1 1/4 cups buttermilk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1/4 cup white sugar
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 dash of salt
1 egg
1 teaspoon lemon juice
1 tablespoon butter (or as needed)

Steps:

  • In a large bowl, combine the buttermilk, vegetable oil, and vanilla extract.
  • Add the solid ingredients (sugar, baking powder, flour, baking soda, salt) into the mix. Whisk the batter gently. Don't get rid of the lumps!
  • In another bowl, combine the lemon juice and egg. Then add it to the batter. Refrigerate the batter for 30 minutes to an hour.
  • Heat a large skillet over medium heat and smear with butter. Pour 1/3 cup of batter into the skillet.
  • Let it cook for two minutes or until you see bubbles forming on the surface. Flip the pancake over with a spatula. Let the other side cook for 1 to 2 minutes.
  • Repeat steps 6-10 until you cook all the batter.
  • Drizzle with maple syrup and choose your favorite toppings.
  • Enjoy!

¼ cup unsweetened cocoa powder
3 tablespoons white sugar
¼ teaspoon salt
2 eggs, at room temperature
1 ¼ cups milk
½ teaspoon vanilla
2 tablespoons melted butter
½ cup semisweet chocolate chips

Steps:

  • Whisk flour, cocoa powder, sugar, and salt together in a large bowl. Beat eggs, milk, and vanilla in another bowl; mix in the melted butter. Pour the wet ingredients into the dry, and mix just until combined. Stir in the chocolate chips.
  • Heat a lightly oiled griddle or skillet over medium-high heat. For each pancake, pour 1/4 cup batter on griddle and cook until bubbles pop in the center of the pancake, about 2 to 3 minutes. Flip, and cook an additional minute on the opposite side.

I got this recipe from the "Top Secret Recipes" cook book, by Todd Wilbur. My stepson who normally hates home made pancakes loves these! I ALWAYS double this recipe. You can freeze left over pancakes (if there are any), or save the batter in the fridge for up to 3 days. Then make fresh pancakes again. I have made home made pancakes for years. This is the very best pancake recipe I've ever made! My family loves these pancakes. It is a popular request.

nonstick cooking spray
1 1/4 cups all-purpose flour
1 egg
1 1/2 cups buttermilk
3 tablespoons granulated sugar
1 1/2 teaspoons baking soda
1/4 cup cooking oil
1/2 teaspoon salt

Steps:

  • Preheat a skillet over med heat. Use a pan with a nonstick surface or apply a little nonstick spray.
  • In a blender, or with mixer, combine all of the remaining ingredients until smooth.
  • Pour the batter by spoonfuls into the hot pan, forming 5 inch circles.
  • When the edges appear to harden, flip the pancakes. They should be light brown.
  • Cook on the other side for same amount of time, until light golden brown.

1 egg
1/2 teaspoon salt
1/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup vegetable oil

Steps:

  • Preheat griddle.
  • Spray with pan release.
  • Combine all ingredients in bowl and mix until smooth.
  • Pour batter by 1/3 cupsful onto the griddle and cook for 1 - 2 minutes per side or till brown.
  • Makes 8 - 10 pancakes.

  • In a large bowl, break the eggs, and beat them with a whisk until they're light lemon yellow, and fluffy. Add the milk, and stir. Add the Oil, salt and sugar, and whisk together. Then, add the Flour and baking powder, and whisk together just until ingredients are mixed. (Batter may be a little lumpy, but that's okay) Divide batter; you'll need two cereal bowls; place an equal amount of batter in both bowls, and leave an equal amount of batter in the big bowl.
  • In the first cereal bowl, add 1/2 cup of cocoa, and 1/3 cup of mini chocolate chips, blend well. In the second bowl, add 1/4 cup of cocoa, 1/3 cup of chocolate chips and blend well. Finally, in the third bowl (the one you mixed the batter in) add 1/3 cup of mini chocolate chips, but no cocoa.
  • Heat an electric griddle until better melts and sizzles. With the heat on a medium setting, drop the batter for the pancakes with either a ladle, or ice cream scoop, and cook until golden brown.
  • Flip the pancakes with a pancake turner, and remove to a plate to serve, starting with the dark batter, medium batter, and the natural color on top. Drizzle with melted butter and syrup, and top with whipped cream, and sprinkle mini chocolate chips. Follow the same instructions until all pancakes have been cooked and plated for breakfast. Enjoy!
