
  • Remove chicken and set aside. Drain oil and leave about 2 tablespoons
  • Add onions, followed by minced garlic, thyme, paprika, curry powder, stir for about 5 minutes, for the flavors to blossom. You may add scotch bonnet now or add it towards the last 45 minutes when adding the vegetables
  • Add coconut milk, water , bay leaf ,and tomato paste; continue cooking for another 2 minutes.
  • Salt( I used about 1 teaspoon and ½ teaspoon chicken bouillon ,adjust to taste)
  • Place in slow cooker insert, and then add chicken thighs. Gently throw in potatoes.
  • Slow cook for about 3-4 hours on high or 6-7 hours on low . Start checking after 2 1/2 hours and adjust cooking times.
  • About 45 minutes or an hour before chicken is ready throw in vegetables, continue cooking until chicken and vegetables are ready.
  • Remove adjust salt and pepper , if necessary and serve
