This is a truly flavorful dish with a lovely plate presentation. My mom and I experimented and made this for lunch. It came out so good I promptly went to the fish market so I could make it for my dinner guests that night. YUMMY!

- Preheat grill for high heat.
- In a small bowl, stir together the garlic powder, onion powder, paprika, lemon pepper, and sea salt. Sprinkle seasonings onto the fish.
- In a small saucepan over medium heat, melt the butter with the garlic and parsley. Remove from heat when the butter has melted, and set aside.
- Lightly oil grill grate. Grill fish for 7 minutes, then turn and drizzle with butter. Continue cooking for 7 minutes, or until easily flaked with a fork. Drizzle with olive oil before serving.

- Cut SEA BASS filet down the center to create 2 pieces (1/2 lb. each). Allow to rest 20 minutes at room temp to remove chill.
- Heat OLIVE OIL in skillet over medium-high until it reaches the smoke point.
- Place sea bass (skin side down) in the hot skillet. Sprinkle SALT and PEPPER over the filet.
- If you want crispy skin, press the filet down firmly with a spatula until it becomes visibly crispy. Turn the filet over and allow the non-skin side to sear until the filet is opaque throughout, reducing heat a notch or two as needed.
- Transfer the filet to a plate and allow to rest a few minutes.
- Serve sea bass warm with your favorite salad and side dish. Suggested: serve over salad greens topped with Chimichurri Sauce (see recipe in footnotes).

SIMPLE OVEN-BAKED SEA BASS

You can try this with other types of fish but my version used a Chilean sea bass. The original recipe came from SparkRecipes and this is my simplified version of it. Enjoy!

- Preheat oven to 450F°.
- In a cup, mix garlic, olive oil, salt, and black pepper.
- Place fish in a shallow glass or ceramic baking dish.
- Rub fish with oil mixture.
- (Optional) Pour wine over fish.
- Bake fish, uncovered, for 15 minutes; then sprinkle with parsley or Italian seasoning and continue to bake for 5 more minutes (or until the thickest part of the fish flakes easily).
- Drizzle remaining pan juices over fish and garnish with lemon wedges.

SAUTEED CHILEAN SEA BASS
Steps:
- Preheat oven to 200 degrees F.
- Place flour for dredging in a shallow bowl. Coat each fillet with seasoned flour and shake off excess. Heat a large nonstick skillet over medium heat for 3 to 4 minutes. Add butter/olive oil combination. Add the fillets, without crowding. Increase heat to high and saute, shaking the pan from time to time, until the bottom of the fish is nicely browned, about 3 minutes. Turn and brown the other side. Remove fish to a plate and keep warm in the oven. Repeat with remaining fillets.
- Deglaze the pan with white wine. Cook, stirring over high heat until reduced by about one-third. Stir in remaining butter and drained capers.
- Plate fish and drizzle sauce around each fillet.

- Remove any large bones from the Chilean sea bass, and slice into 4 fillets (about 6 ounces each - see Note #2). In a large Ziploc freezer bag (or medium glass bowl), add olive oil, sliced garlic, and chopped thyme leaves, and mix to combine (see Note #1). Place the fish in the Ziploc freezer bag (or mixing bowl), and seal the bag well. Smoosh the marinade around to coat each piece (or use tongs to turn the fish over in the marinade, and cover the bowl with plastic wrap). Refrigerate for 2 hours.
- Remove the fish from the fridge about 10 minutes before you are ready to grill, and transfer the fish to a plate (discard the marinade). Brush off excess bits of garlic (see Note #3), then season both sides of the fish with salt and pepper. Loosely cover with plastic wrap and leave at room temperature for a total of 5-10 minutes before grilling.
- Clean and prepare the grill on medium heat (to medium-high based on your grill), then place each fillet over indirect heat, and grill with the lid closed for about 3-4 minutes on each side (depending on thickness - See Note #4). Remove fish to a clean plate, and loosely cover with foil (about 5 - 10 minutes) while you plate your other side dishes. Serve on its own with a sprig of fresh thyme, and with our Fresh Roasted Red Pepper Sauce (or your sauce of your choice).

- Preheat the oven to 200 °F (93 °C) and put the flour in a shallow bowl. Set a shallow bowl or plate next to the stove and put 1 cup (120 g) of all-purpose flour into it.
- Heat the olive oil and 2 tablespoons (28 g) of the butter in a skillet. Put the butter and 3 tablespoons (44 ml) of olive oil into a large nonstick skillet.
- Coat the fillets in the flour. Get out 1 1⁄2 to 2 pounds (0.68 to 0.91 kg) of Chilean Sea Bass fillets and lay them in the seasoned flour. Turn each fillet over so they're all coated.
- Sauté the fish over high heat for 6 to 7 minutes. Lift each fillet out of the flour and shake off the excess. Carefully lower the fillets into the hot skillet and cook them for 3 minutes.
- Remove the fish and make a quick white wine sauce. Transfer the sautéed fish to a serving platter. If you'd like to make an easy pan sauce, pour 1 cup (240 ml) of dry white wine into the skillet that you cooked the fish in.

- If you can, I highly recommend getting all the ingredients prepped before you start - Mise en Place. This way you're not scrambling around chopping something while the rest of the meal is overcooking.
- Start out by finely chopping the onion and slicing the mushrooms. Besides having all the other ingredients available, chop up the parsley.
