2 cups all-purpose flour
1 ½ teaspoons curry powder
1 dash salt
¼ cup margarine
¼ cup shortening
⅓ cup water
2 tablespoons margarine
1 pound ground beef
1 small onion, finely diced
1 teaspoon curry powder
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper
½ cup beef broth
½ cup dry bread crumbs
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). In a large bowl, combine flour, 1 1/2 teaspoons curry powder, and pinch of salt. Cut in 1/4 cup margarine and shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Shape dough into a log, and cut into 10 equal sections. Roll each section into a six inch circle (approximately 1/8 inch thick). Set aside.
  • Melt margarine in a skillet over medium heat. Saute onion until soft and translucent. Stir in ground beef. Season with 1 teaspoon curry powder, thyme, 1 teaspoon salt, and pepper. Cook until beef is evenly brown, stirring constantly. Stir in beef broth and bread crumbs. Simmer until liquid is absorbed. Remove from heat.
  • Spoon equal amounts of filling into each pastry circle. Fold over and press edges together, making a half circle. Use a fork to press edges, and brush the top of each patty with beaten egg.
  • Bake in preheated oven for 30 minutes, or until golden brown.

3 pounds lean ground beef
2 cups seasoned bread crumbs
1 (28 ounce) can tomato sauce
1 bunch (1-inch) pieces green onions
¼ cup soy sauce
¼ cup Maggi™ liquid seasoning
1 tablespoon salt
1 tablespoon pepper
1 teaspoon vinegar-based hot pepper sauce
2 recipes pie crust pastry
2 eggs
¼ cup water

Steps:

  • In a large bowl, mix together the ground beef, bread crumbs, tomato sauce, green onions, soy sauce, Maggi seasoning, salt, pepper, and hot sauce. You may need to use your hands. Set aside.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Roll out the pie crust dough to 1/8 inch thickness, and cut into 6 inch circles using a large coffee can. Place a heaping tablespoon or slightly more of the meat mixture into the center of the circle, and fold over to make a half circle shape. Crimp the edges together using the tines of a fork, and place the pies on baking sheets. The pies may also be frozen at this point. Whisk together the egg and water in a small bowl using a fork. Brush the egg wash over the tops of the pies.
  • Bake for 30 to 40 minutes in the preheated oven, until golden brown. If you are baking frozen pies, add an additional 10 minutes.

1.5 Pounds colossal tiger shrimps (De-shelled, de-veined)
1 cup roughly chopped parsley
1/4 cup Mayonnaise
1.5 tbsp Dijon Mustard Paste
1/2 tbsp Paprika
1 tsp Onion Powder
1 tbsp Minced Garlic
2 medium eggs
1/2 cup Parmesan (or more)
1/2 cup oats flour (or more)
1/4 cup Extra Virgin Olive Oil (For pan frying the patties)
Salt (to taste)
1/2 cup mayonnaise
1/2 tsp Paprika
1 tbsp Dijon mustard paste
1/2 tsp Minced Garlic

Steps:

  • Begin by cleaning & rinsing the shrimps. If using frozen shrimps defrost them & bring them to room temperature.
  • Chop the shrimps to small pieces.
  • Add chopped parsley, mayo, dijon mustard paste, salt, paprika powder, eggs, chopped garlic, onion powder & Oats flour and give everything a good mix.
  • Finally, add the parmesan cheese and mix everything well. If you feel the batter is too slimy add a bit more oats flour to bind it well.
  • Heat your favorite skillet over medium low flame, brush oil or drizzle oil.
  • In the meantime form patty shapes with a scoop of shrimp batter with the help of your palm (you may grease your palms for ease) or scoop out each patty with the help of a cookie scoop. Gently drop them on the hot pan & press them gently to flatten or give a patty shape.
  • Flip sides, cook until golden over medium low or medium heat.
  • When the patty is fully cooked give that char look and add more crispiness by searing them over medium high heat for a couple of mins (both sides).
  • Serve hot!
  • In a clean bowl take mayo and add mustard paste, paprika, salt & chopped garlic. Mix well. Aioli is ready. Serve with the shrimp patties.

