IRISH HERITAGE CABBAGE
This is a delicious, authentic Irish cabbage side dish.

Steps:
- Preheat your oven's broiler.
- Place cabbage into a large pot. Add water and bring to a boil. Simmer over low heat until tender, about 15 minutes. Meanwhile, cook bacon in a skillet over medium-high heat until crisp. Drain and set aside. Drain cabbage, and drizzle with melted butter. Sprinkle with bacon and nutmeg. Transfer to a baking dish.
- Place under your oven's broiler until the top layer is lightly browned, about 5 minutes. Serve with salt, pepper and vinegar as desired.

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon slices to cool.
- Whisk the butter, flour, and salt into the drippings in the same pan. Stir in the cabbage, and cook, stirring occasionally, over medium heat until cabbage is tender, about 15 minutes. Crumble the bacon; stir the bacon pieces and sour cream into the cabbage mixture.

IRISH COLCANNON (CREAMY POTATOES AND CABBAGE)
This dish is a favorite to be served on All Saints Day in Ireland. It is also said that it was a favorite of Jonathan Swift.

Steps:
- Strip outer leaves from cabbage.
- Shred cabbage (or kale), place in a saucepan with water to cover the bottom and bring to a boil.
- Reduce heat and simmer until crisp-tender, about 5-10 minutes.
- Drain well.
- (opt.) Liquefy in blender.
- Boil potatoes in a separate kettle, covered with water, until tender.
- In a small saucepan cook leeks or onions and cream(or milk) about 10 minutes.
- Mash potatoes then season with salt, pepper and mace.
- Mix in the onions and milk.
- Combine the potato mixture with cabbage or kale, beating it to a pale green fluff over low heat.
- Pour into a deep warmed dish.
- Dab with butter or margarine.
- NOTE: Leftovers can be fried in oil until crisp and brown on both sides.
- OPTION: Substitute ground nutmeg for mace.
IRISH CABBAGE ROLLS WITH GUINESS MUSTARD SAUCE
Cabbage rolls with an Irish twist. This is a great comfort food dish for a cold fall/winter's night. Great with a crusty bread... or soda bread (: Roasted brussel sprouts and baby carrots will complete this dish wonderfully. Enjoy!

- 1. In a large stock pot add diced potatoes, leeks, bouillon cube and cover with water 2 inches above potatoes. Cook on medium-high heat.
- 2. When water begins to boil add washed cabbage leaves and cover with a lid. Cook until cabbage leaves are tender. Remove and drain on paper towels.
- 3. While potatoes are cooking assemble sauce. In a small bowl combine mustard, mayonnaise, and Guiness. Stir until well combined.
- 4. When potatoes and leeks are tender. Drain liquid and pour into a mixing bowl. Add half of the Guiness mustard sauce and mix on high until creamy.
- 5. Add corned beef and fold into potato mixture until well combined. Add salt and pepper to taste.
- 6. To assemble cabbage rolls: Using 1/3 cup measure scoop potatoes and place on end of cabbage leaf. Roll cabbage leaf "burrito style" and place seam side down in baking dish. Repeat until all rolls have been completed.
- 7. Bake at 350 until heated through. To the remaining sauce add a tablespoon at a time additional Guiness until the sauce reaches desired consistency. Serve with sauce poured over cabbage rolls.
- 8. Any left over sauce makes an amazing dip for veggies, fries, chips etc. I've even used it in place of salad dressing.
IRISH MEATLOAF WITH CABBAGE CREAM SAUCE

- Preheat the oven to 400 degrees F.
- Mix together the ground beef, lamb, white pudding, Cheddar, Montreal seasoning, granulated onion, pepper, basil, curry powder, oregano, salt, eggs and onions until well mixed. Add the breadcrumbs and mix well. Let stand for 5 to 10 minutes. Shape into a log.
- On a baking sheet, put some large cabbage leaves down for the meatloaf to cook on. Place some celery sticks on top of the meatloaf (to keep the aluminum foil off of the top of the meatloaf), cover with foil and bake for 45 minutes. Remove the foil and continue to bake to let it crisp up, about 15 minutes more.
- Slice and serve with the Cabbage Cream Sauce on the side.
- Heat a medium pot and add the oil. Brown the garlic, and then add the cabbage and saute until translucent. Deglaze the pot with the sherry, and then simmer until reduced by about half. Add the heavy cream and reduce by half again. Add salt and pepper to taste. Fold in the butter and serve hot.
DUBLINER STUFFED CHICKEN WITH IRISH BACON AND CABBAGE

- Preheat oven to 400°F Grease a baking sheet.
- Grate half the cheese and cut the rest into thin slices.
- Gently lift the skin from each chicken breast and insert the slices of cheese under it.
- Press skin down to seal.
- In a bowl, combine the bread crumbs, seasoning, salt, pepper, and grated cheese.
- Place the beaten eggs in a shallow dish and dip the chicken breasts into it.
- Dredge in bread crumbs and bake on prepared baking sheet for 35 to 40 minutes, until lightly browned.
- Meanwhile, in a medium skillet, cook the bacon over medium heat until crisp, 5 to 7 minutes.
- Drain on paper towels.
- Reserve.
- In a medium saucepan over medium to low heat, heat the oil.
- Sauté the onions and garlic until the onions are translucent, 3 to 5 minutes.
- Add the cabbage and mix well.
- Add the stock or broth, bring to a boil, and cook, stirring frequently, until the cabbage is tender.
- With a slotted spoon, transfer the cabbage to 4 heated plates.
- Keep warm.
- Boil the cooking liquid until reduced by half.
- Add the cream or half-and-half and cook to reduce by half again.
- Whisk in the butter, Strain the sauce and add the reserved strips of bacon.
- Slice the chicken breast onto the cabbage and pour the sauce around it.
