INSTANT POT® CHILI
The basis for this recipe came from another site. I modified it a bit so, rather than put my changes as comments for his recipe (I hate when people do that), I am posting it as a separate recipe. I have some hints at the bottom for night-before preparations.

Steps:
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add ground beef. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer cooked beef to a separate container.
- Pour oil into the Instant Pot® and select Saute function. Add onion, garlic, and salt. Cook until softened, 5 to 7 minutes. Make a hole in the center of the mixture and add chili powder, cumin, and oregano. Let spices sit for 30 seconds, then stir into the onion. Return cooked beef to the pot and add water. Stir, being sure to scrape any browned bits from the bottom.
- Stir beans, crushed tomatoes, and tomato paste into the beef mixture. Close and lock the lid. Select Chili function and set the timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

INSTANT POT® FALL CHILI
Although it is tradition to flavor chili with a lot of heat, this fall chili (flavored with pumpkin) is milder than most. Autumn recipes don't have to be spicy to keep you warm, just piping hot! This one is easy to put together in an Instant Pot®. Top with shredded Cheddar cheese, a dollop of sour cream, and avocado slices. Add taco chips to the edge of the bowl, or sprinkle with corn chips. Garnish with chopped fresh cilantro.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add onion and saute until translucent, about 3 minutes, stirring frequently to prevent uneven cooking. Add ground sirloin and cook, stirring occasionally, until no longer pink, 5 to 7 minutes. Stir in vinegar and simmer for 2 minutes, stirring occasionally.
- Turn off Instant Pot®. Add tomatoes, kidney beans, pumpkin, ancho chile pepper, brown sugar, cumin, salt, black pepper, Worcestershire sauce, chipotle powder, and habanero hot sauce and stir to combine. Close and lock the lid and close the vent. Select high pressure according to manufacturer's instructions; set timer for 45 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Stir in cinnamon oil, cilantro oil, and clove oil. Serve the chili in bowls or crocks.

INSTANT POT CHILI
Use your Instant Pot to make this classic, beef-and-bean chili. Canned chipotles in adobo give it an extra kick of smoky, spicy flavor.

- Add the oil to the liner of a 6- or 8-quart Instant Pot and set to sauté. Add the beef then sprinkle with cumin, chili powder, and 1 teaspoon of salt. Cook, stirring often to break up the meat, until browned, about 7 minutes. Stir in onion and garlic; cook, stirring often, until onion is slightly softened, about 3 minutes more.
- Add the beef stock to the Instant Pot, stirring to release any browned bits from the bottom of the liner. Gently stir in the remaining 1 teaspoon salt, beans, tomatoes, tomato paste, and chipotle puree, if using. Press the cancel button to reset the Instant Pot.
- Cover the Instant Pot with the lid and lock it into place. Seal the steam release handle. Select high pressure and set the timer for 14 minutes. When the timer is up, let it rest for 10 minutes, then manually release the pressure (unseal the steam release handle). Unlock and remove the lid, being careful of any remaining steam.
- Give the chili a good stir to recombine all of the ingredients. Serve topped with cheese, sour cream, green onion, and corn chips.
INSTANT POT® QUICK AND EASY OUTLAW CHILI BEANS
These chili beans are delicious and so easy to make. Dinner is ready in 45 minutes or less! If your chili doesn't have beans it's not outlaw chili. Garnish with lime, cilantro, diced onions, Cheddar cheese, and diced avocado.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon to the hot pot and cook until crispy, 7 to 10 minutes. Remove bacon and place on a paper towel-lined plate, leaving any grease in the pot.
- Add onion, bell pepper, and jalapenos to the pot. Cook and stir, scraping the bottom of the pot, until tender, 5 to 7 minutes. Add ground beef and ground turkey; cook and stir until browned and crumbly, 5 to 7 minutes. Drain excess grease.
- Add all canned beans, diced tomatoes, tomato paste, beef stock, chili powder, Worcestershire sauce, garlic, oregano, cumin, salt, pepper, and smoked paprika along with 1/2 of the bacon; stir to combine. - You can either sauté the carrots, celery, and onions in the Instant Pot or on the stove top. Whichever method you use, simply heat the olive oil until hot, then sauté the carrots, celery, and onions until the onions are translucent. Then transfer the veggies to the Instant Pot, if you didn’t use the Instant Pot to sauté (Note: the sauté option isn’t available on every Instant Pot.).
- Once the veggies are in the Instant Pot, add in the remaining ingredients and use a wooden spoon to stir until everything is evenly distributed.
- Secure the Instant Pot lid on top and turn on the Instant Pot. Set the settings to chili or to custom and the cook time to 20 minutes. Press start and cook the chili.

- Brown your ground beef in the Instant Pot on "Saute Mode". While the beef is cooking, continue stirring it so it doesn't stick together. Add in bell pepper and onion and saute until they turn golden brown.