4 cups all-purpose flour
1 teaspoon ground turmeric, or curry powder
1 teaspoon salt
250 grams vegetable shortening, cold
1 cup water, ice-cold; plus more if needed
For the Filling:
1/2 teaspoon black pepper
1 teaspoon ground allspice
2 pounds ground beef
2 tablespoons vegetable oil
1 cup diced onions
Optional: minced hot pepper, to taste
2 teaspoons garlic, minced
1 tablespoon fresh thyme, minced
Salt, to taste
2 tablespoons ketchup
2 cups water
1/2 cup green onions, finely sliced; white and green parts
For Assembling:
Flour, for dusting the work surface
1/4 cup water, plus 1 tablespoon water
1 large egg

Steps:

  • Gather the ingredients.
  • In a large bowl, add the flour, turmeric , salt, and vegetable shortening. Rub the shortening into the flour using your fingers until there are tiny pieces of shortening completely covered with flour and it has a sandy texture.
  • Pour in 1/2 cup of the ice water and mix with your hands to bring the dough together. Keep adding ice water 1 or 2 tablespoons at a time until the mixture forms a smooth dough.
  • Cut the dough into 2 large pieces. Wrap each and refrigerate for 30 to 40 minutes. Alternatively, before refrigerating, divide the dough into 10 to 12 individual pieces-use a food scale if you want them to be the same size.
  • Gather the ingredients.
  • Place the beef in a large bowl. Add the pepper and allspice. Mix together and set aside.
  • Heat the vegetable oil in a large skillet over medium heat until it shimmers. Add the onions and sauté until translucent.
  • Add the chili, if using, thyme, and garlic. Continue to sauté for another minute. Season with salt to taste.
  • Add the ground beef to the pan and stir to mix, breaking up any large clumps. Let cook until the meat is no longer pink.
  • Add the ketchup. Adjust the seasoning, adding more salt if necessary. Pour in the water or broth, stirring to combine.
  • Bring the mixture to a boil, then reduce heat and let simmer until most of the liquid has evaporated and whatever is remaining has reduced to a thick sauce.
  • Fold in the green onions. Remove from the heat and let cool completely.
  • Position 2 racks in the upper and lower third of the oven and heat to 350 F. ​ Generously flour the work surface. Unwrap 1 of the pieces of dough and roll it out into a very large circle.
  • Cut out 3 circles with a bowl or dish of approximately 5 inches in diameter. If you divided the dough into 10 to 12 small balls, roll them all out into a circle of approximately 5 inches in diameter.
  • Place about 3 heaping tablespoons of the filling onto one half of each circle. Dip a finger into a bit of water and moisten the edges of the pastry.
  • Fold over the other half and press to seal. With a fork, crimp the edges to close. Cut off any extra to give the patties a uniform look.
  • Place the finished patties on two parchment-lined baking sheets and continue to work until you have rolled out all of the dough and used all of the beef. Place in the fridge until ready to bake.
  • Just before baking, beat the egg and the remaining 1 tablespoon of water together to make an egg wash . Brush the assembled patties with egg wash.
  • Bake patties until golden brown, 30 to 40 minutes, flipping baking sheets in the oven halfway through cooking. Cool on wire racks. Enjoy warm.

2 pounds uncooked medium shrimp, peeled and deveined
1/3 cup olive oil
1/4 cup white wine vinegar
3 tablespoons lime juice
1 jalapeno pepper, seeded and finely chopped

3 teaspoons Caribbean jerk seasoning
1 medium mango or 2 medium peaches, peeled and cubed
1 small red onion, thinly sliced and separated into rings
1 medium lime, quartered and sliced

Steps:

  • In a large saucepan, bring water and salt to a boil. Add shrimp; boil for 3 minutes or until shrimp turn pink, stirring occasionally. Drain and rinse with cold water; transfer to a large resealable plastic bag., In a small bowl, whisk the oil, vinegar, lime juice, jalapeno, honey and jerk seasoning. Pour 3/4 cup marinade over shrimp. Seal bag and turn to coat; refrigerate for 1-2 hours. Refrigerate remaining marinade., Just before serving, drain and discard marinade from shrimp. 450 grams self-rising flour, plus more for dusting (about 3 cups plus 2 tbsp)
2 tsp sugar
1 1/2 tsp kosher salt
3 tbsp ground turmeric
2 tbsp chilled butter (diced small)
1 cup plus 2 tablespoons ice water
milk or water (for brushing)
1 pound 93% lean ground beef
1 medium onion (minced)
1 scotch bonnet pepper (de-seeded and diced (wear gloves))
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1 teaspoon fresh ground pepper
1 beef stock cube (such as Maggi)
2/3 cup boiling water
1 tsp sweet paprika
1/2 tsp allspice
1 tsp breadcrumbs or flour
2 tbsp dark soy sauce, Worchestershire sauce or browning

