IHOP PANCAKES (BEST PANCAKE RECIPE EVER!)
I got this recipe from the "Top Secret Recipes" cook book, by Todd Wilbur. My stepson who normally hates home made pancakes loves these! I ALWAYS double this recipe. You can freeze left over pancakes (if there are any), or save the batter in the fridge for up to 3 days. Then make fresh pancakes again. I have made home made pancakes for years. This is the very best pancake recipe I've ever made! My family loves these pancakes. It is a popular request.

Steps:
- Preheat a skillet over med heat. Use a pan with a nonstick surface or apply a little nonstick spray.
- In a blender, or with mixer, combine all of the remaining ingredients until smooth.
- Pour the batter by spoonfuls into the hot pan, forming 5 inch circles.
- When the edges appear to harden, flip the pancakes. They should be light brown.
- Cook on the other side for same amount of time, until light golden brown.

- Whisk flour, cocoa powder, sugar, and salt together in a large bowl. Beat eggs, milk, and vanilla in another bowl; mix in the melted butter. Pour the wet ingredients into the dry, and mix just until combined. Stir in the chocolate chips.
- Heat a lightly oiled griddle or skillet over medium-high heat. For each pancake, pour 1/4 cup batter on griddle and cook until bubbles pop in the center of the pancake, about 2 to 3 minutes. Flip, and cook an additional minute on the opposite side.

- In a large bowl, break the eggs, and beat them with a whisk until they're light lemon yellow, and fluffy. Add the milk, and stir. Add the Oil, salt and sugar, and whisk together. Then, add the Flour and baking powder, and whisk together just until ingredients are mixed. (Batter may be a little lumpy, but that's okay) Divide batter; you'll need two cereal bowls; place an equal amount of batter in both bowls, and leave an equal amount of batter in the big bowl.
- In the first cereal bowl, add 1/2 cup of cocoa, and 1/3 cup of mini chocolate chips, blend well. In the second bowl, add 1/4 cup of cocoa, 1/3 cup of chocolate chips and blend well. Finally, in the third bowl (the one you mixed the batter in) add 1/3 cup of mini chocolate chips, but no cocoa.
- Heat an electric griddle until better melts and sizzles. With the heat on a medium setting, drop the batter for the pancakes with either a ladle, or ice cream scoop, and cook until golden brown.
- Flip the pancakes with a pancake turner, and remove to a plate to serve, starting with the dark batter, medium batter, and the natural color on top. Drizzle with melted butter and syrup, and top with whipped cream, and sprinkle mini chocolate chips. Follow the same instructions until all pancakes have been cooked and plated for breakfast. Enjoy!
