JELLO CREAM CHEESE DESSERT
This Jello dessert is almost like an upside down, no-bake cheesecake. The bottom layer is a mixture of cherry gelatin and pie filling lightly gelled together with crushed pineapples.

Steps:
- Mix Jello into with boiling water (I microwaved the water in a large glass bowl until bubbling).
- Stir in pie filling and pineapple. Mix well then pour into a greased baking pan. Carefully move to the fridge and chill until set (about 2-4 hours).
- To prepare the topping, beat whipped cream cheese, Greek yogurt (or sour cream), sugar and vanilla using a hand mixer until smooth.
- When Jello mixture is set, spread cream cheese mixture on top, then layer with granola or chopped nuts and serve immediately. Use a thin spatula to slice and serve.

Steps:
- 1. Prep. Take your package of fresh strawberries wash them. Slice an X into the top of the strawberry. Set them aside to dry. After about 2-3 min chill in the fridge
- 2. Take the whipped cream ( cool whip extra creamy or any local store brand will do) and the 1 package of pudding and fold them together until well blended. Slowly add the 1 package of soften cream cheese to the mix. Then add the 1 1/2 tea spoons of vanilla extract to the filling. after the filling is well mixed remove from bowl place in a 1 gallon Freezer bag (Ziploc) and chill for 30-35 min.
- 3. Remove from fridge and snip one end of the freezer bag (you will use the freezer bag as a piping bag) Remove the strawberries from the fridge. Squeeze a nice amount of filling into the X you cut into the strawberry and voila. Plate and ENJOY!!!!

- Remove the stems from the strawberries, then use a melon baller to scoop out a hole in the top of each strawberry.
- Cut a small part of the bottom of each strawberry with a sharp knife to create a flat surface for them to stand on.
- Using a hand mixer, mix together the cream cheese, confectioner’s sugar, vanilla extract, and almond extract, until fluffy and light.
- Transfer the cream cheese mixture to a piping bag lined with a star tip, and pipe the filling into each of the prepped strawberries.

If you don't have a blender, place the mixing bowl in the sink and beat it in there with a hand mixer. You will have yourself a kitchen counter clean up!) Mix until smooth and large lumps are no longer visible. (This will take a couple minutes to mix and some very small lumps may remain).
