MOZZARELLA MAC AND CHEESE
Steps:
- Place an oven rack in the middle position. Preheat the oven to 375 degrees F.
- Bring a large pot of salted water to a boil over medium-high heat. Add the noodles and cook to al dente per the package instructions. Drain and set aside.
- In the same pot, melt the butter over medium-high heat. Stir in the flour and cook for about a minute. Add the milk, a cup at a time, whisking or stirring with a wooden spoon after each addition until thickened. Add the mozzarella, Swiss and 1/2 cup Parmesan and stir until melted. Season with salt and pepper. At this point if you want to add fun mix-ins like cut-up hot dogs, crispy bacon, peas or hot sauce, now's the time to do so. Stir in the noodles. It may seem overly saucy at this point, but once it bakes up, it'll be perfect!
- Pour into a 9-by-13-inch casserole dish. Dollop all over with the pizza sauce. In a medium bowl, toss the breadcrumbs, garlic, crushed red pepper flakes and remaining 1/4 cup Parmesan with a drizzle of olive oil and sprinkle all over the mac and cheese. Bake until browned and bubbly, about 25 minutes. Sprinkle with fresh basil and enjoy!

- Bring a large pot of salted water to a boil. Cook the macaroni according to the package directions; drain.
- Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over medium heat. Add the panko and cook, stirring constantly, until golden brown, about 4 minutes. Transfer to a bowl.
- Combine the half-and-half, mustard, garlic powder and remaining 6 tablespoons butter in the saucepan and bring to a bare simmer over medium-high heat. Add the Cheddar and processed cheese and stir until smooth. Stir in the macaroni and jalapenos and season with salt. Transfer to a serving bowl and sprinkle with the panko and cilantro.

- Make the breading: In a large bowl, add the salt, pepper, Jazzy spice blend, and flour and whisk to combine.
- Dip the marinated chicken in the flour mixture until fully coated. Transfer to a plate or baking sheet.
- Heat 1 inch (2 ½ cm) of oil in a large cast iron skillet over medium-high heat until it reaches 350°F (180˚C).
- Working in batches, fry the chicken for about 15 minutes, turning occasionally, until golden brown and the internal temperature reaches 165˚F (75˚C). Transfer the chicken to a wire rack set over a baking sheet to drain.

- Prepare macaroni and cheese as directed. Then mix in one of the following.
- Meat Lovers' Special Supper: Mix in frozen mini meatballs (cooked according to package directions), diced salami or pepperoni and a dash of hot sauce. (I added 16 mini meatballs).
- Tasty Tuna: Stir in drained tuna and frozen peas (thawed); top with canned french fried onions. Bake until hot.
- Smoky Peppers: Toss in a jar of drained, chopped roasted red peppers, some shredded provolone cheese and a pinch of garlic powder.
- Zesty Bacon: Mix in cooked crumbled bacon and canned fire roasted diced tomatoes (drained); heat through. Before serving, sprinkle with thinly sliced fresh basil.
- Taco Mac: Saute ground beef with a couple of spoonfuls of chili powder until browned; stir into macaroni and cheese with a little salsa. Serve topped with crushed tortilla chips.

- Melt 1 tablespoon butter in a large saucepan over medium heat. Add the onions and cook, stirring occasionally, until caramelized, about 30 minutes. Puree in a food processor and set aside. Bring a pot of salted water to a boil. Cook the pasta to al dente according to the package instructions. Shock in an ice bath, drain and set aside. Melt the remaining 8 tablespoons butter in a saucepan over medium heat. Add the flour and whisk until smooth. Slowly add the milk to the saucepan and stir until smooth. Add the heavy cream and bring to a boil, reduce the heat and simmer for 5 minutes, stirring often to avoid scorching. Season with the mustard, nutmeg, cayenne, salt and pepper. Add the pureed onion. Add the provolone, fontina, Gruyere, Parmigiano-Reggiano and 8 ounces of the Asiago and whisk until the cheeses are completely melted and the sauce is smooth. Combine the pasta with the sauce and adjust any seasoning if needed. Preheat the oven to 425 degrees F. Combine the Cheddar, breadcrumbs and remaining 9 ounces of the Asiago in a medium bowl and mix. Place the pasta in a 9-by-12-inch baking dish and top with the breadcrumb mixture. Bake until the crust is golden brown, 12 to 15 minutes. Let rest for 5 minutes before serving.
