- Preheat oven to 400 degrees F (200 degrees C). Move an oven rack to the center position in oven.
- Mix cream-style corn, cornmeal, buttermilk, corn oil, Cheddar cheese, eggs, jalapeno peppers, salt, and baking soda in a large mixing bowl.
- Put butter into a 9-inch square baking dish.
- Melt butter in preheated oven, 2 to 3 minutes.
- Pour corn bread batter into the baking dish over melted butter.
- Bake in preheated oven until golden brown, about 35 minutes.

CORN CHOWDER WITH JALAPENO CREAM

- In a large saucepan, bring the chicken stock and white wine to a boil with the garlic and thyme. Add the clams, bring back to a boil, cover, and steam until the clams are just opened, 3 to 4 minutes. Strain the liquid into a bowl and discard any unopened clams. Remove the clams from their shells and set aside.
- In a 3-quart saucepan, melt the butter. Saute the onion, leek, carrot, and celery over moderate heat, until al dente, about 10minutes. Pour in the clam liquid and bring to a boil. Add the corncobs and the corn kernels, reserving 1 cup of kernels for garnish. Simmer for 30 minutes.
- Remove the cobs and strain the soup into a clean saucepan. Transfer the strained vegetables to a blender or food processor, pour in the cream, and process until pureed, still retaining a little texture. Stir back into the soup and season lightly with salt and pepper. Bring the soup to a boil, add the reserved clams, and simmer for 1 minute. Season to taste with salt, pepper, and lemon juice.
- While the soup is cooking, prepare the jalapeno cream. In a small bowl, combine all the ingredients, seasoning to taste with salt, pepper, and lemon juice.
- Ladle the soup into heated bowls, making sure that there are clams in each bowl. Spoon a little of the jalapeno cream in the center, passing the remaining cream in a small bowl. Garnish with the reserved 1 cop corn kernels and serve immediately.

- Fill a large stock pot with cold water and gently place the eggs inside. Bring to a boil over high heat and continue to boil the eggs in the water for 7 minutes. Turn off the heat and let the eggs sit for another 5 minutes. Then remove from the hot water, peel, rinse and chill in the fridge for 30 minutes while you prep the remaining ingredients. Stack your 8 slices of bacon and cut into lardons. A lardon is a long dice that is achieved by laying the bacon on your cutting board horizontally and cutting 1/4-1/2 inch strips vertically. In a medium sauté pan over medium-high heat, cook the bacon until just crisp. Remove immediately to a paper towel, and set aside to cool. Once it is cool, chop the bacon into smaller pieces with a knife. Wearing some latex-free kitchen gloves, cut your jalapenos lengthwise and seed them. Then slice each half into skinny strips and dice into small pieces. DO NOT touch your eyes with your gloved hands. :( Remove eggs from fridge and slice each egg in half, lengthwise. Carefully remove the yolks and place in a bowl. Using a fork, mash the yolks until crumbly. Add the mayo, Greek yogurt, pickle juice, (or rice vinegar) ground and dried mustard, sugar (if using) cayenne (or Sriracha) and stir well to combine. Taste it and add some salt and pepper. Stir well and taste again. Adjust seasonings if necessary. Mix in the jalapenos and bacon. Spoon the mixture into a piping bag fitted with a star tip or a zip top bag with a small hole cut out of the corner of the bag. Fill each egg hole with the yolk mixture. Sprinkle with paprika. Store in the fridge until ready to serve. These will keep in an airtight container for up to 3 days.