Steps:

  • Sift the flour into a bowl then stir in the sugar, salt and turmeric. Add the butter and rub them into the dry ingredients until you have a crumbly texture.
  • Gradually add ice water to create a dough. Roll the dough into a ball, wrap in cling wrap and chill in the fridge 1 hour.
  • Meanwhile, make the filling. In a large skillet over medium-high heat, add the meat and cook, breaking up with a wooden spoon, about 5 minutes.
  • Add the onion and scotch bonnet and cook 3 minutes, until soft. Add the garlic powder, salt and black pepper.
  • Dissolve beef cube in boiling water and add to the skillet with the paprika, allspice, breadcrumb or flour and the soy sauce or other sauce. Stir and simmer 20 minutes, then set aside to cool completely.
  • When ready to cook, preheat oven to 350F.
  • Take the chilled dough out of the fridge. Dust work surface and rolling pin with flour so the dough doesn't stick.
  • Roll out the dough, when flat fold it into a square then roll again. Repeat 2 to 3 times to create a traditional patty crust.
  • Roll the dough out to about 1/16th thickness.
  • Place an upturned bowl or lid about 6 inches in diameter on top and carefully cut around it with a sharp knife. You should get 12 total, with a 6-inch size.
  • Divide the meat mixture between each, about 3 tablespoons each and spoon it onto one side of the circle.
  • Brush a little milk (or water) around the edge of the dough and carefully fold the patty over so the edges meet. Use your fingers to press and seal them, then use a fork and press around the edges.
  • Poke a few holes on top with the fork to make steam holes and place on a baking sheet. Bake 25 minutes, until golden.
  • Air fry 325F 10 to 12 minutes, turning halfway.

1/2 lb boneless skinless chicken breast half
1 sweet potato, medium sized, to yield 1 cup mashed
2 tablespoons butter
1 fresh pepper, minced (your choice mild and sweet, or hot)
1 teaspoon grated fresh ginger
1 teaspoon jamaican yellow curry powder (or yellow curry paste)
salt
2 tablespoons fresh parsley, chopped
1/4 cup flour
1/4 cup cornmeal
1/4 teaspoon cayenne pepper (optional, but nice if using a mild pepper above)
vegetable oil (for frying, about 1/4 - 1/2 inch in the pan)

Steps:

  • Cook the chicken breast according to your preferred method (roasted, stewed, boiled, sauteed, grilled, etc.) and let cool. Shred and chop the meat until a fine texture. Set aside.
  • Peel, dice and boil the sweet potato in enough salted water to cover. When tender, drain and mash potato. Set aside.
  • Melt butter in a medium saute pan. Add pepper and ginger and saute until tender and fragrant. Add the curry powder and salt. Stir. Add the chicken and sweet potatoes to the pan. Stir until thoroughly blended. Add the parsley, and stir again. Remove from heat and let cool slightly - enough to handle, and then shape into 8 small patties.

227 g Butter (Block Butter)
1 tbsp Curry Powder
1 tbsp Turmeric

300 ml Milk
1 Egg (For Egg Wash)
500 g Minced Beef (Ground Beef)
1 Onion
3 Spring Onions
2 Garlic Cloves
To Taste Ginger
To Taste Scotch Bonnet (Or Other Chillies )
2 tbsp Smoked Paprika
2 tbsp Onion Powder
2 tbsp All Purpose Seasoning
2 tbsp Garlic Powder (Or Granules )
2 tbsp Black Pepper
To Taste Thyme
2 tbsp Ketchup
2 tbsp Dark Soy Sauce
1 tbsp Browning Sauce (Optional )

Steps:

