SPECIAL ITALIAN EASTER PIZZA

Special Italian Easter Pizza image

My college roommate's family made this every Easter and sent a whole pie to us. I loved it and asked for a recipe but was told I could not have it. So I tweaked a few recipes I found myself, and my final result is a dish that was better than the original recipe. Enjoy!

Categories     World Cuisine Recipes     European     Italian

Time 1h55m

Yield 10

Number Of Ingredients 13

½ pound bulk Italian sausage
olive oil
1 (1 pound) loaf frozen bread dough, thawed
½ pound sliced mozzarella cheese
½ pound sliced cooked ham
½ pound sliced provolone cheese
½ pound sliced salami
½ pound sliced pepperoni
1 (16 ounce) container ricotta cheese
½ cup grated Parmesan cheese
8 eggs, beaten
1 egg
1 teaspoon water

Steps:

  • Cook and stir Italian sausage in a skillet over medium heat, breaking the sausage into crumbles as it cooks, until well browned, 5 to 8 minutes. Drain excess grease; set sausage aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Oil the bottom and sides of a 10-inch springform pan with olive oil.
  • Cut 1/3 of the dough off the loaf and set aside under a cloth. Form the remaining 2/3 dough into a ball and roll into a 14-inch circle on a floured work surface.
  • Line the springform pan with rolled dough, allowing dough to hang over the edge by 2 inches all around.
  • Layer half the cooked Italian sausage, half the mozzarella cheese, half the ham, half the provolone cheese, half the salami, and half the pepperoni into the pie crust.
  • Spoon and spread half the ricotta cheese over the layers of meat and cheeses.
  • Sprinkle half the Parmesan cheese over the ricotta.
  • Pour half the 8 beaten eggs over the layers; continue layering the remaining meats, sliced cheeses, ricotta cheese, and then Parmesan cheese.
  • Pour remaining beaten eggs over the last layer of Parmesan cheese.
  • Roll out remaining piece of bread dough to a circle about 12 inches in diameter; lay the piece over the pie to form the top crust. Roll and pinch the bottom crust overhang over the top crust to seal in the filling.
  • Beat 1 egg with water in a small bowl; brush the top of the pie with egg wash.
  • Bake pie in the preheated oven until the crust is golden brown and the filling is set, 50 to 60 minutes. A toothpick inserted into the middle of the crust should come out without raw egg.
  • Allow pie to cool in the pan for at least 25 minutes before releasing the spring and removing pie from the pan. Transfer to a serving platter and cut into wedges for serving.

ITALIAN EASTER PIE | PIZZA RUSTICA

Italian Easter Pie | Pizza Rustica image

This Italian Easter meat pie is also know as pizza rustica. This hearty ricotta and meat pie is customarily served at Easter, but it is a delicious meal anytime of the year.

Provided by Angela Allison

Categories     Main Course

Time 2h30m

Number Of Ingredients 16

2 ½ cups all purpose flour
½ cup cold butter, cubed ((one stick))
2 tablespoons olive oil
1 large egg
1 teaspoon kosher salt
4 tablespoons cold water
15 ounces ricotta cheese
8 ounces shredded mozzarella cheese ((about a cup))
2 ounces shredded parmesan ((about ¼ cup) )
4 large eggs, beaten
6 ounces ham, diced ((about 1 ½ cups))
2 ounces salami, chopped ((about ½ cup))
2 ounces prosciutto, chopped ((about ½ a cup))
½ teaspoon kosher salt
¼ teaspoon pepper
1 large egg, beaten

Steps:

