CRAB PASTA SALAD
A blend of diced veggies, seasoning, and imitation crab meat are mixed with pasta shells in a creamy dressing. This seafood crab pasta salad is best served chilled and is an ideal BBQ side dish, or potluck recipe idea.

Steps:
- Boil pasta until al dente. Once tender, remove from heat, strain, and rinse with cold water until pasta is cool. Drain excess water.
- Chop all veggies and mince crab meat.
- Add ingredients to a large bowl with the dressings, mayo, spices, and pasta.
- Mix well and cover tightly. Place in the fridge for 4 hours.
- Unwrap cover and mix well before serving. You will notice the pasta will have sucked up about 50% of the dressing.
- Enjoy!

- Cook pasta according to package directions for al dente. Since the pasta will be used in a cold salad, I drain the pasta in a colander and rinse it under cold water until the pasta is cold. This will remove all the starch.
- In a large mixing bowl add the crab, pasta, sweet peas, diced onion, and diced cheese.
- Make the salad dressing. Combine the mayonnaise, sugar, lemon juice, milk, salt, and pepper.
- Pour the salad dressing over the crab mixture and gently stir the ingredients together. Serve it immediately or refrigerate and serve the next day.

- Cook pasta as directed on package. Rinse until cool under cold tap water. Leave to drain well in a colander.
- Chop crab meat in a medium bowl. Set aside.
- In a large bowl, chop all desired veggies. Add pasta and all seasonings. Fold in mayo (and sour cream, if using). Adjust mayo and seasonings to personal taste. Gently fold in the crab meat.
- Refrigerate. Stir again before serving, adding more mayo if needed.

- Bring a large pot of lightly salted water to a boil.
- At the same time, heat oil in a large saucepan over medium heat. Add onion and garlic to the hot oil; cook until translucent, about 5 minutes. Stir in imitation crab and heat for 2 minutes.
- Begin cooking rotini. Add to the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
- While the pasta is cooking, stir half-and-half and parsley into the crab sauce; bring to a simmer. Continue to simmer crab sauce, adding pasta water as necessary, while pasta is finishing.
- Drain pasta.
- Mix Parmesan cheese into crab sauce and heat until melted, about 2 minutes. Serve over pasta.
