Lassi is a super refreshing, creamy and thick yogurt based drink from North Indian Cuisine. Refresh yourself anytime with this cool and creamy lassi, which is also a great way to get the power of yogurt throughout your busy day.

2 cups curd ((Plain yogurt))
½ to 1 cup water ((or 2 to 3 ice cubes + ¼ cup milk or cream adjust as needed))
3 to 4 tablespoon sugar ((or maple syrup, adjust to taste))
¼ to ½ teaspoon cardamom powder ((ground cardamoms, elaichi powder))
1 teaspoon rose water ((optional))
1 pinch saffron strands ((Kesar) optional)
1 tablespoon chopped nuts (for garnish, optional)
½ teaspoon roasted cumin powder ((roasted jeera powder))
¼ to ½ teaspoon salt ((use as needed))
2 pinches chaat masala ((for garnish, optional))
½ to ¾ cup mint or pudina ((use as needed))
½ teaspoon cumin powder (or roasted jeera powder)
⅛ teaspoon chaat masala ((optional))
2 tablespoon lemon juice ((use as needed))
1 tablespoon sugar ((optional))
¼ to ½ teaspoon salt ((or as needed))
¼ green chili deseeded ((optional))

Steps:

  • Chill the curd and water in the refrigerator. If you want to use saffron, soak it in 2 tbsps hot milk and let it rest for sometime.
  • Add curd to a large bowl. Whisk it well to break up lumps & make it smooth.

Mango lassi is a delicious creamy drink with mango, yogurt, milk, a little sugar, and a sprinkling of cardamom. It's cool and refreshing on a hot day!

1 cup chopped very ripe mango (see how to peel and chop mango ), frozen chopped mango, or a cup of canned mango pulp
1 cup plain yogurt
1/2 cup milk
4 teaspoons honey or sugar, more or less to taste
A dash of ground cardamom (optional)
Ice (optional)

Steps:

  • Add ingredients to the blender: Put the mango, yogurt, milk, honey (or sugar), and cardamom into a blender and blend for 2 minutes. If you want a more milkshake-like consistency and it's a hot day, either blend in some ice as well or serve over ice cubes.
  • Serve with a sprinkle of cardamom: Pour contents into a glass and sprinkle with a tiny pinch of ground cardamom to serve. The lassi can be kept refrigerated for up to 24 hours. Links: Turmeric Mango Lassi from Local Haven

1 Tablespoon Rose Water ((optional))

Steps:

  • Combine all the ingredients in a blender jar and blend until smooth.
  • Pour into glasses and garnish with pistachios.

1 cup (245g) plain unsweetened white yogurt
2 large banana,peeled and sliced
pinch ground cardamom
cold water (optional)*see note
honey to taste (optional)
ice cubes (optional)

Steps:

  • Peel and roughly slice the banana then place in a blender. Next add the yogurt, cardamom and the honey if using, blend until the banana is completely broken down and ingredients are well blended. At this time you can check the consistency of the Lassi and see if you would like to add water to thin out, then blend again for a minute. Serve straight away with a few ice cubes.

Mango Lassi Makes 2 -4 drinks

2 cups yogurt ( I used low fat Greek yogurt)
2 cups mango chunks (fresh or frozen, don't add ice if using frozen)
2/3 cups coconut milk ( can use regular milk)
1/3 cup coconut water
1/8 teaspoon sea salt
¼ teaspoon green cardamom
¼ cup honey
Ice - optional only if using fresh mango

Steps:

  • Combine everything in a blender and blend until smooth. Taste and add more honey if a sweeter drink is desired. Add ice if desired. Fill glasses and garnish with a sprinkle of cardamom. Serve cold. Saves well for a day kept covered and refrigerated.