  • In a food processor fitted with the blade attachment, combine the flour, cold cubed butter, olive oil, egg, and salt. Pulse just until the mixture is combined; it should resemble coarse sand. With the food processor running, pour 4 tablespoons of cold water in and mix until the dough comes together and forms a ball.
  • Lay out a piece of plastic wrap. Dump the dough on to the plastic wrap and press together into a disk shape. Wrap in plastic wrap and refrigerate for at least an hour or overnight.
  • In a large bowl, combine all of the filling ingredients, and mix until combined. Set aside.
  • Preheat oven to 425 degrees. Divide the dough into two pieces: two-thirds for the bottom crust and one-third for the top crust. On a lightly floured surface, roll out the larger piece of dough into a circular shape. Carefully place the dough in a greased springform pan and line the insides and bottom with it. You can use any scrap pieces to fill in the gaps in the pan.
  • Pour the ricotta filling into the crust. Use a spatula to smooth and even it out.
  • Roll out the remaining pie crust into a circle. Place it over top of the ricotta filling. Trim any excess overhang and use the side crust to roll over the top crust of the pie. Brush the pie with a beaten egg and make a small "x" shape in the middle of the pie to allow steam to escape.
  • Place the pie on the middle rack of the preheated oven and immediately reduce the temperature to 350 degrees. Bake for about 75 minutes or until the crust is golden brown. Let cool for five minutes before removing the collar; let sit for another 10 minutes before slicing and serving.

ITALIAN EASTER PIE

Italian Easter Pie image

This family recipe has been handed down for four generations. We have even videotaped the making of this "Easter" pie for the next generation. However, be warned, this is time consuming and rather expensive to make, and literally a heart attack-on-a-plate, so proceed with caution. But, should you decide to accept this mission, you won't be disappointed! It's a meal in itself and we made this pie on Good Friday and waited for Easter morning to dive in to it. Mom liked to serve a light white wine to enhance the flavors of the pie, but a good cup of coffee does it justice as well! Good luck!

Time 2h30m

Yield 2 nine inch pies

Number Of Ingredients 16

3 eggs (beaten)
3 cups all-purpose flour
1/4 cup shortening (vegetable oil)
2 tablespoons milk
1 pinch salt
1 dozen egg (boiled peeled and quartered)
10 eggs (blended)
1 cup grated romano cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup Italian parsley (finely chopped)

  • add salt, milk and shortening, pulsing the flour until it resembles small peas.
  • Process add one egg at a time, and continue to mix until dough becomes a ball.

  • Remove from processor, knead lightly by hand just to shape into two balls.

  • In the processor or blender add eggs, romano cheese, parsley, salt and pepper.
  • Set this aside.
  • Filling: Place quartered boiled eggs an inch apart on the bottom of the baking dish on the dough for the first layer.
  • Second layer fills in the space between the eggs by adding, cheeses, hams, and sausage.
  • Alternating to make the filling distribution uniform.
  • Ladle a 1/4 cup of the blended egg mixture on top of the second layer.
  • Begin again layering the hard boiled quartered eggs, meat, cheeses, etc.
  • until all ingredients are gone.
  • Top off with the remaining blended egg mixture.

BARRA'S TRADITIONAL ITALIAN EASTER PIE

Barra's Traditional Italian Easter Pie image

A meal in itself! This traditional meat pie has been our Easter morning breakfast for five generations. It is expensive to make, takes a lot of preparation but is worth every bite! In our family, this was more precious than gold and we all anxiously awaited Good Friday's fast to past so my father could make Easter Pie. This is a family secret recipe that's out there for all you adventureous cooks to try! and I hope you will :)

Categories     One Dish Meal

Time 13h

Yield 2 nine inch deep dish pies

Number Of Ingredients 15

3 eggs
3 cups all-purpose flour
1/4 cup shortening
2 tablespoons milk
1 pinch salt
1 dozen hard-boiled egg
10 eggs
1/2 cup Italian parsley (chopped fine)
1 cup grated locatelli cheese
3 lbs sweet Italian sausage links (remove casings)
1 lb mozzarella cheese (cut small cubes)
1/2 lb prosciutto, sliced thin (italian smoked ham)
1 lb provolone cheese (cut small cubes)
1 lb deli thin sliced, boiled ham (, cut into squares)
1 lb deli thin sliced genoa salami (cut into squares)