  • Pour plain flour into a large mixing bowl and add a tablespoon each of curry powder, turmeric, baking powder and salt. Mix until evenly distributed.
  • Add cubes of butter into the mixing bowl and rub-in until the mixture resembles breadcrumbs.
  • Pour half of the milk into the mixture and mix together before pouring the remaining half bit-by-bit mixing each time.
  • Use your hands to bring the dough together. Then place in the fridge for at least 30 minutes, you can use this time to prepare the filling.
  • Pour the minced (grounded) beef into a large mixing bowl and add a tablespoon of smoked paprika, onion powder, all purpose seasoning, garlic powder and black pepper. Mix together until evenly distributed.
  • Add oil to a pan and heat on a high heat. Fry the garlic, onions, spring onions, ginger, thyme and scotch bonnet for 2 to 3 mins.
  • Add the minced beef meat into the frying pan and stir continuously, add a tablespoon of smoked paprika, onion powder, all purpose seasoning, garlic powder and black pepper. Continue to fry for 2 to 3 minutes.
  • Add 2 tablespoons of soy sauce, ketchup and a tablespoon of browning sauce and mix until evenly distributed.
  • Leave to simmer for 5 minutes with the lid on, then continue to stir for 2 to 3 minutes breaking any clumps with the back of your wooden spoon.
  • Flour your work surface and roll out the pastry, cut out circle shapes using a bowl (or plate). Add 2 to 3 tablespoons of the beef filling to the lower centre of the pastry.
  • Make an egg wash by whisking an egg and use it to coat the edge of one half of the pastry. Fold over the pastry and press the edges together with your fingers. With a fork, dip it in flour and press down to create the authentic patty crimped edges.
  • Preheat the oven to 180°C (gas mark 4, 350°F). Coat the pastry with an egg wash and bake in the oven for 20 to 25 minutes.

The Jamaican beef patty is an island's history in the palm of a hand. Dubbed Jamaica's "No. 1 fast food" by Enid Donaldson, author of "The Real Taste of Jamaica," a beef patty's filling is spiced, then baked inside of a suet dough. These pastries are often filled with seasoned ground beef, but can include pork, lamb, lobster, shrimp, cheese, chicken and ackee. The dish is a byproduct of Jamaica's long history - the introduction of spices from African slaves, as well as Indian and Chinese indentured laborers, impacted the patty's development. But while this meal is found throughout Jamaica, it's also present wherever the Caribbean diaspora is around the globe. Both the dough and the filling can be made prior to baking. Eat with coco bread for a more substantial meal.

2 teaspoons granulated sugar

Steps:

  • Make the crust: Whisk flour in a medium bowl, then whisk in turmeric, sugar and salt. Work in shortening and beef suet quickly, rubbing them into the dry ingredients with your fingers until the mixture is evenly crumbly. Gradually add 1/2 cup ice cold water while stirring with your hands to form the dough. If the dough isn't coming together, add more water by the tablespoon as necessary. Form dough into a ball, cover with cling wrap and refrigerate for at least 1 hour or up to 2 days.
  • While the dough is chilling, make the filling: Heat a large frying pan over medium, then add vegetable oil. Fry scotch bonnet peppers and onion, stirring occasionally, until softened, about 5 minutes. Add beef and cook, stirring occasionally, until browned, 4 to 8 minutes. Season with allspice, black pepper, garlic powder, paprika, soy sauce and the beef stock mixture. Cook, stirring, until most of the liquid evaporates, 1 to 2 minutes. Transfer to a dish and let cool completely at room temperature or in the refrigerator. (The filling can be refrigerated in an airtight container for up to 2 days.)
  • When ready to assemble patties, heat oven to 375 degrees. Remove dough from the refrigerator and roll on a lightly floured work surface with a lightly floured pin into a 12-inch square. (Turmeric will stain a porous work surface. Roll between sheets of parchment paper if needed.) Fold dough in half to form a rectangle, then fold again the other way to form a square. Roll again into a 12-inch square. Repeat this process 3 more times, letting dough rest as needed if it's too stiff to roll. Roll to 1/8-inch thickness, then use a bowl or pastry cutter to cut out 10 (6-inch) rounds, rerolling scraps as necessary.
  • Divide beef mixture among rounds, spooning about 1/4 cup onto one side of each round. Fold the other side of each round over the meat until the edges meet. Using a fork, seal the edges, then prick the center of each to allow steam to escape.
  • Place patties on 1 or 2 baking sheets, and bake until pastry is set and golden, 22 to 25 minutes. Serve hot, warm or at room temperature.

Then place your beef filling (2 Tbsp for each patty) in your newly circular-shaped dough. Fold your dough with filling in a half moon shape and use a fork to crimp the edges. whisk 1 large egg and brush along the crimped edges to seal. Using a fork, puncture the newly created patty 3 times (from top to bottom). This will release the steam during the baking process. Repeat this process until all your patties are made. Place on a greased baking sheet, and bake in an oven for 25 minutes.
