1 1/2 pounds extra-lean ground beef
1 medium onion, chopped (1/2 cup)
3/4 cup quick-cooking or old-fashioned oats
1/2 cup plain fat-free yogurt
2 teaspoons curry powder
1 teaspoon stone-ground mustard
1/2 teaspoon salt
1/4 teaspoon red pepper sauce
2 egg whites
1/4 cup fat-free cholesterol-free egg product
Vegetable Sauce

Steps:

  • Heat oven to 350°F.
  • Mix all ingredients except Vegetable Sauce. Spread evenly in ungreased loaf pan, 9x5x3 inches. Bake uncovered about 1 hour 30 minutes or until no longer pink in center.
  • Serve with Vegetable Sauce.

This easy Indian shrimp curry is simmered in a creamy coconut and tomato sauce, then serve with chili peppers, for a rich and filling meal!

1 tbsp divided canola oil
1 lb peeled, deveined shrimp
½ finely chopped yellow onion
1 tsp ground ginger
1 tsp ground cumin
1 tsp ground coriander
1½ tsp ground turmeric
1 tsp curry powder
1 tsp paprika
½ tsp chili powder
2 minced garlic cloves
15 oz tomato sauce
¾ cup canned lite coconut milk
½ tsp kosher salt
for garnish cilantro
for garnish chili peppers

Steps:

  • Add 2 teaspoons of the canola oil on high heat in a large skillet. Add the shrimp, then cook for 1 minute on each side. Remove the shrimp from the pan.
  • Place the remaining teaspoon of the canola oil to the skillet with the onions. Cook the onions for about 5 minutes on medium heat, stirring occasionally.
  • Add in the ginger, cumin, coriander, turmeric, paprika, curry powder, chili powder, salt, and garlic. Stir well, letting it cook for 30 seconds.
  • Pour in the tomato sauce and combine. Then, pour in the coconut milk and shrimp to the pan, and stir well.
  • Garnish with cilantro and chili peppers, serve, and enjoy!

1/2 cup soft bread crumbs
1 envelope Italian salad dressing mix
1-1/2 pounds lean ground beef
2 cups crushed seasoned stuffing
1/2 cup finely chopped celery
1/2 cup mayonnaise
1/2 cup boiling water
1 teaspoon curry powder
1/2 cup apricot preserves

Steps:

  • In a large bowl, combine the eggs, bread crumbs and dressing mix. Crumble beef over mixture and mix well. , On a large piece of heavy-duty foil, pat beef mixture into a 10x8-in. rectangle. Combine the stuffing mix, celery, mayonnaise, water and curry powder; spoon down center of rectangle. Bring long sides over stuffing mixture, peeling foil away while folding. Seal edge and ends. Place seam side down in a greased 13x9-in. baking pan. , Bake, uncovered, at 350° for 45 minutes. Meanwhile, in a small saucepan, heat preserves; stir to break up pieces of fruit. Spread over the meat loaf. Bake 10-15 minutes longer or until meat is no longer pink and a thermometer reads 160°.

7 eggs, divided1/4 cup curry powder or create your own blend with turmeric, cumin and coriander in equal parts and a little ground mustard, cinnamon and paprika for balance2 tablespoons olive oil1 small onion, chopped1 carrot, grated or minced1 fresh chili pepper, seeded and finely chopped1 1-inch piece of ginger, grated3-4 cloves garlic, finely chopped1/4 cup dry sherry2 pounds ground turkey breast, turkey or chicken3 slices good-quality white bread, cubedMilk, to soak breadSalt and pepper1/2 cup organic or low-sugar ketchup1/4 cup Sriracha sauceA handful of cilantro or parsley, chopped4 scallions, whites and greens, finely choppedMango chutney, to pass at the table, such as Patak's brandButtered, grilled garlic naan bread

Steps:

  • Place 5 eggs in cold water, cover with water, bring to a boil, then cover the pan and let stand for 8 minutes (2 minutes shy of hard-boiled eggs). Drain the eggs. Crack the shells and soak in cold water to loosen. Peel the eggs.Heat the skillet with spices to toast, then add the oil and stir to heat; add the onions, carrots, chili, ginger and garlic. Stir to soften for a few minutes, then deglaze the pan with sherry and cool.Pre-heat the oven to 375°F.Place the meat in a bowl. Squeeze the excess milk from the bread and crumble into crumbs as you add to the meat. Season the meat with salt and pepper. Combine the ketchup and sriracha. Add half the mixture to the meat. Brush the loaf with remaining ketchup and Sriracha sauce and bake for 60-75 minutes, until cooked through. Let the meatloaf stand for 10 minutes, then slice and serve with a dollop of mango chutney and naan bread alongside.
