I spend a lot of time developing recipes for the many fruits and vegetables we grow on our farm. In this creation, apple liquor is enhanced with spices for a delightful drink.-Deanna Seippel, Lancaster, Wisconsin

Number Of Ingredients 7

4 cups sugar
2 cups water
4 pounds apples, sliced
1 liter brandy
3 whole cloves
1 cinnamon stick (3 inches)
Additional whole cloves and cinnamon sticks

Steps:

  • Combine sugar and water in a large saucepan. Bring to a boil; cook and stir until sugar is dissolved. Remove from the heat., Place apples in a large glass or plastic container; add the sugar mixture, brandy, cloves and cinnamon stick. Cover and let stand at room temperature for at least two weeks, stirring once a week., Strain brandy mixture; discard apples and spices. Pour into glass bottles. Place an additional three cloves and one cinnamon stick in each bottle.

I clipped this from the local newspaper and posted it for safekeeping. Looks easy and good for those cold winter nights or maybe a nice addition to a cake(?) There are no exact measurements so I guessed. The instructions listed are exactly as it was printed. You will need a one gallon jar with a lid. Servings and cook time are only listed because they have to.

1 gallon fresh ripe fruit (anything you desire)
3 cups sugar
1/2 gallon vodka (or more if needed)

Steps:

  • Stuff a one gallon jar with fresh ripe fruit.
  • If plums or cherries are used, take pits out.
  • If berries are used, leave whole.
  • If pears or apples are used, cut them, leaving out the cores.
  • Add 2 to 3 cups sugar.
  • Cover with vodka.
  • Put a lid on the jar.
  • Let stand for 2 to 3 months.

Make a bottle of homemade plum brandy. It's a great way to use up a glut of plums, plus it'll keep for two months and will make a welcome gift for brandy lovers

Yield Makes approx. 1 x 750ml bottle

Number Of Ingredients 5

350g plums, halved and destoned
175g white caster sugar
700ml brandy
½ cinnamon stick
1 star anise

Steps:

  • Make sure the plum halves are clean and dry, then put them in a large sterilised glass jar. Add the sugar, brandy, cinnamon stick and star anise. Seal and gently rotate the jar to help dissolve the sugar.
  • Continue to gently shake or rotate the jar (trying not to bash the fruit too much) every day for a week.
  • Once the sugar has dissolved, leave it in a cool dark cupboard for another 2 weeks to infuse.
  • Strain the mixture through a sieve lined with muslin, kitchen paper or coffee filter paper. Discard the plums, any fruit pulp and the spices, and pour the strained brandy into a bottle. Will keep for two months.

3 cups sugar
1 (26 ounce) bottle vodka
1 gallon cherries or 1 gallon blackberry

Steps:

  • Enough fruit to somewhat fill a gallon jar, (cherries, apricots, crabapples, etc.).
  • Place fruit, any kind, into glass jar -- pits and all, just cut off the yucky parts.
  • Add sugar and vodka.
  • Set on your kitchen counter and flip it every day for three months. (If you put it away you'll forget about it!)
  • The first few days I place the jar into a bucket in case my lid leaks, that way I can pour it back in and go hunt for a new lid. I put a sticker on it indicating the date it will be ready and "Up on even" if I happen to start it on an even day, you wouldn't believe how many times I've thought to myself "did I turn the brandy today?")
  • In three months strain it through cheesecloth or a clean dishcloth or what have you, if you want it even clearer then strain it again through a paper coffee filter.
  • Bottle it and wowee it's delicious! I do up a nice label on my computer and bottle it into smaller than micky bottles to tuck into my Christmas baskets.
