COTTAGE PIE
This is a recipe from my Gram who is English. She served this often, and I have modified her recipe for my family and this is it. A great alternative to Shepherd's Pie.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch deep-dish pie plate.
- Place potatoes into a pot; cover with salted water, and bring to a boil over high heat. Reduce heat to medium-low, cover; simmer until tender, about 20 minutes. Drain; mash with 2 tablespoons of the butter and the garlic. Season to taste with salt and pepper; set aside.
- Meanwhile, heat the olive oil in a skillet over medium heat. Add ground beef, herbes de Provence, and nutmeg; cook and stir until beef is lightly brown and crumbly, about 10 minutes. Spread the beef evenly in the prepared pie plate. Cover evenly with the peas; spread the mashed potatoes over the peas. Dot the casserole with the remaining butter.
- Bake, uncovered, in the preheated oven until heated through and bubbly, about 20 minutes.

Steps:
- Pre-heat oven to 375 degrees.
- Brown the beef in oil.
- Remove from pan and set aside.
- Drain most of the accumulated fat from the pan.
- Sauté onions until tender, and then add chopped tomatoes and cook for 2-3 minutes.
- Add broth and stir in herbs and seasonings.
- Return brown meat to skillet and continue cooking for 5 minutes.
- Transfer all ingredients to an ovenproof casserole.
- Top with mashed potatoes (scoring them with a fork.) Dot with butter and bake uncovered in 375-degree oven for 30-40 minutes.
IMPOSSIBLE LASAGNA PIE
The classic flavor of lasagna in a savory pie makes a satisfying supper. Serve with a fresh green salad, some crusty bread and fruit. Mangia!

- Heat oven to 400 degrees. Spray a 10-inch deep dish pie dish with nonstick spray and set aside. (If you are serving at the table out of this dish, choose your fancy pie dish!)
- Cook beef in a large nonstick skillet. While meat is cooking, add oregano, basil, marjoram, onion powder and garlic powder. Cook until beef is no longer pink. Turn heat off and mix tomato paste into beef.
- Spread beef mixture into prepared pie dish. Top with 1 cup of the shredded cheese. Dollop cottage cheese on top.
- Whirl milk, eggs, baking mix, Parmesan and a few grindings of black pepper in blender for 15-30 seconds. Pour egg mixture evenly over layers in pie dish and sprinkle with a pinch of crushed red pepper flakes if your family likes a bit of spice. If not, don't.
- Bake 35 minutes, then sprinkle with remaining 1/2 cup shredded mozzarella and bake another 5-7 minutes to melt cheese.
- Serves 6.
LASAGNA THE IRISH WAY
This is a really good way to eat proper Lasagna! I have always eaten this since I was small and really enjoyed it.

- Preheat oven to 350°F (175°C) Gas Mark 5.
- In a medium skillet over medium heat, cook the meat until brown. Once cooked, drain and leave to the side.
- Mix your ricotta, egg, basil, thyme, garlic and oregano and half of the mozzarella cheese.
- In a 9x13 baking dish with a little of the spaghetti sauce. Place three of the lasagne sheets over the sauce. Spread a layer of the cheese mixture and then a layer of the meat mixture over it and repeat until mixtures are all gone. Top the lasagne with the left over mozzarella and parmesan cheese.
- Cover with foil and bake in a preheated oven for 30 minutes, remove foil and bake for a further 15 minutes until the cheese browns and the lasagne appears bubbly.

Easy Cottage Pie made with a mixture of ground beef, ground sausage, and mixed vegetables in a delicious gravy and baked under a layer of fluffy mashed potatoes.

Steps:
- Preheat the oven to 375 degrees F.
- Make mashed potatoes: Add potatoes to a saucepan with 3 inches of water. Cover and bring to a boil. Cook until fork tender, about 12-15 minutes.
- Drain the water and leave the potatoes in the pot. Cover with the lid and allow to steam for a few minutes.
- Mash the potatoes lightly with a potato masher (avoid over-mixing the potatoes). Add butter, sour cream, milk, parmesan cheese and salt and pepper and stir just until smooth. Set aside.
- Make the meat filling: In a large, oven-safe* 12 inch skillet with sides, add the ground beef and ground sausage (or ground lamb, to make shepherd's pie). Season with salt and pepper.
- Cook over medium heat until browned, breaking the meat into small pieces with a wooden spoon as it cooks. Drain some of the grease (reserving some in the pan) and remove meat to a plate.
- Add the onion, celery and carrots to the pan and saute for about 5-8 minutes, until tender. Add garlic and flour and toss to combine. Cook for 1 minute.
- Add the beef broth, tomato paste, Worcestershire sauce, herbs and bay leaves and stir to combine.
- Bring to a simmer and cook for 5 minutes. Taste and add extra seasonings, if needed. Remove bay leaves and stir in frozen peas, corn and cooked meat.
- Assemble the pie: Spoon the mashed potatoes over the meat mixture to completely cover the top. Sprinkle with shredded cheddar cheese.
- Bake for about 30 minutes, until golden and bubbling. Allow to cool for 15 minutes before serving, to allow the gravy sauce in the meat mixture to cool and thicken.

- Heat 2 Tbs. oil in a 12-inch ovenproof skillet over medium-high heat. Saute onions until tender, about 5 minutes. Add garlic, cinnamon and cloves; cook about 1 minute. Add meat, stirring to break it up, and cook about 5 minutes. Stir in tomatoes and raisins; simmer 10 minutes.
- Arrange eggplant slices on a lipped cookie sheet. Brush both sides with remaining oil, and season with salt and pepper. Broil on upper oven rack, turning once with kitchen tongs, until golden brown, about 5 minutes per side.
