KILLER BACON-CHEESE DOGS
My family has been eating hot dogs this way for years. They are so much better than your average hot dog!

- Preheat an outdoor grill for medium-high heat. Lightly oil grate, and set 4 inches from the heat.
- Place the bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain on paper towels.
- Place hot dogs on grill; cook until browned, 5 to 8 minutes, turning once, or until done to suit your taste. Lightly grill hot dog buns.
- To assemble sandwiches, place a slice of cheese and bacon on each roll. Add a hot dog, top each with 1 tablespoon barbeque sauce, or desired amount, and red onion.

HAM AND SWISS OMELET
Steps:
- In a small nonstick skillet, melt butter over medium-high heat. Whisk the eggs, water, salt and pepper. Add egg mixture to skillet (mixture should set immediately at edges)., As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, place ham on one side and sprinkle with cheese; fold other side over filling. Slide omelet onto a plate.

- Cook mushrooms and onions in medium skillet sprayed with cooking spray on medium-high heat 2 min. or until tender, stirring occasionally. Mix egg product and pepper in medium bowl. Add mushroom mixture; mix well.
- Pour half the egg mixture into skillet; cook 2 min. or until almost set, occasionally lifting edge with spatula and tilting skillet to allow uncooked portion to flow underneath. When egg mixture is set but top is still slightly moist, top half of omelet with one 2% Milk Singles and 2 wiener halves. Slip spatula underneath omelet, tip skillet to loosen and gently fold omelet in half. Cook 2 min. or until wieners are heated through and Singles are melted. Slide or flip omelet onto serving plate.
- Wipe skillet clean with paper towel. Spray with cooking spray, then use to make second omelet with remaining ingredients.

- Preheat oven to 350 degrees F.
- Grease a 13x9x2 inch glass baking dish.
- Spread the cheese over the bottom of the baking dish.
- Dot with butter.
- Pour half the heavy cream over the cheese.
- Add the eggs and then the remaining cream.
- Sprinkle with pepper.
- Bake for 40 to 45 minutes or until set.
- Serves 8.
OMELET WITH HOT CHILI SAUCE AND CHEESE

Steps:
- Make one omelet at a time. Break two eggs into each of two small bowls. Add salt and pepper and beat until thoroughly blended.
- Heat a small, well-cured omelet pan or use a nonstick pan.
- Add two teaspoons of butter to the pan. When it is sizzling, add two of the beaten eggs.
- Cook over high heat, shaking the pan and stirring rapidly with a fork held parallel to the bottom of the pan. When the eggs start to set, tilt the omelet pan and tap it against the stove burner. This should make the omelet slide about one inch away from the hand, ''curving'' the omelet.
- Spoon one or two tablespoons of the hot chili sauce and two tablespoons of the cheese in the center of the omelet.
- Quickly, with a fork, carefully and neatly fold the omelet into thirds to enclose the filling and give the omelet a neat, oval shape with pointed ends. Slide the omelet, seam side down, onto a heated plate. Serve immediately.
- Use the remaining ingredients to make another omelet.

SWISS OVEN OMELET

- In a 10-in. ovenproof skillet, cook and stir red onion and sugar in oil over medium heat for 10-12 minutes or until golden brown. Remove 1/4 cup; set aside. , To the skillet, stir in the green onions, mustard and thyme. Remove from the heat. In a bowl, beat the eggs, water, salt and pepper. Pour into skillet, sprinkle with 1/4 cup cheese. , Bake, uncovered, at 375° for 10-15 minutes or until a knife inserted in the center comes out clean. Top with reserved onion mixture and remaining cheese. Cut into wedges.

- Heat olive oil in a large skillet over medium heat; cook and stir asparagus and red bell pepper until the vegetables start to soften, about 3 minutes. Stir in cherry tomatoes, spinach, garlic, oregano, basil, and salt and continue cooking until tomatoes are soft and spinach has cooked down, another 3 to 5 minutes. Remove from heat and transfer vegetables to a plate.
- Melt butter in clean skillet over medium heat. Whisk eggs and milk in a bowl and pour into hot butter, swirling skillet to cover entire bottom with egg mixture. Pull up an edge of the omelet with a spatula and tilt pan to allow unset egg to run underneath and cook; continue around pan, lifting omelet edge and tilting pan, until all the egg mixture is set. Sprinkle omelet with salt.
- Spoon cooked asparagus mixture onto one side of the omelet and sprinkle with feta and Cheddar cheeses. Gently fold half the omelet over the vegetables and cheese and press edges lightly to seal in the filling. Cook until filling is hot and Cheddar cheese has melted, 1 to 2 more minutes. Cut in slices to serve.

MOMMY'S SWISS CHEESE OMELETTE FOR 2 OR MORE
I make this to share around the table so that each person doesnt have to wait fro me to cook their omlette individually. The base recipe is for 2 people. You can double for 3, triple for 6. I use JUMBO eggs

Steps:
- Beat eggs with water and add pepper to mix.
- Spray Large Omlette Pan with non-stick spray while cold.
- Melt butter in large omlette pan over medium heat-be careful not to burn the butter.
- Pour egg mix into pan and swirl around to cover-lower heat to low.
- keep swirling pan so that egg evenly cooks over the low heat- be careful not to overcook or brown the bottum too much.
- when eggs are almost cooked through ( top is still soft) sprinkle cheese over the top.
- put lid onto pan and turn off heat - let this sit for about 1-2 minutes until cheese melts and eggs puff up.
- Sprinkle salt lightly on top.
- Fold omlette over and cut in half.
- serve over a hot bagel ( open face).
SWISS CHARD, BACON, AND GOAT CHEESE OMELET
Try as I might, I just couldn't leave the bacon out of this omelet. Obviously, nothing goes better with eggs. But beyond that, bacon gives the slightly bitter chard an addictive smoky and, well, meaty flavor, while the goat cheese offsets it all with a tart creaminess. The result: a hearty, one-dish meal.

- In a small bowl, whisk the eggs to combine and season generously with salt and pepper.
- Remove the Swiss chard leaves from the stems, and discard the stems or save them for another use. Stack the leaves, roll, and thinly slice. (You should have about 1/2 cup lightly packed leaves.)
- Set a small skillet, well-seasoned cast iron or nonstick, over medium heat, and scatter the bacon and shallot in the pan. Cook, stirring occasionally, until the bacon is crisp and the shallot slices are lightly browned and tender, 3 or 4 minutes. Add the Swiss chard and cook until the chard is wilted and shrunk, stirring occasionally, another few minutes. Transfer the chard-bacon mixture to a plate.
- Return the pan to medium heat and pour in the olive oil. When it shimmers, pour in the eggs, swirling and tilting the pan so that the eggs fill the pan. Let the eggs cook undisturbed until the bottom is just set, 1 to 2 minutes. With a spatula, carefully lift one edge of the eggs and tilt the pan so that the loose eggs run underneath.
- Scatter the chard-bacon mixture on one side of the omelet and top with the goat cheese. Use a spatula to quickly lift the omelet from the other side and fold it over.
- Transfer the omelet to a plate, and eat.
