HIDDEN SECRET BURGERS
Spicy beef burgers, which reveal a hidden centre of melted cheese, jalapenos, and peppers!

- Preheat oven to 350 degrees F (175 degrees C).
- In a bowl, mix the ground beef, onion, egg, hot pepper sauce, and bread crumbs. Season with paprika, parsley, salt, and pepper. In a separate bowl, mix the cheese, red chile pepper, and jalapeno pepper. Form the beef mixture into 4 balls, and press a well in the center of each. Stuff with equal amounts of the cheese mixture. Press meat around filling to seal. Arrange on a baking sheet, and press gently into thick patties.
- Bake 20 minutes in the preheated oven, turning once, until well done.

But it is possible to pack all that savory meaty flavor, oozing melting cheese and even bacon into a big, satisfying burger without blowing your dietary allotment for the entire day.

- Prepare a grill for cooking over medium heat.
- Combine the mayonnaise and ketchup in a small bowl and set aside.
- Heat a medium skillet over medium heat; add the bacon and cook, turning once, until crisp, 7 to 8 minutes. Transfer to a plate covered with a paper towel and drain; chop.
- Gently combine the beef, garlic powder and 1/4 teaspoon each salt and pepper in a bowl. Divide the mixture into 8 portions and form each into a 3 1/2-inch-diameter patty; put 4 patties on a work surface. Toss the bacon with the cheese and spoon a quarter of the mixture on top of each of the 4 patties, keeping the edges clear. Place the remaining patties over the cheese and pinch the perimeter to seal the filling in.
- Grill the patties with the lid closed, turning once, 9 to 10 minutes for medium doneness. To assemble, put the bottom half of each roll on a plate and top with a lettuce leaf, tomato slice and patty. Spoon the mayonnaise mixture over the patties, then top with the onion slices and the remaining roll halves. Serve immediately.

- Start a charcoal or wood fire or preheat a gas grill. Or, on a stove top, heat a large, heavy skillet over medium-high heat for 3 or 4 minutes.
- Put meat and some salt and pepper in a food processor, in batches if necessary, and pulse until coarsely ground: finer than chopped, but not much. Taste and adjust seasoning. (If desired, cook a teaspoon of meat in a pan before tasting.) Divide meat into 4 sections and shape each one around a piece of cheese, enclosing it fully.
- Cook over moderately hot fire: you will be able to hold your hand 3 or 4 inches over rack for a few seconds. Grill burgers about 4 minutes a side for medium-rare, and until cheese begins to melt. (Timing on stove top is the same.)
- Serve on buns, toast or hard rolls, garnished as you like.

- Preheat grill to medium-high.
- Combine Cheddar and Mozzarella (or Gruyère) in a small bowl.
- Gently mix beef, Worcestershire, paprika, ground pepper and Montreal steak spices in a large bowl, preferably with your hands, without overworking.

- Mound 2 tablespoons of the cheese mixture on each of the 4 patties, leaving a 1/2 inch border.
