Steps:
- Preheat oven to 375°. Combine the first six ingredients. Divide crescent dough into 24 portions. Press into greased mini muffin cups., Spoon 1 tablespoon ham mixture into each cup. Bake until golden brown, 13-15 minutes.

HAM AND CHEESE PUFF

Steps:
- Toss bread, ham and cheese; divide between 2 greased 13x9-in. baking dishes. In a skillet, saute onion in butter until tender; transfer to a bowl. Add eggs, milk and mustard; mix well. Pour over bread mixture. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 55-65 minutes or until a knife inserted in the center comes out clean. Serve immediately.

HAM AND CHEESE PUFFS
My family used to make these for special occasions, or random visitors! Basically a gougere! They can be baked and frozen then just brought out and thrown in a toaster oven when needed! Sometimes I like a stronger mustard taste so I double the dry mustard. I'm guessing at the amount of servings as I don't think I've ever made a single batch of this recipe - haha.

Steps:
- Preheat oven to 400 degrees Fahrenheit.
- Combine water, butter, and salt in a saucepan and bring to a boil.
- Add the flour all at once, stirring vigorously, until the batter leaves the sides of the pan and a ball of paste forms.
- Remove from heat and allow to cool for about a minute.
- Add eggs, one at a time, beating vigorously after each one until the dough is smooth.
- Stir in cheese, ham, and dry mustard.
- Place heaping teaspoonfuls on a lightly greased baking sheet.
- Bake for 15 to 20 minutes until firm and golden.
- IF FREEZING: Allow to cool completely and store in an airtight container between layers of wax paper.
JANE'S HAM PUFFS
My friend Jane in Denver first served this to me in the 80's and I've been making ever since. Different way to use cooked ham, and very nice for a brunch-type serving. Mini ham and cheese souffles are baked until golden, then served with a mushroom sauce. You may substitute the mushroom sauce with another sauce if you wish.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease six (6 ounce) ramekins.
- In a medium bowl, toss together the ham, Cheddar cheese, bell pepper, and onion. Stir in the milk, cracker crumbs, and egg yolks. In a separate bowl, whip egg whites with an electric mixer until stiff. Fold into the ham and cheese mixture. Spoon the mixture into the prepared ramekins. Place the ramekins on a baking sheet.
- Bake for 40 to 50 minutes in the preheated oven, until puffed and golden. Prepare the mushroom sauce according to package directions.
- When the puffs are done, turn them out onto serving plates, and top with mushroom sauce.

- Combine water, butter and salt in medium saucepan.
- Heat to boiling.
- Add flour all at once and beat with a wooden spoon until the batter leaves the sides of the pan.
- Add eggs one at a time using a beater.
- Beat well after each egg.
- Beat until dough i s smooth and shiny.
- Stir in cheese, ham and mustard.
- Drop by spoonfuls on a greased cookie sheet and bake at 400°F for 20-25 minutes.
