Steps:
- Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
- In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
- Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

- Whisk 3/4 cup flour, 1 teaspoon kosher salt and 1/4 teaspoon each baking powder and pepper in a bowl. Whisk 1/2 cup milk and 2 eggs in another bowl; stir in the flour mixture. Add 2 cups corn, 1/4 cup each chopped cilantro and scallions, 1 chopped jalapeno and the zest and juice of 1/2 lime. Cook 1/4 cupfuls in a skillet with olive oil, 2 minutes per side. Serve with Greek yogurt.
APPLE FRITTERS

- Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
- Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!
SIMPLE APPLE FRITTERS
These delicious fritters were made weekly by the school cafeteria cook who, "after hours" let me sample them ...ummmmm so good and easy to make. I never want to lose this recipe! Try them they're nice with a pork dinner .. but my family loves them for dessert...you decide.

Steps:
- Measure and sift all dry ingredients.
- Beat eggs and milk together; slowly incorporating the dry ingredients.
- Add the chopped apples.
- In a heavy skillet on the stovetop, heat cooking oil over medium-high heat.
- Drop teaspoon full of apple-batter into hot oil and fry until golden brown in color- 3 to 4 minutes on each side.
- Remove from oil and drain on brown paper.
- Cool and sprinkle with powdered sugar.
- Makes 12 small fritters.
- Eliminate the sugar and serve with pork roast.
POTATO FRITTERS
Sliced potatoes deep fried in a spicy gram flour batter

Steps:
- Put oil on to heat
- Sift gram flour in a bowl, add the red chilli powder, garam masala, cumin and salt. Mix well, add water to make a medium consistency and stir again
- Peel potatoes and slice thinly lengthways
- Dip each slice of potato into batter, coating it evenly and place into the hot oil carefully.
- Cook until golden brown, serve with mint yoghurt. This is a snack which can be eaten on its own :)
CLAM FRITTERS

- In a bowl, combine the flour, baking powder, salt and pepper; set aside. Drain clams, reserving 2 tablespoons juice; set clams aside. In a small bowl, beat the egg, milk and reserved clam juice; stir into dry ingredients just until moistened. Add the clams and onion. , In an electric skillet or deep-fat fryer, heat oil to 375°. Drop batter by tablespoonfuls into oil. Fry for 2-3 minutes or until golden brown, turning occasionally. Drain on paper towels. Serve fritters with tartar sauce and/or lemon wedges if desired.

- For basic fritter batter: Combine flour, baking powder and salt; stir to blend. Add egg and melted margarine; stir until well blended. Add milk (or fruit juice), mix well. Let stand 30 minutes.
- Ham Fritters: Add minced ham to basic batter. Drop by spoonfuls into hot oil and deep fry.
- Banana Fritters: Peel and quarter bananas. Dip bananas in batter and saute in margarine until golden brown on all sides.
- Apple Fritters: Stir apples into basic batter. Drop by spoonfuls into hot oil and deep fry.
- *Note* You can make peach or apricot fritters by using canned fruit. Use the fruit syrup for the liquid in the basic batter. Dice fruit and mix with batter. Deep fry as for the apple fritters.

- Gather your supplies. For this recipe, you'll need a big bowl, a fork or wooden spoon, a saucepan or a stew pot, and something to put your fritters on.
- Get your ingredients together. You'll need vegetable or canola oil, buttermilk pancake mix, milk, one egg, and any chopped fruit or spices of your choice.
- In the bowl, mix pancake mix, milk, and the egg. There isn't really a specific ratio or measurement for the mix and milk, it depends on how many fritters you're making.
- Mix in chopped fruit and spices. Now is the time to stir in any apples, berries, cinnamon, or nutmeg in your fritters. The possibilities are endless, so feel free to get creative.
- Boil the oil. You want your pot or pan about 3/4 full of oil. Get it on the burner and bring it to a slow, rolling boil.
- Ball the dough. Get some dough in a ball about 2 to 2 1⁄2 inches (5.1 to 6.4 cm) around. It doesn't have to be smooth and perfect, in fact it shouldn't be.
- Deep fry! GENTLY put the dough ball in the oil (you can fit about 3 at a time in a saucepan, more in a pot). When it floats to the top, turn it over. The fritters are finished when they are golden brown.
- Remove your fritters carefully. Boiling oil is dangerous, so use tongs and be very, very careful to be avoid being burnt by the oil.
- Share! Fritters are delicious, and something that definitely should be shared. Get some friends or family around and make fritters together. They're guaranteed to help bonding.