Steps:

  • CRUST PREPARATION: Mix flour and salt together, cut in shortening with 2 knives or pastry cutter.
  • Add beaten eggs to flour mixture slowly, incorporating very well.
  • Add milk (additional liquid if necessary) to hold mixture together as it is kneaded.
  • Shape pastry into two balls.
  • Chill for 30 minutes or until ready to begin making the pie.
  • PREPARATION FOR FILLING: Remove the sausage meat from the casings; set aside in small bowl.
  • In another small bowl, place all the mozzarella, cut into 1/4-inch cubes; set aside.
  • In another small bowl, place all the provolone, cut into 1/4-inch cubes; set aside.
  • Do the same for the ham and salami and proscuitta; set aside keeping all the ingredients separate.
  • Boil dozen eggs; cool, peel, cut into quarters and set aside.
  • Make EGG WASH:In a blender, add 10 eggs, parsley, 1/2 cup grating cheese.
  • Blend; set aside.
  • This will be used between layers of ingredients as the"holding agent" to keep all the ingredients together.
  • TO ASSEMBLE PIE: Roll chilled pastry on floured board to 1/8-inch thickness.
  • Make into 2 large circles to fit into a 9-inch deep-dish glass pie plate and to cover.
  • Better to do this in glass; it cooks more evenly and you can see if your bottom has fully cooked.
  • Fit the pastry into the pan and up the sides.
  • Begin by layering the quartered hard boiled eggs as the first layer on bottom, about 1-inch apart from eachother.
  • In between each quartered slice of egg, with your fingers, place a small piece of sausage meat; going around the whole first layer of the pie.
  • Sprinkle a layer of grated cheese all around.
  • Next, a thin layer of mozzarella; (one piece high), Next a thin layer of proscuitta; Next a thin layer of provolone cheese; Next a thin layer of salami; Next a thin layer of boiled ham.
  • Pour 1/2 cup of your egg wash over the first layer.
  • Begin again with your quartered eggs; alternating the quarters"in between" the quarters of the first layer.
  • Layer each ingredient as you did on the first layer and so on.
  • Proceed with your second layer; again egg wash poured over the layer, etc.
  • Depending on the depth of the pie pan, the size of your cut ingredients, you may have two or three layers, but don't fill it beyond the rim of the dish.
  • Cover the last layer with another piece of pastry dough and crimp together firmly"gluing" if necessary to keep things together as the pie expands.
  • Cut a steam hole on top and brush pastry with a tablespoon of milk (just to enhance the beauty of this meal for presentation) to form a glaze.
  • Preheat oven to 350 degrees.
  • Bake for one hour or until the pie crust is golden on the top and ingredients are bubbly.
  • The aroma will tell you the pie is done!
  • If you filled the pie too much with egg wash or ingredients, it may boil over.
  • It is a good idea to place a sheet of aluminum foil beneath the pie in the oven to catch any drips.
  • Serve the pie warm.
  • Keep Refrigerated; leftovers can be reheated nicely in a toaster oven or a microwave for 1 minute.

  • THIS IS THE PIZZA DOUGH RECIPE. Shape and flatten by hand ⅔ of the dough for the bottom, and place in an oiled pie dish (let some overhang). The dough is easier to work with if you form two balls and let them rest for 10 minutes.
  • Beat the eggs, water, salt, pepper. Then add the sausage, bacon or pancetta, fresh cheese (if using), Parmigiano or Pecorino cheese, and parsley, Partially cook this mixture in a non-stick frying pan, you can actually cook it a bit more than I did, as it makes it easier to work with. Pour the mixture into the lined pie dish.
  • Flatten out the pizza dough for the top. Wet the edge of the bottom pie dough with water, then place the lid on top, pressing slightly to seal. Try to get another pair of hands to help, so that the dough doesn't fall into the egg mixture.
