1 stick (8 tablespoons) unsalted butter
1/3 cup panko breadcrumbs
1 1/2 cups half-and-half
1/2 teaspoon ground mustard
1/2 teaspoon garlic powder
3 cups shredded sharp Cheddar
8 ounces processed cheese such as Velveeta, cut into 1/2-inch pieces
1/3 cup chopped pickled jalapenos
2 tablespoons chopped fresh cilantro

Steps:

  • Bring a large pot of salted water to a boil. Cook the macaroni according to the package directions; drain.
  • Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over medium heat. Add the panko and cook, stirring constantly, until golden brown, about 4 minutes. Transfer to a bowl.
  • Combine the half-and-half, mustard, garlic powder and remaining 6 tablespoons butter in the saucepan and bring to a bare simmer over medium-high heat. Add the Cheddar and processed cheese and stir until smooth. Stir in the macaroni and jalapenos and season with salt. Transfer to a serving bowl and sprinkle with the panko and cilantro.

They serve it warm with chips as an alternative to salsa. I'm sure there are many other uses for this sauce, such as over enchiladas. You may want to add extra jalapenos if the spice isn't hot enough for you.

1 large zucchini, quartered and sliced
1 onion, quartered and sliced
1 jalapeno, seeds and membranes removed, then chopped
1 -2 cup cheddar cheese, grated
4 eggs, beaten
1 -1 1/2 cup milk
salt and pepper

  • Preheat the oven to 375 degrees.
  • Saute the onion, zucchini and jalapeno until soft.
  • Season with salt and pepper.
  • Beat your eggs into a large (4-6 Cup) measuring bowl.
  • Add enough milk or cream to measure 2 cups.
  • In a deep pie dish spread evenly out the zucchini mixture, top that with the cheese and pour the egg mixture over it all.
  • Bake in the oven for 40-45 minutes, or until the middle is no longer shaky.

3 skinless, boneless chicken breast halves
1 teaspoon cayenne pepper
½ teaspoon garlic powder

5-6 jalapeños (depending on heat and personal preference), stemmed, seeded, coarsely chopped
4 garlic cloves, peeled
5 tablespoons fresh lime juice
1 teaspoon kosher salt
1/2 cup neutral vegetable oil (such as grapeseed)
3/4 cup (packed) fresh cilantro leaves with tender stems

Steps:

  • Pulse jalapeños, garlic, lime juice, and salt in a blender or food processor until puréed. With motor running, slowly drizzle in oil until a thick sauce forms. Add cilantro and pulse a few times until chopped and incorporated. Taste and add more jalapeño, if necessary.
