These Cheese and Corn Stuffed Jalapeños make a great party snack, especially during football season. An easy vegetarian appetizer to make and serve to friends and family. A reader favorite!

8 jalapenos, sliced in half longways
4 ounces cream cheese, softened
4 oz monterey jack or cheddar cheese, shredded
1/4 teaspoon cumin
1 garlic clove, minced or pressed through garlic press
1 ear corn, kernels cut off (or about 1/2 cup defrosted or cooked corn)
2 tablespoons chopped cilantro
good pinch salt and fresh ground pepper

Steps:

  • Take each jalapeno half and carefully clean out all the seeds and membranes using a spoon or paring knife. The insides of some jalapenos can be very hot so use caution, consider wearing gloves.
  • Preheat oven to 375 degrees. Line a cookie sheet with tin foil.
  • In a bowl combine cream cheese, shredded cheese, cumin, garlic, corn, cilantro, salt and pepper. Taste for seasoning.
  • Sprinkle a little salt over each jalapeno half. Using a tablespoon, stuff each jalapeno half with cheese mixture and place on cookie sheet. Be careful not to overstuff. Bake in 375 degree oven for about 20 minutes until cheese is bubbly. Switch oven to broiler setting and broil for a few minutes till tops are slightly browned.

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on low until corn is tender, stirring occasionally, 4-5 hours.

Canola oil
2 tablespoons olive oil
1 shallot, diced
2 tablespoons garlic, minced
Salt and freshly ground black pepper
3/4 pound chorizo sausage, finely chopped
1 cup shredded smoked Cheddar
12 jalapenos, stems removed and hollowed out
1 cup buttermilk
2 eggs
1 1/2 cups all-purpose flour
1 1/2 cups panko bread crumbs
3 tablespoons butter
1 cup fresh or frozen corn kernels
1 lemon, juiced
Salt and freshly cracked black pepper
1 teaspoon sugar
1/4 cup chicken stock
2 tablespoons sour cream

Steps:

  • Preheat a fryer with canola oil to 375 degrees F.
  • In a medium-sized skillet over medium-high heat, add the oil. Add the shallots, garlic, salt and pepper, to taste, and the chorizo. Cook for 2 to 3 minutes until nicely browned. Remove the mixture from the pan to a medium bowl and allow it to cool slightly. Stir in the cheese and mix well. Stuff the jalapenos with the filling, using your fingers or a small spoon.
  • In a small bowl beat together the buttermilk and eggs. In a shallow dish add the flour and season with salt and pepper, to taste. In another shallow dish add the panko. Dredge the stuffed jalapenos in the flour, then in the buttermilk, and then in the panko. Repeat the last 2 steps, if needed.
  • In the same pan the chorizo was cooked in, add the butter. Heat over medium-high heat, then add the corn, lemon juice, salt and pepper, to taste, and the sugar, Stir together and allow to cook for 1 to 2 minutes. Add the chicken stock and allow it to come to a hard boil. Remove from heat and cool slightly. Add the corn mixture to a blender and puree until smooth. Transfer the puree to a medium-sized bowl and stir in the sour cream.
  • Fry the jalapenos, in batches, until golden and crisp, about 3 to 4 minute. Arrange them on a serving dish and serve with the sweet corn puree.

15 large fresh jalapenos (enough to use dough maybe 15-25)
1 (8 1/2 ounce) box Jiffy cornbread mix (or 4-6 muffins worth of your own recipe)
1 1/2 cups shredded cheddar cheese (1 cup for the batter..1/2 cup for sprinkiling)
1 cup fresh corn (canned or thawed frozen ok)

Steps:

  • Slice the jalapenos longwise and carefully remove all the seeds and veins.set aside.
  • In a medium bowl, mix up the Cornbread batter according to the box instructions, add in the Corn and 1 cup of the Cheddar.
  • Fill each Jalapeno half with some batter! Careful, don't over fill them!
  • Sprinkle them all with the remaining 1/2 cup of Cheddar.
  • Place them on a baking rack & sheet pan, bake them at 350 for about 15-20 minutes, or until the Cornbread is firm and cooked through. They will be puffed and cheesy too!
  • Alternatively put the dough in mini muffin tin and then place a slice of jalapeno on top or sneak it in the middle and put more cheese on top. This is a milder approach.

12 large jalapeños
4 ounces crabmeat, well drained
1/3 cup minced red onion
1/4 cup minced green bell pepper
1/4 cup mayonnaise
1/2 cup all purpose flour
3/4 cup Mexican beer
Corn oil (for deep frying)
All purpose flour
1/2 avocado, peeled, diced
1/2 cup mild salsa, drained
1 tablespoon mayonnaise

Steps:

  • Starting just below stem, cut chilies lengthwise in half, leaving stems attached. Seed chilies. Place chilies in heavy medium saucepan. Cover with cold water and bring to simmer. Drain. Repeat process. Dry chilies.
  • Combine crab, onion, bell pepper and mayonnaise in small bowl. Season with salt and pepper. Fill chili cavities with crab mixture. Press chili halves together to compress filling. (Can be prepared 4 hours ahead. Cover and chill.)
  • Place 1/2 cup flour in bowl. Gradually whisk in beer. Let stand 30 minutes.
  • Heat oil in heavy deep pot to 375°F. Whisk batter to smooth. Dredge jalapeños in flour. Holding stem end, dip into batter to coat completely and deep-fry in batches until golden brown, about 3 minutes. Using slotted spoon, transfer jalapeños to paper towels and drain. Combine avocado, salsa and mayonnaise in small bowl. Season to taste. Arrange chilies on platter. Garnish with salsa.
